This is a very easy and yummy vegetable side dish to make!!

2 acorn squash, halved and seeded
salt and pepper to taste
¼ cup butter, diced
6 tablespoons firmly packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place squash in a shallow baking pan, cut side down.
  • Bake in preheated oven for 30 minutes, or until tender.
  • Turn cut side up; season with salt and pepper, dot with butter and sprinkle with brown sugar and cinnamon.
  • Bake for 20 minutes more.

1 acorn squash
4 tablespoons butter
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 pinch ground cloves
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a baking sheet and a baking dish.
  • Halve the squash lengthwise and clean.
  • Transfer the squash, cut side down, to the baking sheet, and bake the squash until it is tender, about 45 minutes.
  • Don't turn off the oven.
  • While the squash cooks, melt the butter, and stir in the remaining ingredients.
  • Keep the mixture warm until it is needed.
  • Arrange the squash, cut sides up, in the baking dish.
  • Spoon the butter and seasonings equally over the sections.
  • Bake the squash another 15 minutes, until it is very soft.
  • Serve the squash hot.

This recipe came from a former neighbor. Thanks, Lois! It can be served as either a main dish or a side dish and is different from most acorn squash recipes because it isn't sweet. It smells absolutely wonderful while it's baking. I usually make it using just one squash, then serve the leftover onion, pepper and celery mixture over baked potatoes at another meal. And just for the record, I have no idea why this recipe is called "Spanish".

2 (1 lb) acorn squash
2 teaspoons butter or 2 teaspoons margarine
salt and pepper, to taste
4 slices bacon
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped celery
1 cup tomato sauce
1/2 teaspoon ground oregano

Steps:

  • Preheat oven to 400 degrees.
  • Cut squash in half and remove seeds and fibers.
  • I also cut a very thin slice from the other side of the squash so it won't"wobble" while it's baking.
  • Put 1/2 tsp butter, Salt and Pepper in each squash cavity.
  • Place squash halves in an ungreased baking pan (I use a CorningWare casserole with a lid).
  • Fry bacon until crisp, drain and crumble.
  • Reserve bacon drippings.
  • Saute onions, peppers and celery in drippings until tender.
  • Stir in tomato sauce and oregano.
  • Simmer 3- 4 minutes.
  • Spoon tomato sauce mixture into hollow of each squash.
  • Top with bacon.
  • Pour water into dish to 1/4 inch depth.
  • Cover baking dish.
  • You can use foil if you don't have a cover for the dish.
  • Bake for 30 minutes until squash is tender.

Steps:

  • Preheat oven to 350 degrees. Place squash, flesh side down in a baking dish and fill with 1/2-inch of water. Bake for one hour or until tender. Scoop out squash flesh to a bowl. Mash squash with butter, sugar and salt and pepper. Serve with extra butter.

2 medium acorn squash
4 tablespoons butter
4 tablespoons dark brown sugar
1 zucchini, sliced
1 yellow squash, sliced
12 grape tomatoes, cut in half
8 small shiitake mushrooms, cut into strips
1 tablespoon fresh tarragon, chopped
olive oil, for skillet
brie cheese, to top

Steps:

  • Preheat oven to 425 degrees.
  • Halve 2 acorn squash crosswise. Scoop out seeds and discard.
  • Set squash halves, scooped side down, on buttered baking sheet and bake for 20 minutes.
  • While the squash is baking, heat a skillet coated with olive oil on medium heat and saute tomatoes, mushrooms, zucchini, and yellow squash. Add tarragon and mix with vegetables.
  • Remove squash from oven and prick insides with fork. Coat the inside first with butter and then with dark brown sugar. Add sauteed vegetables and season with salt and pepper. Bake for another 20 minutes, this time with scooped side facing up.
  • Remove from oven, top each squash with brie cheese, and bake for another 2 minutes or until cheese is melted. Serve hot.

1 tablespoon butter
1 tablespoon honey (I use raw)
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1 tart apple, thinly sliced (I used granny smith)
1 sweet apple, thinly sliced (I used cortland)
1/4 cup fresh cranberries
1/4 cup pecan halves, chopped

Steps:

  • Preheat oven to 375 degrees.
  • Cut squash in half from top to bottom and scoop out seeds.
  • Slice a thin strip off the bottom of the halves so that the squash does not rock when placed in a baking dish.
  • Place the slices form both apples in the cavity of the squash.
  • Drizzle honey over the apple slices.
  • Sprinkle brown sugar and cinnamon over the apples, make sure to get the edges of the squash too.
  • Top apple slices with the cranberries and chopped pecans. Dot with butter.
  • Place in oven and bake 1-1/2 hours or until squash is fork tender.

Steps:

  • Cut the squash in half and remove seeds and strings.
  • Place in oven proof dish (large enough to hold all you are preparing if you are multiplying this recipe) skin side down and pour 2" water in dish.
  • Bake for 40 minutes on 350°F.
