- In a board peel and mince the garlic. Then put it in a bowl or the container of a stand mixer, add 2 egg yolks, a dash of salt (around 1/2 tsp.), and a dash of oil.
- With a hand mixer (you can also use a stand mixer or a food processor), blend everything and at the same time pour in a thin stream of oil. You'll see that it thickens as you add more oil, which means that the emulsion is happening.
- For the next step add the lemon juice and continue to blend until it is fully incorporated. You can continue to add in more oil if you think it's necessary.
- The aioli is ready when it reaches a mayonnaise-like consistency. At that point stop blending the aioli.
- Finally, taste it and add in more garlic, lemon juice, and salt if necessary.

SPANISH ALIOLI GARLIC MAYONNAISE SAUCE

- Gather the ingredients.
- Peel and mince the garlic.
- Using the flat side of a large knife, crush the garlic.
- Place the crushed garlic into a small mortar and pestle, add the salt, and smash into a paste. (An alternative to save time is to use a good garlic press that peels and mashes the garlic in one step. Either way, you can use a mortar and pestle to mash the garlic into a paste.)
- Crack the eggs and separate the yolks into a small mixing bowl.
- Transfer the garlic paste to the bowl and whisk to blend.
- With a hand mixer on low speed, slowly pour in the olive oil in a very thin, steady stream until a creamy sauce begins to form.
- Add the touch of lemon juice slowly at the end, while keeping the mixer on to ensure that the sauce stays smooth.
- Serve with fish, as a condiment for your favorite sandwich, or as a dipping sauce for French fries. Enjoy.

SPANISH GARLIC SHRIMP
This recipe from Gourmet Magazine is an example of what one can expect to be served at a Spanish tapas bar. They are very quick to prepare and can be made up to one day in advance, keeping in mind that they should be brought to room temperature before serving. I only use 1/2 teaspoon of red pepper flakes but you can use a whole teaspoon if you like your food spicy.

- In a large, heavy skillet set over moderately high heat, heat the oil until it is hot.
- Add the garlic and cook, stirring, until it is pale golden.
- Add the red pepper flakes and the shrimp and cook the mixture, stirring, for 1 minute, or until the shrimp are pink and just firm to the touch.
- Sprinkle the shrimp with paprika and cook the mixture, stirring, for 30 seconds.
- Add the sherry, boil the mixture for 30 seconds, and sprinkle with parsley.
- Season the mixture with lemon juice, salt and pepper to taste, and transfer it to a serving bowl.
- Serve at room temperature.

- Sear halibut on both sides in 1 Tbs olive oil and cook until just about done; around 10 minutes total. Remove from pan and keep warm.
- Add 3 Tbs olive oil, garlic, pepper flakes and bay leaf into skillet; saute just until garlic begins to turn golden and fragrant, 1-2 minutes.
- Stir in shrimp and cook until pink, about 3 minutes.
- Deglaze pan with sherry and lemon juice, simmer briefly to reduce a bit, then finish with parley.
- Divied shrimp and sauce between fish.
- I served this over a bed of fresh cooked spinach and baked potatoe on the side. YUUUMMMY!

There are two kinds of tapas: naturals, serves as is, such as olives, cheeses, oysters, ham, and sausages; and de cocina, usually cooked, which are served hot or cold. Offer tapas with wine or Sherry, or, in summer, with sangria, or some other cooling beverage.

- Trim off any tough ends of the mushroom stems. Wipe the mushrooms clean with dampened paper towels. If the mushrooms are large, halve or quarter them. Set aside.
- In a medium-sized heavy skillet or fire proof casserole heat 2 Tablespoons of the oil over medium high heat. Add the garlic and sauté, stirring, until barely golden; do not let it brown. Immediately remove the pan from the heat and stir in the flour until smooth. Return to the heat and cook, stirring, 1 to 2 minutes. Gradually stir in the broth. Add the chili pepper, 1 Tablespoon of the parsley, the lemon juice, and salt and cook, stirring, until the sauce is thick and smooth. Remove from the heat and set aside.
- In a medium sized, heavy skillet heat the remaining 1 Tablespoon oil over high heat. Add the mushrooms and sauté, stirring frequently, until they are lightly browned. Add the mushrooms to the sauce and simmer 5 minutes. Taste and adjust the seasoning.
- Transfer to a heated serving bowl. Sprinkle with the remaining 1 Tablespoon parsley and serve at once as a tapa. Makes 4 servings.

- About ½ hour before cooking, season shrimp well with salt.
- Place shrimp on paper towels; let rest.
- When ready to cook, add olive oil to a large sauté pan over med-high heat.
- Add in garlic and dried chili pepper pieces; sauté 2 minutes and make sure the garlic doesn't brown.
- Dry the shrimp well; add them to the hot oil and turn them quickly to coat with the oil.
- Cook, tossing, until the shrimp are just done-no more than 2 minutes.
- As the shrimp finish cooking, sprinkle with the paprika and parsley; stir to blend well.
- Remove from heat; add salt to taste.
- Divide among 4 appetizer plates and serve immediately with good bread for sopping up the oil.
