PERFECTION SALAD
You can omit the sugar and the unflavored gelatin and lemon juice--and use a 3 oz. package of lemon or lime Jell-O in place of them. Keep the water amounts and vinegar and salt the same. Recipe from Maytag Dutch Oven Cookbook- 1949.

Steps:
- 1. Sprinkle gelatin over 1/2 c. cold water for 5 minutes. Add vinegar and 1/4 more cup water, lemon juice, boiling water, sugar and salt. Stir until dissolved. Cool to room temperature. Add cabbage, celery and carrots, distributing them evenly throughout gelatin mixture. Individual salad molds can be used or and attractive dish that makes the salad thick enough to cut into attractive servings. (I used my bread loaf pan) Refrigerate until set. Serve on lettuce leaves.
- 2. Note: Can use bag of prepared cabbage from the produce department.

Steps:
- In medium saucepan, soften gelatine in lemon juice; t stand 1 minute.
- Over low heat, cook until gelatine dissolves.
- Add water, sugar, vinegar and salt; stir until sugar disssolves.
- Chill until partially set.
- Fold in remaining ingredients; pour into lightly oiled 6-cup mold.
- Chill until set, about 3 hours or overnight.
- Refrigerate leftovers.

AMISH PERFECTION SALAD
A delicious take on jello. Although the combination may sound a bit on the odd side, it is extremely refreshing, especially on a hot summer day. Perfect for BBQs and Potlucks. For a "healthier" version, we use sugar-free jello (0.3 ounce package). **Chilling Time not included in Preparation**

Steps:
- Mix together the Jell-O and sugar in a 9-inch glass pie plate.
- Add boiling water and stir for at least 2 minutes, until fully dissolved.
- Stir in the cold water and refrigerate 35 to 40 minutes, uncovered, until the Jell-O has set to a point between liquid and solid but is not fully firm.
- Add the pineapple and carrots. (Adding the pineapple and carrots at this stage will cause the heavier pineapple to sink to the bottom and the lighter carrots to stay on top.).
- DO NOT STIR.
- Refrigerate until firm.
PERFECTION SALAD
A family recipe dating back to the early part of the 20th century, by my great-grandmother. I have a tendency to think of this as Grandpa's salad, because he always prepared it for us. My mom and sister still make it for our holiday family gatherings, although now we usually use sugarfree Jello. (I've recently discovered that Perfection Salad is not something unique to our family - there are a lot of old recipes on net for it. They're generally similar to the one below.)

- Pour boiling water over jello in bowl.
- Stir until jello is disolved.
- Stir in vinegar, veggies, salt, and cold water.
- Pour into mold, chill until firm.
- Serve unmolded on chilled plate, topped with a generous dollop of mayonnaise (family tradition of the last 30 years or so demands that you use Best Foods mayo brand - *never* Miracle Whip).
- If preferred, use 1/2 cup celery and 1 cup grated carrot.
- You can use sugar-free jello for a diabetic/lowcarb version of Perfection Salad. Sometimes lemon jello is difficult to find - we've sometimes used lime instead.
PERFECTION SALAD
Steps:
- Put in 9x12-inch dish, Jell-O and mix with 3 cups boiling water.
- When mixed, add pineapple with juice, mix well. Then add carrots, cabbage and celery and mix well. Then add 2 cups cold water and mix well again.
- Put in fridge to set up, and enjoy.

PERFECTION SALAD- GRANDMA'S VERSION
Perfection Salad was invented in 1905 when Knox gelatin ran a recipe contest. A Pennsylvania woman won 3rd place with this salad and, now her salad is famous and the other 2 recipes that got the higher awards are unknown. - 1. Combine the 2 packages of lime Jell-O with 4 cups of hot water in a large bowl, stirring until dissolved. Stir in cold water. Immediately add vegetables and well drained pineapple. Pour mixture into a mold or serving dish. Refrigerate until mixture has set (about 2 or 3 hours).
- 2. Prepare the lemon Jell-O package following directions on package. Pour over the first mixture after it has set. Refrigerate the salad for several hours more or overnight. Unmold by dipping into hot water for 10 seconds.
- 3. OPTIONAL: Serve with a sauce made of 1 cup mayonnaise or Miracle Whip thinned with 1-2 tablespoons milk, and sweetened with 1-2 tablespoons sugar. mix well until sugar is dissolved. Adjust amounts of milk and sugar to your taste. Spoon over salad as it is served.
PERFECTION SALAD
A type of jellied coleslaw. Crisp cabbage, peppers and celery in a tangy from-scratch lemon jelly. Delicious served on a bed of lettuce with a dollop of good mayonnaise on the side.

Steps:
- Sprinkle the gelatin over cold water in a bowl. Let it sit for about 5 minutes to soften. Whisk in the boiling water to dissolve along with the sugar, vinegar, lemon juice and salt. Stir until the gelatin and sugar have completely dissolved. Place in the refrigerator just until the mixture begins to thicken somewhat and becomes syrupy. (from 25 to 35 minutes.)
- When the mixture has become like a thick syrup, stir in all of the vegetables and the black pepper. Taste and adjust the seasoning as desired. You may or may not need more salt.
- Pour into a mold or a bowl. If the salad is to be served unmolded, rinse the mold first with cold water and put the mixture into the wet mold. A square baking dish can also be used and should also be rinsed and left wet. Chill in the refrigerator for several hours until set.
- Serve either from the bowl, or unmold by dipping the mold quickly into hot water, loosening it round the rim with a sharp knife, covering it with a serving dish and then quickly in one fast motion, reversing so that the serving dish is on the bottom and the mold on the top. Give it a firm shake and then remove the mold.
- If it doesn't unmold, either dip it again in hot water or wrap the mold for a minute in a dish towel that has been dipped in hot water an quickly wrung out and try again.
- To serve in cubes, dip the baking dish quickly into hot water. Cut the cubes with a sharp knife, run the knife around the sides to loosen and then remove the cubes with a flexible spatula.
PERFECTION SALAD
This is another of my mother's recipes. She would always make this in individual molds and top each with mayonnaise. The recipe calls for 1 envelope of Knox gelatin(I do not know the actual ounce size so this is just a guess). Cooking time includes chilling time.
