24 clams
24 mussels
1 pound spaghetti
1/4 cup extra-virgin olive oil
1 teaspoon crushed red pepper
4 cloves garlic, shaved very thin
1/2 cup squid, sliced
16 pieces shrimp
8 pieces sea urchin

Steps:

  • Cook the clams and mussels with 1/2 cup water until cooked. Reserve the liquid. Remove the meat from inside the clams and mussels; discard the shells.
  • In boiling salted water, begin cooking the spaghetti. Simultaneously, heat up the extra-virgin olive oil on medium-high heat in a large saute pan. Add the crushed red pepper and shaved garlic and slowly saute. Just when the edges of the garlic become lightly browned, remove the pan from the heat and add a large ladle (approximately 8 ounces) of the pasta cooking water to the saute pan. Put it back on the heat but do not increase the flame.
  • When the pasta is three-quarters of the way cooked, remove from the boiling water to the saute pan. Reserve the cooking liquid.
  • Continue cooking the spaghetti using the reserved pasta cooking liquid, as needed. Add more clam/mussels liquid to achieve creaminess. Just before the pasta is cooked, add the clams, mussels, squid, and shrimp. Finish cooking the pasta with all the seafood until al dente.
  • Remove the seafood pasta from the pan and toss with the sea urchin. Serve immediately.

3 tablespoons olive oil
1 medium onion, chopped
1 clove garlic, finely chopped
225 g spaghetti
2 1/2 cups tomato sauce, passata
1 tablespoon tomato puree
1 teaspoon dried oregano
1 bay leaf
1 teaspoon sugar
2 cups shrimp, cooked, peeled
1 1/2 cups clams, canned
1 tablespoon lemon juice
3 tablespoons fresh parsley, chopped
2 tablespoons butter
salt & pepper
4 whole shrimp, cooked, to garnish

Steps:

  • Heat the oil in a pan and add the onion and garlic. Fry over a moderate heat for 6-7 minutes, until the onions have softened.
  • Meanwhile, cook the spaghetti in a large pan of boiling salted water for 10-12 minutes until al dente. Stir the passata, tomato puree, oregano, bay leaf and sugar into the onions and season well.
  • Bring to the boil, then simmer for 2-3 minutes.
  • Add the shellfish, lemon juice and 2 Tbsp of the parsley.
  • Stir well, then cove r and cook for 6-7 minutes.
  • Meanwhile, drain the spaghetti when it is ready and add the butter to the pan.
  • Return the drained spaghetti to the pan and toss in the butter.
  • Season well.
  • Divide the spaghetti among four warmed plates and top with the seafood sauce. Sprinkle with the remaining 1 Tbsp parsley, garnish with whole prawns and serve immediately.

1 LB. mixed fish and shellfish
14 OZ. cod
12OZ. spaghetti
1/3 CUP tomato passata
2 slices of white bread
1 shallot
parsley, chopped
extra-virgin olive oil
dry white wine
salt
peppercorns

Steps:

  • Peel and chop the shallot and sweat it in 3 Tbsp. olive oil. Add the mixed fish and shellfish and cook for around 5 minutes. Add the cod (you may substitute with another fish, such as monkfish or scorpionfish, or alternatively salmon or swordfish). Add a bit of white wine (around 1/2 cup) and let evaporate. Stir in the tomato passata. Season with salt, bring to a boil and cook for 8 minutes. Remove from the heat and blend everything, reserving some shellfish for decoration.
  • Cut the bread into cubes and pan fry in a little bit of very hot oil.
  • Cook the pasta in boiling salted water until al dente. Drain and top the pasta with the sauce, shellfish, bread cubes, ground pepper, and chopped parsley to taste.

1/4 cup extra-virgin olive oil, plus more for drizzling
1 pound medium shrimp, peeled, deveined and tails removed
Freshly ground black pepper
8 ounces bay scallops or small sea scallops
12 ounces thin spaghetti
4 cloves garlic, thinly sliced
1/2 cup dry white wine
One 15-ounce can diced tomatoes
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 cup chopped fresh parsley
1/2 cup torn fresh basil leaves
Zest of 1 lemon, finely grated

Steps:

  • Bring a large pot of salted water to a boil.
  • Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat until it is shimmering. Season the shrimp with salt and pepper, add to the skillet and cook until lightly browned on both sides, about 3 minutes total; transfer to a plate. Season the scallops with salt and pepper, add to the skillet and cook undisturbed until nicely browned on the bottom, about 2 minutes. Give the scallops a quick stir and cook 1 minute, then transfer to the plate with the shrimp.
  • Add the spaghetti to the boiling water and cook according to the package directions for al dente. Strain, reserving 1/2 cup cooking water.
  • While the spaghetti cooks, reduce the heat to medium, add the garlic to the skillet and cook until softened and lightly browned, about 3 minutes. Add the wine and cook, stirring to scrape up any brown bits, until reduced by half, about 2 minutes. Add the tomatoes, red pepper flakes and 1/4 teaspoon salt and cook, stirring occasionally, until the sauce is slightly thickened, about 5 minutes. Add the pasta, shrimp, scallops and reserved cooking water and toss to combine. Continue cooking until the sauce coats the pasta and the seafood is heated through, about 2 minutes.
  • Turn off the heat, stir in the parsley and basil and divide among four serving bowls. Sprinkle with the lemon zest, drizzle with more olive oil if desired and serve.

