SPAM AND EGGS

Spam and Eggs image

I'm on a diet where I have to eat over twice as much protein as carbohydrates. This was hard for a rice and biscuits lover such as myself. After days of eating tuna and eggs (not together), I came up with this recipe. It's quick and tasty.

SPAM AND EGGS

Spam and Eggs image

We're bringing a little bit of Hawaii with this Spam and Eggs breakfast recipe. The salty canned pork paired with our soy sauce and honey marinade is the perfect match.

Provided by coupleeatsfood

Categories     Breakfast     lunch

Number Of Ingredients 12

1 can spam
1/4 cup low-sodium soy sauce
1 tbsp honey
1 tbsp vegetable oil
8 large eggs
1 tsp salt
1 tsp white pepper
2 tbsp milk
1 tbsp butter (unsalted)
2 cup cooked white rice
furikake (for topping)
chopped green onions (for topping)

Steps:

  • In a mixing bowl, prepare the marinade for the spam by combining the soy sauce and honey together.
  • Cut your spam in 3/4 inch cubes. Put spam in your mixing bowl with the marinade, and mix well until all spam are coated. Set aside and let sit for about 10 minutes.
  • In another mixing bowl, whisk together the eggs, milk, salt and pepper.
  • Using a medium pan over medium heat, melt your butter and ensure it covers the bottom of your pan. Pour in the egg mixture and spread the eggs over the entire pan without stirring. Pull a rubber spatula across the bottom of the pan to form large, soft curds of scrambled eggs. Continue to cook over medium-low heat, fold and stir every few seconds. Cook until it's almost done, the eggs will continue cooking after removing from heat.
  • Wash or wipe clean the medium pan and put back on medium-high heat. Pour in your spam cubed, without the sauce. Cook the spam for 4 minutes, stirring every minute to avoid burning.
  • Lower heat to medium, and tour remaining spam marinade in the pan, and let cook for 1-2 minutes.
  • Pour furikake over bowl of white cooked rice, and serve with the spam and eggs. Top with green onions.

KIMCHI, SPAM, AND EGG SCRAMBLE RECIPE BY TASTY

Kimchi, Spam, And Egg Scramble Recipe by Tasty image

This was a breakfast staple in my house growing up. My dad fries up Spam until crispy, adds some kimchi for flavor, and scrambles in a few eggs. We serve it over rice with seaweed seasoning, but salt and pepper work great too.

Provided by Matt Ciampa

Categories     Dinner

Time 15m

Yield 2 servings

Number Of Ingredients 8

½ cup Spam®, diced
3 large eggs
1 tablespoon olive oil
¼ cup kimchi, diced
1 tablespoon unsalted butter
2 cups white rice, steamed
kosher salt, to taste
furikake, for garnish - optional

Steps:

  • Dice the Spam into small cubes.
  • Crack the eggs into a small bowl and beat to combine.
  • Heat the olive oil in a medium nonstick skillet over medium-high heat. Add the Spam and cook until golden brown and crispy, stirring often, 3-4 minutes.
  • Reduce the heat to medium-low, add the kimchi, and cook until fragrant, 2-3 minutes. Push mixture to one side of the pan and melt the butter in the empty side. Reduce the heat to low, add the eggs, and cook, stirring frequently, until scrambled to your desired doneness. Stir in the kimchi and spam until well combined.
  • Add the rice to 2 serving bowls and divide the scrambled egg mixture between the bowls. Top with furikake, if desired.
  • Enjoy!

Number Of Ingredients 7

1 (340 g) can Spam
1/2 medium onion (to taste)
2 ounces butter
4 ounces sliced pickled banana peppers (to taste)
2 tablespoons seasoning (I used Tony Cachere's, but failing that, 1 teaspoon each of salt, pepper, paprika, oregano, and cele)
8 eggs
8 ounces shredded cheese

Steps:

  • Dice the onion.
  • Melt the butter, medium heat, in a very large frying pan or a chicken fryer.
  • Dice the Spam (about 1/2" cubes).
  • Saute the onion and the peppers until onions are soft.
  • Add the spam to brown, stir every few minutes to get all sides. Add seasoning a little at a time while browning, every time you stir.
  • While browning, scramble the eggs.
  • When spam is browned, add the eggs to the pan. Stir regularly to promote even cooking of the eggs and thorough mixing of the ingredients.
  • When about 2/3 done, add the cheese on top and cover the pan. Let the cheese melt as the eggs finish.
  • Serve with Heinz 57 or Barbecue Sauce.

SPAM AND EGG SALAD/ SPREAD

Spam and Egg Salad/ Spread image

My roommate when I was a teenager used to make this. It is a delicious salad/spread that we used to put on toast and brown under the broiler. It tastes just as good served cold as a side dish. This recipe allows for many variations on ingredients (such as ham or sausage for the Spam) and would also make a great low carb meal. Prep time does not include hard boiling and peeling the eggs.

Provided by PubRat

Categories     Spreads

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 7

6 -8 hard-boiled eggs, peeled and chopped
1/2 cup cheddar cheese, cut into small cubes
1 1/2 cups Spam, cubed, browned and cooled
3/4 cup Miracle Whip (more or less to taste) or 3/4 cup mayonnaise (more or less to taste)
2 tablespoons yellow mustard (more or less to taste)
1/4 cup onion, minced (I omit this)
salt and pepper

Steps:

  • Brown the cubed Spam lightly in a nonstick frying pan and set aside. Mix all other ingredients together. Mix in the Spam and season to taste. Chill. Serve as a side dish or top assorted crackers with it. It is also very good spread on top of toast and placed under the broiler until bubbly and the cheese starts to brown.
