SPANISH GREEN BEANS WITH GARLIC AND PAPRIKA



Spanish Green Beans with Garlic and Paprika image

1/2 lbs fresh green beans (250 grams)
1/4 cup cold water
5 cloves garlic
1 tsp sweet smoked paprika
pinch sea salt
pinch black pepper
1 lemon

Steps:

  • Rinse 1/2 lbs (250g) of fresh green beans under cold running water, shake off any of the excess water and cut off 1/2 inch from each end of each green bean, also thinly slice 5 cloves of garlic
  • Heat a fry pan with a medium heat and add a 1/4 cup of cold water, once the water comes to a light boil add the green beans into the pan and place a lid on top
  • Three minutes after adding the lid remove it, there should be almost no water left in the pan, drizzle in a generous tbsp of extra virgin olive oil and the thinly sliced garlics, mix everything together, continue to mix so the garlics can lightly cook, you don´t want to brown the garlics, just make them fragrant
  • After 2 minutes turn off the heat, add in 1 tsp of sweet smoked paprika and season everything with sea salt & freshly cracked black pepper, mix together until well combined, very important to turn off the heat so the paprika does not get a bitter flavor
  • Transfer the green beans into a serving dish, making sure to grab all the garlics in the pan and garnish with lemon wedges, enjoy!

1 (2 pound) ham steak, cut into 1-inch pieces
1 ½ pounds red new potatoes, halved
1 pound fresh green beans, trimmed and halved
1 small onion, coarsely chopped
½ cup butter
water to cover
salt and ground black pepper to taste

Steps:

  • Place ham steak, potatoes, green beans, onion, and butter in a large pot with just enough water to cover. Season with salt and pepper; bring to a boil. Reduce heat to medium-low and simmer until potatoes are tender, about 20 minutes.

1 lb fresh green beans or 1 lb frozen green beans
3 tablespoons fruity olive oil
1 small yellow onion, thinly sliced
2 garlic cloves, finely minced
3 ounces bacon, cooked and crumbled (Serrano ham or Parma ham can be substituted)
salt
fresh ground black pepper

Steps:

  • In a large pot of salted water cook the green beans about 5-6 minutes, only until just tender but still with some "bite".
  • In a saucepan, heat the olive oil on medium heat and fry the onion for 5 minutes, until softened. Add the garlic and cook another minute. DO NOT burn the garlic!
  • Drain the green beans well and add to the saucepan with the garlic. Cook, stirring constantly for 2-3 minutes. Stir in the crumbled bacon. NOTE: If using Serrano or Parma ham, add it at the same time with the garlic.
  • Season with salt and pepper. Serve warm.

1 ham shank, cut into 1-inch pieces
Freshly ground black pepper
2 cups thinly sliced yellow onions
Salt
3 pounds fresh green beans, trimmed
Water

Steps:

  • In a large saucepan, with a lid, over medium heat, add the oil. Season the ham with black pepper. Add the ham and cook for 2 minutes on each side. Remove and set aside. Add the onions. Season with salt and pepper. Saute for 2 minutes. Add the reserved ham and beans back to the pan. Cover the beans completely with water. Bring the liquid to a boil, reduce heat to medium low, partially cover and cook for 2 hours. Remove from the heat and reseason if necessary

Green beans with amazing flavor are also super easy. This is a very simple side dish that takes its flavor from the ham used and the lengthy cooking time. If Grandma didn't have ham on hand she would substitute bacon.

2 lb fresh green beans
1/4 lb cooked ham, cubed or in strips (or cooked bacon)
1 onion, chopped
1 tsp sugar
3 1/2 c water
black pepper to taste
you might need salt but check as ham can be very salty

Steps:

  • 1. Rinse beans, snip off ends and and slice to desired length. Place beans in pot with ham, onion, sugar, pepper, and water. Bring to a boil and then turn down heat to a simmer, cover pot, and cook for 1 hour on low.
  • 2. Remove cover from pot. Turn heat up to medium and cook for about 20 minutes more or until liquid is reduced to a thick sauce you will serve with beans. Grandma often served these with a slice of ham and corn bread.

24 cloves garlic (peeled, halved lengthwise)
2 tablespoons salt
3 lbs green beans, trimmed
5 tablespoons olive oil
3/4 lb ham steak, cut into strips 1/4 x 2 inches
3 tablespoons unsalted butter

Steps:

  • Bring a large pot of water to a boil.
  • Add garlic; cook 8 minutes until very tender.
  • Transfer to a paper towel using a slotted spoon.
  • Pat dry.
  • Add salt to pot; return water to boil and add green beans.
  • Cook beans until just tender, about 6 minutes.
  • Drain beans, rinse under cold water, pat dry and set aside.
  • Heat 2 T oil in heavy nonstick skillet over medium-high heat.
  • Add ham and saute until crisp, 6 or 7 minutes depending on the moisture content of the ham.
  • Set aside.
  • Can be prepared 1 day ahead.
  • Keep garlic separate from beans and ham.
  • Melt butter with remaining oil in a large heavy skillet over medium high heat.
  • Add garlic and mash with a fork or the back of a spoon.
  • Add green beans and ham.
  • Toss until heated through and coated with garlic.
  • Season to your taste with salt and pepper.
  • Serve.