250g/9oz dried spaghetti
2 medium sized courgettes, cut into long thin strips
3 tbsp olive oil
150g/5½oz peeled prawns (uncooked and larger prawns cut into small pieces)
150g/5½oz clams in their shells, cleaned
1 medium squid, sliced
1 garlic clove, thinly sliced
2 tbsp chopped flatleaf parsley
pinch dried chilli, or a whole dried chilli broken into pieces
10 datterini tomatoes (small plum tomatoes), cut into quarters
salt and freshly ground black pepper

Steps:

  • In a saucepan of boiling salted water, cook the spaghetti according to the packet instructions, adding the courgettes to the boiling water with the pasta for the final 5 minutes of cooking.
  • Meanwhile, heat the oil in a frying pan and add the prawns, clams and squid. (Discard any clams with broken shells, or open clams that do not close when given a sharp tap).
  • Cook for one minute then add the garlic, parsley, chilli and tomatoes. Take off the heat.
  • When the pasta and courgettes are 'al dente' remove using a slotted spoon. Add to the frying pan, place back on the heat and add one ladle of pasta water.
  • Cook for a further 2 minutes tossing the frying pan so the courgettes, tomatoes, squid, prawns and clams become emulsified with the pasta. Season with salt and pepper and serve.

For octopus
2 pound cleaned frozen octopus, thawed and rinsed
2 cups water
1 Turkish or 1/2 California bay leaf
For tomato sauce
1 (14- to 15-ounce) can whole tomatoes in juice, drained, reserving juice, and coarsely chopped
2 tablespoons chopped basil
2 tablespoons extra-virgin olive oil
For basil purée
3/4 cup packed basil leaves
1/4 cup extra-virgin olive oil
1 tablespoon unsalted butter, softened
For seafood and pasta
1 pound spaghetti
6 garlic cloves
1/3 cup extra-virgin olive oil
1 pound large shrimp in shell, peeled, leaving tail fan attached, and deveined
3/4 pound cultivated mussels, rinsed
3/4 pound baby squid, cleaned, bodies cut into 1/4-inch rounds, and tentacles left whole
Equipment: a pressure cooker

Steps:

  • Cook octopus:
  • Put octopus in pressure cooker with water, bay leaf, and 1/2 teaspoon salt and seal pressure cooker with lid, then cook at high pressure according to manufacturer's instructions 10 minutes. Put pressure cooker in sink (do not remove lid) and run cold water over lid until pressure goes down completely. Remove lid. Transfer octopus to a cutting board, reserving 1/2 cup cooking liquid. Cut off and discard head, then cut tentacles into 1-inch pieces.
  • Make tomato sauce:
  • Simmer tomatoes with their juice, basil, and oil in a heavy medium saucepan over medium heat, uncovered, stirring and mashing tomatoes occasionally, until thick and reduced to about 3/4 cup, 20 to 25 minutes.
  • Make basil purée:
  • Purée basil, oil, butter, and 1/2 teaspoon salt in a blender, scraping down side as necessary, until smooth. Transfer to a small bowl.
  • Cook pasta and seafood:
  • Cook spaghetti in a pasta pot of boiling salted water (3 tablespoons salt for 6 quarts water) until al dente.
  • Meanwhile, purée garlic and oil in cleaned blender until smooth. Heat a dry 12-inch heavy skillet (not nonstick) over high heat until hot, 2 to 3 minutes. Add oil mixture, then immediately add octopus, shrimp, and mussels and sauté, stirring occasionally, until shrimp are browned on edges and mussels begin to open, 2 to 3 minutes. Add tomato sauce and reserved octopus-cooking liquid and cook, stirring, until mussels just open wide and shrimp are just cooked through, about 2 minutes more (discard any unopened mussels). Season with salt and pepper.
  • Drain pasta and return to pot. Add squid to hot seafood in skillet, stirring to combine, then add to hot pasta and toss to combine (squid will cook as it is being tossed). Serve drizzled with all of basil purée.

