BROCCOLI RABE & GARLIC PASTA
"I created this because I needed a quick entrée with few ingredients. The garlic flavored oil makes the broccoli rabe less bitter, and with toasted garlic, it's a great dish." -Mary Ann Lee, Clifton Park, New York

SAUTEED GARLIC BROCCOLI RABE
Steps:
- Heat a large saute pan over medium-high heat. Add the olive oil and the garlic cloves and cook for 3 to 4 minutes, to flavor the oil. Carefully remove the garlic using a slotted spoon, and reserve. Add the broccoli rabe to the pan in batches; it will crowd the pan at first but will wilt quickly. Season with salt and pepper. Slice the reserved garlic.
- When the broccoli rabe has wilted, about 3 minutes, add the shallot, the sliced garlic, and the pepper flakes. Continue cooking until the shallot has softened and the broccoli rabe is cooked through but still has some bite, another 2 minutes. Serve with a squeeze of lemon.
PASTA WITH BROCCOLI RABE (CIMA DI RAPA)
This is a very popular winter dish in Italy. Broccoli rabe is sauteed then tossed with anchovies, garlic, bread crumbs and grated Pecorino Siciliano cheese. This version was given to me by a Sicilian friend. Enjoy with a nice hearty red wine and you'll be ready for any winter weather! Garnish with a little more bread crumbs and grated cheese.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook tortiglioni in the boiling water, stirring occasionally until tender yet firm to the bite, 10 to 12 minutes.
- Meanwhile, heat 1 tablespoon oil in a large saute pan over medium-high heat. Add anchovies and garlic. Saute until slightly brown, 3 to 4 minutes, but do not overcook garlic, as this will make the dish bitter. Add broccoli rabe and stir to coat. Alternately add 1/2 of the bread crumbs and 1/2 of the Pecorino Siciliano cheese, stirring constantly, adding 1/2 tablespoon oil while mixing.
- Drain pasta and fold into the mixture, taking care not to break the pasta. Fold in remaining cheese and bread crumbs gently. Top with remaining oil. Transfer to serving plates and sprinkle with red pepper.

PASTA WITH GARLICKY ANCHOVIES AND BROCCOLI RABE
Anchovies star in this robust, wintery pasta dish, lending a savory backbone to a pan full of wilted broccoli rabe and fresh tomatoes. Although the anchovies and garlic are sautéed in olive oil, butter is added at the end, giving the sauce some richness and body, and mellowing the bitterness of the broccoli rabe. Note that while the ricotta adds creaminess to the pasta, it is strictly optional. Leave it out for a leaner dish with a more concentrated flavor.

Steps:
- Bring a large pot of heavily salted water to a boil. Cook pasta according to package instructions until 1 minute shy of al dente. Use a coffee cup or measuring cup to save some pasta water, then drain pasta.
- While the pasta cooks, coarsely chop the parsley, 6 anchovy fillets, scallions, capers (if using) and a pinch of salt. You can chop it all together on a cutting board, or pulse everything briefly together in the food processor; just make sure to keep it coarse.
- Heat a large skillet over medium. Add oil, remaining 4 anchovies and half the garlic, and let cook, stirring, until anchovies start to dissolve, about 1 minute.
- Stir in broccoli rabe, tomato, about two-thirds of the parsley mixture and a pinch of salt to the pan. Sauté until the rabe is tender, 5 to 8 minutes, adding splashes of pasta water as the pan dries out. Taste and season with more salt if necessary.
- Add pasta to pan along with butter, lemon zest, remaining garlic and red-pepper flakes. Toss until the butter melts and the pasta is combined with the vegetables, adding more pasta water if the mixture seems dry. Season with salt and pepper to taste.
- Divide pasta among bowls and sprinkle with remaining parsley mixture. Drizzle with olive oil, and serve with ricotta, if you like.

- Add the broccoli rabe and cook until tender. This should take 4-5 minutes.
- Strain and gently squeeze out excess moisture. Coarsely chop and set aside.
- Bring a large pot of salted water to a rolling boil. Please note that you can use the same water to cook your pasta. My preference is to start with a fresh pot of water.
- Add the orecchiette slowly and stir. Cook according to package directions or until almost al dente.
- While the pasta is cooking, heat the oil in a large frying pan over medium-low heat.
- Add the chopped garlic and 2 anchovy fillets. Do not allow the garlic to brown.
- Mash the anchovy with the back of a spoon for about 1-2 minutes.
- If using, add red pepper flakes and stir for 30-60 seconds.
- Carefully, add the cooked broccoli rabe and stir to combine. Adjust seasonings and heat through.
- Add 1 ladle of pasta water and stir occasionally for 4-5 minutes. Add more water if the mixture dries out.

