PASTA WITH BACON AND TOMATOES

Pasta with Bacon and Tomatoes image

Provided by Valerie Bertinelli

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 9

Kosher salt and freshly ground black pepper
2 pounds plum tomatoes (about 10)
6 strips thick-cut bacon, chopped
1 medium onion, halved and thinly sliced
1/2 cup dry white wine
Pinch of crushed red pepper flakes
12 ounces spaghetti
1/4 cup fresh flat-leaf parsley or basil, chopped
Grated Parmesan, for serving

Steps:

  • Bring a large pot of salted water to a boil. Hull the tomatoes and cut a shallow "x" through the skin on the bottom of each. Prepare an ice bath.
  • Put the tomatoes in the boiling water and boil for 30 seconds. Remove with a slotted spoon and submerge in the ice bath. Reserve the pot of boiling water. When the tomatoes are cool, use the back of a paring knife to peel the tomatoes. Cut the tomatoes in half lengthwise and squeeze out and discard the seeds, then chop the tomatoes into approximately 1/2-inch pieces.
  • Put the bacon in a large cold skillet and cook over medium heat, stirring occasionally, until crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate. Discard all but about 2 tablespoons of the bacon fat from the skillet.
  • Add the onion to the drippings in the skillet and cook over medium heat, stirring occasionally, until soft and pale golden, about 10 minutes. Add the wine and boil until reduced by half, about 3 minutes. Add the chopped tomatoes, red pepper flakes, 1/2 teaspoon salt and pepper to taste, and cook, stirring occasionally, until the tomatoes start to break down, about 5 minutes.
  • Cook the spaghetti according to the package directions in the reserved pot of tomato water until al dente, about 10 minutes. Reserve 1 cup of the cooking water, then drain the pasta. Add the pasta to the skillet with the sauce, along with 1/2 cup of the cooking water and toss to coat. Add more water if necessary for desired consistency. Stir in half the bacon and half the herbs and season with salt and pepper. Divide the pasta and sauce among bowls and top with the remaining bacon and herbs. Serve with Parmesan for topping.

SPAGHETTI WITH BACON AND ONION

Spaghetti With Bacon and Onion image

This recipe is one of our absolute favorites. This is so easy, and we almost always have all of the ingredients on hand. As it's just two of us, we usually have leftovers, and they taste just as good as the first time around. It's so easy to make, my dear husband can make it on his own!

Provided by rsnelling42

Categories     One Dish Meal

Time 30m

Yield 6 serving(s)

Number Of Ingredients 8

1 lb bacon
2 small onions (medium if you like onions!)
1 cup white wine
2 (15 ounce) cans diced tomatoes (petite cut work too)
1 teaspoon dried thyme (not ground)
1 teaspoon salt
1/2 teaspoon pepper
1 lb spaghetti

Steps:

  • Cut bacon into matchsticks and cook over medium-high heat for 5 minutes.
  • Add diced onion and cook till tender (approx 6-8 minutes). Meanwhile, fill pot with water for spaghetti and set on high.
  • Drain 3/4 - 7/8 of the fat. How much you drain is up to you. The more you drain, the healthier it is. The more you leave in, the better it tastes.
  • Add the white wine and raise the temperature. Cook off most of the liquid (approx 5 minutes).
  • Lower temperature to moderate heat, add tomatoes, thyme, salt and pepper. Cook for 10 - 15 minutes.
  • By now, water should be boiling. Cook spaghetti according to package directions.
  • Drain spaghetti, toss with sauce.
  • Enjoy!

CREAMY BACON SPAGHETTI PASTA CARBONARA

Creamy Bacon Spaghetti Pasta Carbonara image

Spaghetti Carbonara is an easy dish to fix at home. All that creamy sauce, bacon, and pasta? Mama mia!