1 small fennel bulb (160g), halved and thinly sliced
1 onion (160g), finely chopped
150g wholemeal spaghetti
2 large pinches of chilli flakes
3 garlic cloves, finely grated
1⁄2 lemon, zested, plus 2 tbsp juice
3 tbsp tomato purée
300g frozen mixed seafood (we used a mixture of prawns, mussels and squid rings), defrosted
3 tbsp chopped parsley

Steps:

  • Heat the oil in a large non-stick pan and cook the fennel and onion for 10 mins, stirring occasionally until softened. Meanwhile, bring a pan of water to the boil and cook the spaghetti for 10 mins until al dente.
  • When the fennel and onion mixture has softened, stir in the chilli flakes, garlic, lemon zest and juice. Add the tomato purée and cook briefly, stirring all the time.
  • Drain the pasta, reserving a mugful (around 250ml) of the cooking water. Stir the seafood into the tomato sauce and warm through. Toss the spaghetti into the sauce with the parsley and just enough of the reserved cooking water to loosen. Season and serve.

20 large shrimp, deveined with shell and head left on
4 tomatoes, or more to taste
1 bunch flat-leaf parsley, divided
¼ cup extra-virgin olive oil
1 large onion, chopped
1 red bell pepper, chopped
1 fresh red chile pepper, finely chopped
4 large cloves garlic, sliced, or more to taste
½ cup water
2 tablespoons tomato paste
1 tablespoon dried oregano
salt and ground black pepper to taste
1 teaspoon paprika
1 ⅝ pounds spaghetti

Steps:

  • Peel shrimp and place skin, heads, and tails into a large saucepan. Fill pan with water and bring to a boil. Reduce heat to low and let simmer, about 45 minutes.
  • Combine tomatoes and 1/2 the parsley in a blender; puree until smooth.
  • Heat olive oil in a separate pan over medium heat. Add onion, bell pepper, and chile pepper; cook and stir until softened, about 5 minutes. Add garlic; cook until fragrant but not browned, 1 to 2 minutes.
  • Pour pureed tomato mixture into the pan with the peppers. Add water, tomato paste, oregano, salt, and black pepper. Stir well; add paprika. Let sauce simmer on low to medium heat until juices have reduced.

4 garlic cloves , crushed
1 red chilli , deseeded and finely sliced
1 ½ tsp fennel seeds
400g spaghetti
2 tsp smoked paprika
2 x 400g cans chopped tomatoes

400g pack frozen mixed cooked seafood , defrosted
small bunch parsley or basil, chopped

Steps:

  • Boil the kettle and heat the oil in a large, deep frying pan. Add the garlic, chilli and fennel seeds, and sizzle for a few mins. Pour the boiling water into a large pan and cook the pasta following pack instructions.
  • Add the paprika, tomatoes, sugar and seasoning to the pan and simmer for 8-10 mins while the pasta cooks.
  • Drain the pasta 1 min before the end of the cooking time, reserving a cup of the water. Add the pasta to the sauce with the seafood. Simmer for 1-2 mins, adding a splash of the reserved pasta water if it looks too thick. Toss the pasta through the sauce as it cooks. Add the herbs and black pepper, then serve.

"During my last visit there, chef Andrew Urell prepared an angel hair pasta with curried crab and shrimp. I'd love to try making it at home." At the restaurant, this is served as a side dish for grilled salmon.

Number Of Ingredients 13

1 3/4 cups chicken stock or canned low-salt chicken broth
2 teaspoons cornstarch
2 tablespoons olive oil
8 uncooked large shrimp, peeled, deveined, chopped
4 shallots, chopped (about 1/2 cup)
3 garlic cloves, chopped
6 ounces fresh crabmeat
1/2 cup dry white wine
1/2 cup whipping cream
1 tablespoon curry powder
12 cups water
1/2 teaspoon saffron threads, crumbled
12 ounces angel hair pasta

Steps:

  • Mix 1/2 cup stock and cornstarch in small bowl to blend. Heat oil in heavy large nonstick skillet over medium-high heat. Add shrimp, shallots, and garlic; sauté 1 minute. Stir in crabmeat. Add wine and simmer until almost evaporated, about 2 minutes. Add 1 1/4 cups stock and bring to boil. Stir cornstarch mixture to blend; mix into sauce. Bring to boil, stirring frequently. Reduce heat and simmer until sauce thickens, about 1 minute. Add cream and curry powder; simmer until slightly thickened, about 3 minutes. Season to taste with salt and pepper. Cover to keep warm.
  • Meanwhile, bring 12 cups water and saffron to boil in heavy large pot. Add pasta; cook until tender but still firm to bite, stirring occasionally. Drain. Divide cooked pasta equally among plates. Ladle sauce over and serve immediately.