SPAGHETTI WITH BROCCOLI RABE, TOASTED GARLIC AND BREAD CRUMBS
Broccoli rabe can take whatever you throw at it and still shine. Its mild but distinctive bitterness dominates almost anything you cook it with - but what's wrong with that? So a pasta sauce that features it teamed with garlic and chili flakes is a natural. Add bread crumbs for crunch and the dish is a real winner. You can use the same pot for cooking the broccoli and the pasta; you can use the same skillet for toasting the bread crumbs and finishing the dish. The whole thing will be done within 20 or 30 minutes, and it will showcase broccoli rabe beautifully, as it deserves.

Steps:
- Bring a 6- to 8-quart pasta pot of water to a rolling boil and season generously with salt.
- Meanwhile, peel the garlic cloves, leaving them whole, then cut them lengthwise into thin slices. Cook the garlic slices in the olive oil in a heavy skillet over medium heat, stirring occasionally, until the oil bubbles, then reduce the heat to medium-low and cook the garlic slowly, stirring occasionally, until pale golden, 5 to 6 minutes. Stir in the red pepper and remove the pan from the heat (the garlic will continue to cook in the residual heat).
- Add the pasta to the boiling salted water and cook it, stirring once or twice in the beginning, according to the package instructions. About 4 to 5 minutes before the pasta is done (depending on how tender your broccoli rabe is), stir in the broccoli rabe and continue to boil the mixture, uncovered, until the pasta is al dente and the broccoli rabe is tender.
- Drain the pasta mixture in a colander and transfer it to a large serving bowl. Spoon the garlic/oil mixture over the pasta and drizzle it with additional olive oil to taste.
SPAGHETTI WITH BROCCOLI RABE, TOASTED GARLIC & BREADCRUMBS
This is a quick and easy dish where just a few ingredients come together in a delicious and impressive dish. Another great recipe from Mark Bittman, printed in the New York Times (April 2009). Bittman recommends making homemade breadcrumbs by tearing up stale bread, then pulsing the pieces in a food processor to make coarse crumbs (nothing approaching a powder). You can use the same pot for cooking the broccoli and the pasta; and the same skillet for toasting the bread crumbs and finishing the dish.

Steps:
- Start by blanching the broccoli rabe in a deep pan of boiling water. Put the broccoli rabe in for 2 minutes and take it out. When you are done, use tongs to take the broccoli rabe out and set aside. Do not strain the water as we will be cooking the pasta inside the same pot of water!
- Take the sausage out of the casing and then cutting the sausage into bite sized pieces. In a large pan, place 1 tablespoon of olive oil and 1 tablespoon of minced garlic. Wait until the garlic browns and then add the sausage. Cook the sausage for 8 minutes, stirring occasionally.
- Pour in the diced tomatoes. Stir for 4 minutes and place the blanched broccoli rabe into the sausage mixture. Add salt, pepper and red pepper flakes to your liking. Stir everything until the sausage is cooked, about an extra 10 minutes. The sausage will be ready when the outside of the sausages are a deep golden brown and the inside is pale but with no sign of pink or blood.
- Cook the pasta in the same broccoli rabe water and put the pasta back into the pot according to package instructions. When both the sausage mixture and pasta are done, combine and enjoy! Top with parmesan cheese and red pepper flakes to your liking.

- Remove from the oven and immediately rub the toasts with the whole clove of garlic. Allow to cool. Process the bread in a food processor until the crumbs are broken down fine. You may have a few chunks that won't break down, but you can remove them and snack on them or discard them. You will likely have more breadcrumbs than you'll need. Set aside.
- Slice rapini cross-wise about ½-inch wide beginning at the top of the bunch, and then thinner as you near the middle where there are more stems. Discard the thick stems at the bottom, or save them to cook in soup. Set the cut rapini aside.

Top with cheese.
- The Power of Pasta Water Before you drain off your perfectly cooked pasta (al dente, of course!), scoop out at least 1 cup of that rich, starchy pasta water to make an easy pan sauce. We used 1/4 to 1/2 cup in most of the dishes here, but for most recipes save a little extra in case you want a looser sauce. The cloudy broth marries with butter or oil for silky, creamy results. And because you've cooked your pasta with a proper amount of salt (about 1 Tbsp. kosher salt per quart of water), the leftover liquid delivers flavor too. Use it whenever you feel saucy.