Provided by Shauna

Categories     Main Course

Time 30m

Number Of Ingredients 12

2 large eggs
3/4 cup heavy cream
1/2 cup shredded parmesan
1/2 teaspoon dried parsley flakes
1/4 teaspoon garlic salt
1/4 teaspoon red pepper flakes
7 slices bacon (crumbled up)
1/2 large yellow onion, chopped
1 cup chopped white mushrooms
1/2 package spaghetti noodles
1/4 teaspoon ground black pepper
1 tablespoon minced garlic

Steps:

  • Cook your noodles per package directions and leave in the hot water until ready to add to your skillet.
  • In a mixing bowl add your eggs, cream, parmesan, dried parsley flakes, garlic salt, ground black pepper, and minced garlic. Combine your ingredients so that the eggs are all beat together with the other ingredients. I used a hand mixer just to make sure they were all incorporated really good!
  • Meanwhile, in a large skillet cook your bacon over medium heat. When done remove from skillet and chop or crumble into small pieces and set aside. And this was the only rare occasion that I didn't pat the bacon with a napkin to remove the grease. I actually wanted a little bit of the grease flavor in the pasta. I know unhealthy.
  • Add your onion and mushroom to your hot skillet with a little bit of bacon grease and let cook until onions are tender.
  • Once your noodles are done cooking drain all of the water, except for about 2 tablespoons and put the noodles into the skillet with the onions and mushrooms and remove from the burner for a few minutes to let your pan cool down.
  • Add the 2 reserved tablespoons of hot noodle liquid to the egg mixture slowly while whisking. Don't add it too fast or you will end up with scrambled eggs which would be bad. Funny, but bad.
  • Once you have added the liquid to your eggs you are ready to add your sauce to the noodles. I poured the sauce directly over the noodles in the skillet and turned the burner on med-LOW and kept stirring so that the sauce didn't get too hot in any once place. It's important to warm the sauce up slowly or you will have scrambled eggs in your pasta.
  • Now I'm a complete freak and was a little hesitant to make this dish because of the raw eggs in the sauce. The original recipe called for just the noodles into the sauce then it was done... but I cooked mine over med-LOW heat for about 5 minutes until I was sure all of the parmesan cheese was melted and the eggs were done. I did it so slowly enough that I didn't have any problems with my eggs cooking too fast or too much.
  • Add your crumbled bacon to the top of your pasta before serving.
  • It might sound a little scary to make this but trust me when I say that it was well worth it. This really wasn't hard to make and it really did turn out to be very delicious.

PASTA WITH BACON, ONIONS AND MUSHROOMS

Pasta with Bacon, Onions and Mushrooms image

Quick and easy weeknight dinner, all in one pan and on the table in 30 minutes.

Provided by Kelly | the hungry bluebird (adapted from Martha Stewart)

Categories     Main Course

Time 30m

Number Of Ingredients 8

1 tbsp olive oil
3 slices thick-cut bacon, cut into ¼-inch slivers
1 yellow onion, peeled, halved lengthwise and thinly sliced
10-12 oz cremini mushrooms, trimmed, wiped clean and sliced
12 oz fusilli (corkscrew shape) or other short tube pasta
Kosher salt and freshly ground pepper
1 cup flat-leaf parsley, chopped
¾ cup freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to a boil. In the meantime, heat olive oil in large skillet over medium heat and cook bacon until golden brown and most of the fat has rendered, about 8 minutes. Add the onions, sprinkle lightly with salt, and cook and stir for another 8 minutes, until tender.
  • Push bacon/onion mixture to the side, increase heat to medium-high and add the mushrooms to the pan. Cook without stirring until they start to sizzle and brown, releasing their liquid, about 5 minutes. Lower heat, sprinkle with salt and then stir to combine with bacon and onions and cook another 3 minutes or so.
  • Cook pasta in boiling salted water until al dente, about 10 minutes. Transfer pasta to skillet, reserving pasta cooking water. Reduce heat to low and slowly stir in 1 cup of pasta water. Cook and stir, scraping up any browned bits, until sauce is silky and pasta is evenly coated, 2-3 minutes.
  • Turn off heat and stir in chopped parsley and half the Parmesan cheese. Season to taste with salt and pepper. Serve in pan, or transfer to large bowl, and top with remaining cheese. Enjoy.

