I had a half a can of SPAM© leftover from Recipe#257325.And this is what I came up with.Serve this with toast or biscuits along with some fruit and you will have a breakfast your whole family will enjoy.Submitted to "ZAAR" on October 6th,2007.

Number Of Ingredients 7

1/3 cup canola oil
1/3-1/2 cup chopped white onion
2 cups frozen cubed hash brown potatoes, thawed
6 ounces Spam, diced into small cubes
4 large eggs
1 teaspoon salt
1 1/2 teaspoons ground black pepper

Steps:

  • In a medium sized bowl,scramble eggs until pale yellow in color and fluffy.
  • Set eggs aside.
  • In a medium sized skillet over medium heat add oil.
  • When oil is hot but not smoking add onions.
  • Saute' onions for 3 to 5 minutes,add potatoes,and sprinkle with salt and pepper.
  • Cook potatoes until lightly browned.
  • Add SPAM© and cook until meat has a slightly browned color.
  • Pour eggs over meat and potatoes,let eggs sit on potatoes for about 3 to 5 minutes.
  • Stir eggs into potatoes until desired doneness for eggs is reached.

2 tablespoons canola oil
1 onion, finely chopped
2 large baking potatoes, peeled and diced
½ red bell pepper, chopped
½ green bell pepper, chopped
¼ cup fresh parsley, chopped
¼ teaspoon freshly ground pepper

Steps:

  • In 10-inch cast-iron skillet, heat oil over medium heat.
  • Cook onions 3 minutes or until translucent.
  • Add potatoes and cook 7 to 10 minutes or until golden.
  • Stir in SPAM® Classic, red and green and bell peppers and cook until heated through and browned.
  • Stir in chopped parsley and pepper.

1/4 teaspoon pepper
2 tablespoons butter

Steps:

  • In a bowl, combine the first eight ingredients. In a large nonstick skillet, melt butter over medium-high heat. Add potato mixture. Cook and stir for 15-16 minutes or until potatoes are lightly browned.

1 (10 ounce) can cream of chicken soup
1 1/2 cups sour cream
1/2 cup milk
1/2 cup onion, chopped
2 cups potato chips, crushed

Steps:

  • Preatheat oven to 350°F.
  • In bowl, combine potatoes, melted butter, salt, pepper and garlic powder.
  • In separate large bowl, combine cheese, spam, soup, sour cream, milk, and onion. Add spam mixyure to potato mixture,.
  • Mix well.
  • Pour into prepared 2 quart baking pan.
  • Sprinkle with potato chips.
