ASPARAGUS ROLL-UPS
I got this recipe from Paula Deen's show. This is so easy and yummy. Perfect for a dinner party but simple enough for everyday too. Serving size is approximate because this is easily adjustable for more or less roll-ups. Also - phyllo dough keeps in the fridge/freezer for a long time so you can use one package of the dough many many times.

Steps:
- Preheat oven to 375°F.
- Cut phyllo dough sheets into thirds (you need one cut sheet per asparagus spear).
- Lie the dough flat and brush melted better on it.
- Place one asparagus spear at one end leaving the ends of the asparagus exposed and roll it up.
- Place 'asparagus roll-up' on a cookie sheet (I line the sheet w/foil for easy clean-up).
- Repeat w/remaining asparagus.
- Brush roll-ups w/melted butter.
- Sprinkle the roll-ups w/parmesan cheese.
- Bake in a 375°F oven for 10 minutes.

ASPARAGUS PARMESAN PASTRY ROLLS

- Unfold pastry sheets and halve each parallel to fold lines. Roll out 1 half (keep remaining 3 halves chilled, covered with plastic wrap) into a 20- by 7-inch rectangle with a floured rolling pin on a well-floured surface. (Pastry will shrink slightly after rolling.) Brush off excess flour from work surface and both sides of pastry, then trim all edges with a sharp knife to make even. Cut crosswise into 6 (6 1/2- by 3-inch) rectangles.
- Brush rectangles with some egg wash and sprinkle each evenly with 1 packed tablespoon cheese, leaving a 1/2-inch border on long sides. Lay an asparagus stalk along 1 long side, then roll up asparagus in pastry, pressing seam to seal. Make more rolls with remaining pastry, cheese, and asparagus.
- Arrange rolls, seam sides down, about 1 inch apart on lightly oiled baking sheets and brush top and sides lightly with egg wash. Chill rolls until pastry is firm, at least 15 minutes.
- Preheat oven to 400°F.
- Bake rolls in batches in middle of oven until puffed and golden, about 16 minutes.
- Transfer with a metal spatula to a cutting board and trim about 1/2 inch from ends. Halve each roll crosswise, then, starting about 1/2 inch from either end, cut each section diagonally in half (see photo, opposite). Stand asparagus rolls on end, 2 by 2 on platters, and drizzle each with 1 drop of truffle oil (if using). Serve warm.

- Bring a pot of water to boil and blanch the asparagus. Drop into an ice bath to stop cooking.
- Roll out pie crust to 1/8 inch thickness.
- Slice the prosciutto into long thin strips.
- Starting at the top of the spear, wrap a strip of prosciutto around the asparagus, spiraling it down to the base. Do the same with the pie crust strips, overlaying the prosciutto.
- Lay each spear on a cookie sheet. When each one is wrapped, brush lightly with melted butter and sprinkle with sesame seeds.
- Bake at 350° for about 8 minutes, or until crust is golden.
- Serve warm.

ASPARAGUS ROLL-UPS
A delicious appetizer that is also excellent at any party. I have been making the asparagus roll-ups for many years and most everyone just loves them.

Steps:
- Snap off tough ends of asparagus and discard.
- In a micro-wave proof casserole dish, place asparagus in a single layer, with spears facing the centre.
- Add 2 tablespoons of water and microwave on HIGH (full power) for 4 minutes turning once at half time; DO NOT OVERCOOK.
- Remove from microwave, drain and immediately pour cold water over asparagus and place a few ice cubes to cool and stop any further cooking.
- Drain well and pat dry with paper towelling before using.
- Cut off the crust from the bread slices and discard.
- Using a roller, carefully roll each slice to flatten to about 1/4 inch thickness.
- Spread butter on one side on each piece of flattened bread.
- Then spread some mayonnaise over the butter.
- Place 3 asparagus spears to one side of the flattened bread (facing opposite direcions to each other).
- Sprinkle with salt and pepper to taste.
- Carefully roll bread/asparagus.
- Cut each roll to about 1/2 inch thick slices.
- Place on a platter and serve.
- Refrigerate any unused portions.

- Half-fill a large bowl with ice water. Place a steamer rack insert in a large pot. Fill the pot with water so it reaches just below the steamer rack. Place the pot over high heat, cover it with a lid, and bring the water to a boil. Add the asparagus, cover the pot (leaving the lid slightly ajar), and steam the asparagus until crisp-tender, 3 to 5 minutes, depending on thickness. Transfer the asparagus to the bowl of ice water to stop the cooking. Drain well. Meanwhile, in a small bowl, mix the horseradish and sour cream until well combined. Season with salt and pepper. Lay 1 1/2 ounces of the beef on a flat work surface or cutting board. Spread one-quarter (about 1/2 tablespoon) of the horseradish mixture over the beef, leaving a small border. Place 3 asparagus spears at one of the narrower ends of each beef slice so the tips hang over. Roll the beef around the bundle of asparagus until you reach the other end of the beef. - Follow the directions above, except instead of steaming the asparagus, add 1 tablespoon of water and the asparagus to a medium microwave-safe bowl or dish. Cover the dish with a microwave-safe plate. Microwave on high for 1 to 2 minutes, or until the asparagus is crisp tender. Transfer the asparagus to a bowl of ice water to stop the cooking. Drain well.
ASPARAGUS, FINGERLING POTATO, AND GOAT CHEESE PIZZA
It's the possibilities in that blank crust that make pizza so much fun. Lately, we've been obsessed with white pizza. Brush the dough with olive oil, sprinkle with mozzarella, and then let the fun begin. Without the acidity of the tomato sauce to contend with, you can really experiment. In this version, asparagus adds freshness and a hit of color, goat cheese brings a creamy tang, and fingerling potatoes (yes, potatoes) round out the pie with their richness.

- Place potatoes in small saucepan. Add enough water to cover by 1 inch. Sprinkle with salt. Bring to boil and cook until potatoes are tender, about 10 minutes. Drain. Cool. Cut potatoes into thin slices.
- Preheat oven to 450°F. Sprinkle rimless baking sheet with cornmeal. Roll and stretch pizza dough to 16x11-inch oval. Transfer to baking sheet. Mix 1 tablespoon olive oil and garlic in small bowl. - Season pounded chicken breasts lightly with salt and freshly ground pepper.
- Place 2-3 asparagus spears on each chicken breast half.
- Roll up tightly; secure with toothpicks, if necessary.
- Set aside.
- Combine flour, garlic, 1/2 tsp salt, 1/2 tsp thyme and paprika.
- Roll chicken in flour mixture.
- Place onions and diced tomatoes on bottom of 13x9" pan, reserving 8 slices of onion for top.

- Wash and snap the woody ends from the asparagus. Blanch in salted boiling water for 1 minute (or more depending on your preference for the doneness of the veg). Shock in ice water to stop cooking process. Drain on a dish cloth. Divide into 6 equal portions.
- Lay one chicken piece flat and sprinkle with salt and pepper. Lay bundle of asparagus on one short side of the chicken and roll up tightly, securing with a tooth pick. Repeat.
- Heat oil in non stick pan over medium heat. Place rolls pick side down. Sprinkle a little more salt and pepper over the rolls and brown on all sides. Pour lemon juice over the rolls and finish in a 350 degree oven until the chicken is done and the asparagus is warmed through.
- Serve. I served them with mushroom risotto and fresh steamed carrots. Great.