Bacon and Onion Pasta image

Building off of the simple but powerfully flavorful Italian dish pasta aglio, olio e peperoncino, this wondrous pantry recipe gets much of its flavor from bacon fat and caramelized onions. The one-two-three punch of spicy red-pepper flakes, aromatic garlic slivers and savory herbes de Provence bloomed in fat provides the umami-rich base for this easy workday meal. Red vermouth creates a rich, jammy pasta sauce edged with sweetness. Don't sleep on angel hair pasta: It's got the right airy bounciness that's excellent at soaking up seasonings. Threaded with parsley and Parmesan, these generously oiled noodles are a dream to eat.

Provided by Eric Kim

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 11

8 ounces bacon
2 medium red onions
1/4 cup extra-virgin olive oil
Kosher salt and black pepper
8 garlic cloves
1 teaspoon red-pepper flakes
1 teaspoon herbes de Provence
1 cup sweet red vermouth (vermouth rouge)
1 pound angel hair or capellini
1 cup finely chopped fresh parsley
1/2 cup finely grated Parmesan or Pecorino Romano

Steps:

  • Take the bacon out of its packaging with the slices still stuck together and place on a cutting board. Cut the bacon, still stacked, crosswise into ½-inch slices to create little bacon pieces, also known as lardons. Add to a large rimmed sheet pan. Halve and thinly slice the onions. Add to the sheet pan as well. Drizzle the olive oil over the bacon and onions, season with salt and pepper, and toss until evenly coated.
  • Place the sheet pan in a cold oven and then heat the oven to 450 degrees. Roast until the bacon has rendered much of its fat but is still pink and the onions are slightly charred in spots but not too dark, 20 to 25 minutes.
  • Meanwhile, bring a large pot of water to a boil. Smash the garlic cloves with the side of your knife and thinly slice them. When the bacon and onions have had their 20 to 25 minutes, remove the sheet pan from the oven and stir in the garlic, red-pepper flakes, herbes de Provence and vermouth. Place the pan back in the oven and continue cooking until the vermouth is almost evaporated, and the bacon and onions look jammy and caramelized but not burnt, 5 to 10 minutes.
  • Cook the pasta according to package instructions. (Don't overcook it, as angel hair can go from bouncy to soggy in seconds). Reserve 1 cup of the cooking liquid. Drain the pasta and return it to the pot.
  • Carefully transfer everything from the pan to the pot with the cooked pasta. Add the parsley and Parmesan to the pasta, and toss until evenly combined, adding some of the reserved cooking liquid if the sauce needs thinning out. Taste, adding more salt and pepper as needed, and serve immediately.

PASTA WITH CARAMELIZED ONIONS AND BACON

Pasta With Caramelized Onions and Bacon image

This recipe is sophisticated, but tastes really down-home. It originally came from Taste of Home and I tweaked it a bit, so it may look similar to another on the site, but I think my version is superb. Also, when I reheat it, I add more parm and some butter. It was fantastic the second time around too!

BUCATINI WITH ONION, BACON, AND TOMATO

Bucatini with Onion, Bacon, and Tomato image

Provided by Lidia Matticchio Bastianich

Categories     Sauce     Onion     Tomato     Side     Bacon     Simmer     Boil

Yield Serves 6

Number Of Ingredients 11

One 28-ounce can Italian plum tomatoes, preferably San Marzano
1/2 teaspoon coarse sea salt or kosher salt, or to taste, plus 1 tablespoon for the pasta pot
4 cups 1/3-inch-thick onion slices (about 3/4 pound)
4 tablespoons extra-virgin olive oil, plus more for serving
4 plump garlic cloves, peeled and crushed
6 ounces guanciale, pancetta, or bacon, cut in 1/2-inch pieces
1/2 teaspoon peperoncino flakes
1 pound bucatini or perciatelli
1 cup grated Pecorino Romano cheese, plus more for passing
Recommended Equipment
A heavy-bottomed skillet or sauté pan, 13- or 14-inch diameter

Steps:

