1 1/4 lbs ground beef
1 (3 ounce) package cream cheese with chives, cubed and softened
1 teaspoon salt
1 teaspoon chili powder
18 jumbo pasta shells, cooked, rinsed and drained
2 tablespoons butter, melted
1 cup prepared taco sauce
8 ounces shredded cheddar cheese
8 ounces shredded monterey jack cheese
1 1/2 cups crushed tortilla chips
1 cup sour cream (low fat may be used)
3 green onions, chopped

Steps:

  • Cook beef in large skillet over medium/high heat until brown, stirring to separate meat.
  • Drain fat.
  • Reduce heat to medium/low.
  • Add cream cheese, salt and chili powder.
  • Simmer 5 minutes.
  • Toss shells with melted butter; fill with beef mixture.
  • Arrange shells in a 13x9 pan that has been sprayed with a cooking spray such as Pam.
  • Pour taco sauce over each shell.
  • Cover with foil and bake in preheated 350 degree oven 15 minutes.
  • Uncover and top with Cheddar cheese, Monterey Jack cheese and chips.
  • Bake 15 minutes more or until bubbly.
  • Top with sour cream, green onions, lettuce, tomatoes and sliced black olives.
  • Serve with a green salad, crusty bread and your choice of wine.

Steps:

  • Brown beef, stirring to break meat up.
  • Drain fat.
  • Over medium-low heat, add cream cheese, salt, and chili powder.

  • Fill with beef mixture.
  • Arrange shells in buttered 13x9 inch pan.
  • Pour taco sauce over each shell.

1 (16 ounce) package medium pasta shells
1 tablespoon olive oil
½ cup diced onion
1 teaspoon red pepper flakes
ground black pepper to taste
1 tablespoon tomato paste
1 tablespoon minced garlic
2 (14 ounce) cans diced tomatoes with juice
1 tablespoon balsamic vinegar
½ cup heavy cream
½ cup crumbled Gorgonzola cheese, or to taste
⅓ cup chopped fresh basil
salt to taste

Steps:

  • Bring a large pot of salted water to a boil. Add shells and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes. Drain and set aside.
  • Heat olive oil in a large saute pan over medium heat. Stir in onion, red pepper flakes, and black pepper. Cook and stir until onion is soft and translucent, about 3 minutes. Add tomato paste and garlic; cook and stir until fragrant, about 1 minute.
  • Add tomatoes and balsamic vinegar to the pan with the onion mixture. Bring to a boil and cook, uncovered, until thickened, about 5 minutes. Reduce heat and pour in heavy cream; let simmer for 1 minute. Stir in cooked pasta, Gorgonzola cheese, basil, and salt. Serve immediately.

18 large pasta shells
2 tablespoons butter, melted
1 cup taco sauce
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
1 1/2 cups crushed tortilla chips
1 cup sour cream

Steps:

  • In a large skillet, brown beef over medium heat until no longer pink; drain. Add cream cheese, salt and chili powder; mix and simmer for 5 minutes.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Toss cooked shells in butter.
  • Preheat oven to 350°F (175°C).
  • Fill shells with beef mixture and arrange in a 9x13 inch baking dish; pour taco sauce over shells. Cover with foil and bake in preheated oven for 15 minutes.
  • Remove dish from oven and top with Cheddar cheese, Monterey Jack cheese and tortilla chips; return dish to oven to cook for 15 minutes more.
  • Top with sour cream and onions; serve.
