My mom used to bring this to our church potlucks 20 years ago. The sour taste from the sauerkraut bakes out of the dish, to give it a more sweet BBQ flavor. Serve over smashed boiled potatoes.

1 ½ pounds ground beef
1 small onion, chopped
1 (27 ounce) can sauerkraut, drained
2 cups tomato juice
1 cup brown sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat, and stir in the ground beef and onion. Cook until the beef is crumbly, evenly browned, and no longer pink. Drain, and discard any excess grease.
  • Pour the beef mixture into a 3-quart casserole dish. Layer the sauerkraut over the ground beef, pour the tomato juice over the sauerkraut, then sprinkle with brown sugar. Bake in the preheated oven until the sauce is bubbly, about 60 minutes.

1/2 head green cabbage, cored and very thinly sliced
1 small shallot, thinly sliced
3/4 cup apple cider vinegar
2 tablespoons light brown sugar
Kosher salt
1 pound bratwursts (not precooked)
2 tablespoons unsalted butter
1/2 teaspoon caraway seeds
2 tablespoons chopped dill, optional
Assorted mustards for serving, such as whole grain, Dijon, honey mustard and brown

Steps:

  • Preheat a grill for direct and indirect cooking.
  • Toss the cabbage with the shallots, vinegar, brown sugar and 1 tablespoon salt in a large microwave-safe bowl. Cover the bowl with plastic wrap and microwave on high for 5 minutes. Stir well and let stand for 15 minutes.
  • Meanwhile, place the brats on the indirect heat portion of the grill and grill, turning occasionally, until the internal temperature reaches 160 degrees F, 15 to 18 minutes. Move the brats over to the direct side of the grill and cook, turning occasionally, until lightly browned on all sides, about 5 minutes.
  • While the brats finish grilling, melt the butter in a large skillet placed directly on the grill. Add the caraway seeds and cook, stirring, until fragrant, about 1 minute. Add the sauerkraut and stir until well coated. Stir in the dill if using.
  • Serve the bratwursts with the sauerkraut and assorted mustards on the side.

1 large head cabbage (4 to 5 pounds)
Kosher salt, for seasoning
Whole caraway seeds, for seasoning

Steps:

  • Remove papery outer leaves of the cabbage, then cut head into quarters and remove core. Set each quarter on a flat side and slice thinly crosswise with a sharp chef's knife. To every 2 pounds 3 ounces of sliced cabbage, add 1 1/2 tablespoons salt and 1 1/2 teaspoons caraway in a 2-gallon glass or ceramic crock, then smash and stir with a wooden meat tenderizer (the goal is to break cell walls so that water will come out) and tamp down to get air out. Continue until all cabbage is chopped, seasoned and gently smashed. Mixture will produce its own brine from salting and smashing.
  • Brine should completely cover cabbage by about 1/2 inch; if not, add necessary amount of brine made of 1/3 cup salt to 1 gallon water. Place a plate down inside crock on top of cabbage; weigh down with a clear plastic bag or two filled with brine.
  • Put a breathable cloth on top that is big enough to cover the surface of the crock and tie gently with twine, tight enough to hold the cloth in place but loose enough to be slipped on and off. Check kraut daily, skimming any white mold from the top and making sure brine is high enough, adding more brine if necessary. (See Cook's Note.) After 1 week, begin tasting kraut for doneness. If more salt is needed, dissolve some in water and add to kraut.
  • Kraut should be ready after about 2 to 4 weeks, depending on temperature. When the kraut is ready, transfer kraut to containers, then pour or ladle brine over kraut to cover. Put lids on containers and store in the fridge. (Once the sauerkraut is stored in the fridge fermentation and flavor development will stop.)

Try the simplest way to make classic sauerkraut using raw cabbage. This fermented food is great for your gut and goes very well with sausages and mustard

2kg very firm, pale green or white cabbage (any leathery outer leaves removed), cored
3 tbsp coarse crystal sea salt (or 6 tbsp flaky sea salt)
1 tsp caraway seeds
1 tsp peppercorns

Steps:

