Tina Gantner of Matthews, Missouri writes, "It took me a few tries to perfect this recipe, but now it's a favorite in our household. More Cajun seasoning can be added, but it tends to make the dish too hot for children. Chicken breast can be substituted for the pork tenderloin and rice can be used instead of the noodles."

2 pounds pork tenderloin, cut into 2-inch strips
3 teaspoons Cajun seasoning
3 teaspoons minced garlic
2 teaspoons Italian seasoning
1/3 cup butter, cubed
12 ounces uncooked fine egg noodles
3/4 cup chicken broth
2 teaspoons Worcestershire sauce
2 large tomatoes, chopped

Steps:

  • In a large skillet over medium heat, cook and stir the pork, Cajun seasoning, garlic and Italian seasoning in butter for 8-10 minutes or until meat is no longer pink. Meanwhile, cook noodles according to package directions., Stir broth and Worcestershire sauce into pork mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in tomatoes; cook 1-2 minutes longer or until heated through. Drain noodles. Use a slotted spoon to serve pork mixture over noodles; drizzle with pan juices.

I'm sure turkey or pulled pork would be just as good in this recipe. This is not intended for folks looking to cut fats. I can't guarantee how this will taste if lowfat ingredients are substituted.

2 tablespoons olive oil
2 tablespoons garlic, minced
2 cups cooked chicken, shredded (or cubed)
1/2 red onion, diced
1/2 bell pepper, diced
1 1/2 tablespoons caribbean jerk seasoning
1 tablespoon Old Bay Seasoning
salt and pepper (to taste)
2 tablespoons butter
1 cup mushroom
3 tablespoons butter
1/2 cup heavy whipping cream
1/2 cup whipping cream
1/2 cup water
3 tablespoons flour (or more if needed)
1 tablespoon garlic salt
1 teaspoon hot sauce (or to taste)
2 green onions, sliced
1 1/2 cups penne pasta

Steps:

  • FOR MEAT MIXTURE.
  • Heat oil in large saucepan over medium heat. Add garlic, chicken, onion, bell pepper, seasonings, and salt and pepper. Saute for 2 minutes.
  • Increase heat to medium-high. Add 2 tablespoons butter. Saute for approximately 10 minutes. Add the mushrooms. Saute for 2 minutes. The meat should be nicely browned and the onions soft. Remove mixture and set aside.
  • FOR SAUCE.
  • Using the same saucepan, reduce heat to low. Combine creams and water in a measuring cup large enough to hold it all. When the pan has cooled, melt 3 tablespoons butter.
  • *Important!* This is the longest process, but worth the patience (the sauce should not be runny at all. If it is, slowly add more flour until it thickens to the consistency of alfredo sauce).
  • Add a little bit of flour, stirring constantly until thickened. Pour in a little bit of the cream/water, stirring constantly. Continue alternating between the flour and liquid at a slow pace to ensure no lumps. After depleting the flour and liquid, add the garlic salt and hot sauce. Continue to stir and simmer for 1 minute. Add chicken mixture and green onions, mix thoroughly, and allow to simmer while making the pasta, stirring periodically.
  • FOR PASTA.
  • Cook pasta according to package. Drain. Add chicken/sauce mixture. Mix thoroughly. Serve with some parmesan cheese sprinkled on top if desired. Enjoy!

8 ounces uncooked fettuccine
1 pound pork tenderloin
4 teaspoons Cajun seasoning
1 tablespoon vegetable oil
1 large red onion, chopped (1 1/2 cups)
2 large zucchini, chopped (2 1/2 cups)
1/4 teaspoon salt
3 medium roma (plum) tomatoes, chopped (1 cup)
1 can (15 to 16 ounces) black-eyed peas, rinsed and drained
1/4 cup lemon juice
1 teaspoon dried oregano leaves
1/4 teaspoon freshly ground pepper
Red pepper sauce, if desired

Steps:

  • Cook and drain fettuccine as directed on package.
  • While fettuccine is cooking, cut pork into 1/4-inch slices; sprinkle with Cajun seasoning. Heat oil in 12-inch nonstick skillet over medium-high heat. Cook pork in oil 4 to 6 minutes, turning occasionally, until pork is slightly pink in center. Remove from skillet; keep warm.
  • Spray same skillet with cooking spray; heat over medium-high heat. Cook onion in skillet about 4 minutes, stirring frequently, until onion begins to brown. Stir in zucchini and salt. Cook about 4 minutes, stirring frequently, until vegetables are tender. Stir in remaining ingredients. Cook about 1 minute, stirring frequently, until heated through.
  • Toss vegetable mixture and fettuccine. Serve pork over fettuccine mixture, or toss pork with fettuccine mixture.

My husband and I just love New Orleans-style foods, so any time I come across a Cajun recipe. I just have to try it. This is one of our favorite ways to prepare pork.

1 boneless pork shoulder butt roast (3 to 3-1/2 pounds)
1/2 cup finely chopped onion
4 teaspoons prepared mustard
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
1 tablespoon steak sauce
3 garlic cloves, minced
1 teaspoon seasoned salt

Steps:

  • Place roast in a shallow baking pan; cut 8-10 small slits in roast. Combine remaining ingredients; press into slits and over top of roast. , Bake, uncovered, at 350° for 45 minutes. Cover and bake 1-3/4 hours longer or until a thermometer reads 160°. Let stand for 10 minutes before slicing.

1 lb elbow macaroni
1 lb smoked sausage, sliced and sauteed
1/2 cup red pepper
2 bell peppers, diced
1 tablespoon garlic, pureed
2 stalks celery, diced
1/2 white onion, diced
2 bay leaves
1 tablespoon creole mustard
1/4 cup white vinegar
3/4 cup salad oil
1/4 cup parsley
1 tablespoon salt
1 tablespoon white pepper
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon paprika
1 tablespoon thyme

Steps:

  • Cook the pasta in gently boiling water until al dente.
  • Remove from heat, drain, rinse and cool.
  • Combine all ingredients in a large bowl, using only 2 TBS of Toulous Seasoning.
  • The dish is best served at room temperature; however, chill thoroughly if preparing ahead of time and allow to stand one hour before serving.

12 ounces pork tenderloin, visible fat trimmed
nonstick cooking spray
8 ounces fresh okra or 8 ounces frozen okra, sliced and thawed
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1 teaspoon minced jalapeno pepper
1 small onion, sliced
1/4 cup reduced-sodium fat-free chicken broth
salt and black pepper
8 ounces bow tie pasta, cooked and kept warm
2 teaspoons dried oregano leaves
1 teaspoon dried thyme leaves
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon dry mustard
1/4 teaspoon ground cumin
1/4 teaspoon ground allspice
1/4 teaspoon ground red pepper
1/4 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • For spice rub combine all ingredients in small bowl.set aside.
  • Cut pork into 1/4-inch-thick slices; coat all sides with Cajun Spice Rub.
  • Spray large skillet with cooking spray. Heat over medium heat until hot. Cook and stir pork 2 to 3 minutes on each side until browned and no longer pink in center. Remove from skillet; set aside.
  • Add okra to skillet; cook 3 to 5 minutes or until browned. Add bell peppers, jalapeño pepper, onion and chicken broth; bring to a boil. Reduce heat and simmer, covered, 3 to 5 minutes or until vegetables are crisp-tender. Add pork and cook 2 to 3 minutes. Season to taste with salt and black pepper.
  • Place farfale on serving platter; spoon pork mixture over top and toss.