  • Drain the canned tomatoes; save all the juices. Cut each tomato in quarters lengthwise; slice the quarters in strips, 1/2 inch wide.
  • Start heating 6 quarts of water with 1 tablespoon of salt in a large pot, to cook the bucatini.
  • Put 1/2 cup water in the wide skillet, and set it over medium-high heat. Dump in the sliced onions; spread them out and turn them over in the pan as the water starts to boil. Cook the onions, turning occasionally, for several minutes, until they're softened and the water is nearly evaporated.
  • Pour the olive oil over the onions, toss in the crushed garlic cloves, and sprinkle with 1/4 teaspoon salt. Stir well to coat all the onion slices with oil; cook for a couple of minutes or more, until onions and garlic are sizzling.
  • Clear a space on one side of the skillet and scatter in the cured pork (guanciale, pancetta, or bacon). Heat and stir in the hot spot until they're rendering fat and sizzling, then stir in with the onions. Sprinkle the peperoncino in the pan, stir, and let everything cook for 4 or 5 minutes, until the onions and pork are caramelized and golden-adjust the heat so nothing burns.
  • Now spill all the sliced tomatoes and their juices into the skillet, and stir well. Rinse the tomato containers with a couple cups of "slosh" water, and stir that in too; season with salt lightly. Bring the sauce to a boil, stirring frequently, and then lower the heat to keep it simmering actively. Let the sauce cook and thicken for about 20 minutes, or until it has the consistency you like for pasta. (If you're pressed for time, concentrate the sauce at a boil, stirring frequently.)
  • When the tomatoes have been added and the sauce is simmering, you can start cooking the bucatini. (If you prefer, prepare the sauce ahead of time. Stop cooking when nearly thickened and let it cool. Return it to the simmer as your pasta cooks.)
  • With the water at a rolling boil, slide the bucatini into the pasta pot, letting the strands soften so they don't break, and fanning them out so they don't stick together. Stir well, cover the pot to bring the water back to the boil over high heat, then cook partially covered.
  • Stir the bucatini occasionally, and check doneness frequently. When the sauce has thickened, taste it and adjust seasoning-keep in mind that the Pecorino Romano will add salt.
  • When the bucatini are cooked through but still al dente, lift them from the cooking pot with tongs, drain for just a moment, then drop them right onto the simmering sauce. Toss together continuously, over moderate heat, for a couple of minutes, until the pasta is perfectly cooked and evenly coated with sauce. If the dish is dry, ladle in a bit of hot pasta water from the cooking pot. If the sauce is soupy, toss over higher heat to concentrate.
  • Turn off the heat, and toss in the grated cheese. Drizzle over it a final flourish of olive oil, and serve, either directly from the skillet or in a warm serving bowl, passing additional cheese at the table.

SPAGHETTI WITH EGG, ONION, AND BACON

Spaghetti with Egg, Onion, and Bacon image

Categories     Sauce     Egg     Onion     Side     Bacon     Boil

Yield serves 6

Number Of Ingredients 9

Kosher salt
1 pound spaghetti
6 ounces bacon, chopped
Extra-virgin olive oil, if needed
1 small onion, chopped (about 1 cup)
2 large egg yolks
1 bunch scallions, trimmed and chopped (about 1 cup)
1 teaspoon freshly ground black pepper
1 cup grated Grana Padano or Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to boil. Slip the spaghetti into the boiling pasta water, and stir.
  • Cook the bacon in a skillet over medium heat until the fat has mostly rendered, about 4 to 5 minutes. (If your bacon is very lean, you can add a drizzle of olive oil to help start the rendering of the fat.) Push the bacon to one side of the pan, and add the onion. Let both cook separately until the onion is tender, about 5 minutes, then mix the two back together. (If you like, you can drain off the excess bacon fat here and replace it with olive oil.)
  • Ladle 4 cups pasta water into the skillet with the bacon and onion, bring to a rapid boil, and quickly reduce the sauce. Meanwhile, whisk the egg yolks with 1/4 cup hot pasta water in a small bowl.
  • When the sauce has reduced by about half and the spaghetti is al dente, scoop the pasta into the sauce with tongs or a spider. Add the scallions, pepper, and salt to taste. Toss the pasta until it is coated in the sauce and the scallions are wilted. Remove the pan from the fire, and quickly mix in the egg yolks, stirring until creamy. Toss the pasta with the grated cheese, and serve immediately.