  • Thoroughly wash a large tub or bowl (we used on the size of a small washing-up bowl), then rinse with boiling water from the kettle. Make sure that your hands, and everything else coming into contact with the cabbage, are very clean. It's wise to use a container that will comfortably fit the softened cabbage, allowing several inches of room at the top to avoid overflow.
  • Shred the cabbage thinly - a food processor makes light work of this. Layer the cabbage and the salt in the tub or bowl. Massage the salt into the cabbage for 5 mins, wait 5 mins, then repeat. You should end up with a much-reduced volume of cabbage sitting in its own brine. Mix in the caraway seeds and the peppercorns.
  • Cover the surface of the cabbage entirely with a sheet of cling film, then press out all the air bubbles from below. Weigh the cabbage down using a couple of heavy plates, or other weights that fit your bowl, and cover as much of the cabbage as possible. The level of the brine will rise to cover the cabbage a little. Cover the tub and leave in a dark place at a cool room temperature (about 18-20C) for at least five days. It will be ready to eat after five days, but for maximum flavour leave the cabbage to ferment for anywhere between 2-6 weeks (or until the bubbling subsides).
  • Check the cabbage every day or so, releasing any gases that have built up as it ferments, giving it a stir to release the bubbles. If any scum forms, remove it, rinse the weights in boiling water and replace the cling film. You should see bubbles appearing within the cabbage, and possibly some foam on the top of the brine. It's important to keep it at an even, cool room temperature - too cool and the ferment will take longer than you'd like, too warm and the sauerkraut may become mouldy or ferment too quickly, leading to a less than perfect result.
  • The cabbage will become increasingly sour the longer it's fermented, so taste it now and again. When you like the flavour, transfer it to smaller sterilised jars. Will keep in the fridge for up to six months.

Steps:

  • In a small skillet saute bacon and onion together.
  • In a 2 quart baking dish combine all sauerkraut, tomatoes, brown sugar, bacon and onions.
  • Bake uncovered in 350 degree oven for 2 hours.
  • Sauerkraut should look carmelly around the edges.

2 1/2-3 cups cooked beef or 2 1/2-3 cups cooked chicken
1 tablespoon butter
1 teaspoon olive oil
1/4 cup chopped yellow onion
1 clove garlic, minced
1 cup catsup
1/4 cup packed brown sugar
2 tablespoons lemon juice
1 tablespoon Worcestershire sauce
1 teaspoon Dijon mustard
Tabasco sauce or your favorite hot sauce, to taste
2 cups packed sauerkraut, rinsed and drained (I prefer Bubbie's naturally fermented kraut)
1 cup dry breadcrumbs
1 tablespoon finely grated parmesan cheese
olive oil (in mister or pan spray)

Steps:

  • Preheat oven to 350 degrees F.
  • In a saucepan over medium heat, melt the butter and olive oil together, then add the onion and sauté until lightly browned, about 5 to 7 minutes.
  • Reduce the temperature to low, add the garlic, catsup, brown sugar, lemon juice, Worcestershire, mustard, and Tabasco or hot sauce, and simmer for 10 minutes; add the shredded cooked meat, remove from heat, and set aside.
  • In a colander rinse the sauerkraut well under running water, then set aside to let drain.
  • In a lightly sprayed casserole dish, pour the meat and barbecue sauce mixture, then spread the sauerkraut over the meat.
  • In a bowl, combine the breadcrumbs and Parmesan.
  • Sprinkle crumb mixture over the sauerkraut, lightly spray with olive oil or pan spray, then bake at 350 degrees F for 20 to 25 minutes or until crumb topping is golden brown and crisped to desired texture.
  • Serve as is or over toast (dark rye is good!) or toasted hamburger buns.
  • Note: you can put a layer of barbecued beans under the shredded meat, if desired; also, you can use commercially prepared barbecued sauce instead of making your own as above (about 1 1/4 cup of sauce).

8 country-style spareribs
1 1-pound can sauerkraut, drained
About one-half 18-ounce bottle barbecue sauce
No salt, no freshly ground black pepper!

Steps:

  • Preheat the oven to 300°F. Choose a baking pan that will accommmodate the ribs in pieces or all hitched together, with the kraut in the space left over. Eight country-style ribs cut into a 6-rib and a 2-rib hunk, plus the can of kraut, fit perfectly in a 9-by-13-inch pan. For more ribs, get a bigger pan and more kraut.
  • Place the ribs in the pan and the sauerkraut in a mound beside them. Cover the ribs - not the kraut - with the barbecue sauce. Use as much as you like, maybe more than half the bottle, maybe less. Cover the pan tightly withaluminum foil and bake for 3 hours. Lift a corner of the foil near the end of the time to sneak a look. The ribs should be nicely browned and glazed and your mouth should water. Serve hot.
