Baked Spaghetti Squash with Tomato Meat Sauce image

This baked spaghetti squash with tomato meat sauce is a low carb dish consisting of spaghetti squash that is cooked with a tomato meat sauce on top.

Olive oil for brushing
Salt and pepper to taste
1 spaghetti squash (about 3 lbs)
1 lbs ground beef
1 yellow onion (diced)
3 cloves garlic (minced)
1 tsp Italian seasoning
1 can (15 oz) crushed tomatoes
1 cup shredded mozzarella
chopped parsley (for garnish)

Steps:

  • Preheat oven to 400º F
  • With a knife, carefully score squash lengthwise where you're going to cut it in half. Poke a few holes along the score.
  • Microwave the squash for 5 minutes. Allow to cool.
  • Carefully cut the squash in a half. Scoop out the seeds.
  • Brush the inside of both halves of the squash with olive oil. Season with salt and pepper.
  • Place the two halves cut side down on a baking sheet lined with parchment paper.
  • Roast the squash until tender, about 30 minutes. Allow several minutes to cool.
  • Using a fork, scrape the insides to create a spaghetti-like texture. Leave insides in the squash.
  • Heat oil in a skillet on medium-high heat. Add onions and cook until translucent, 5-8 minutes.
  • Stir in the minced garlic and cook for an additional 30 seconds.
  • Add the ground beef. Season with salt. Cook and mix until cooked through, while breaking the beef into small crumbles, 5-8 minutes.
  • Stir in the crushed tomatoes and Italian seasoning. Bring to a simmer.
  • Spread the tomato/beef mixture evenly between the two squash halves.
  • Sprinkle the cheese evenly between both halves.
  • Bake until the cheese is melted, about 5 minutes.
  • Garnish with chopped parsley. Serve immediately and enjoy!

A personal recipe I made using spaghetti squash and combining ingredients from at least three other recipes I have used in the past. This recipe is extremely good and a favorite for everyone I have made it for. It has a little kick to it, not too spicy but not mild.

1 spaghetti squash
1 pound ground beef
2 tablespoons olive oil
1 yellow squash, diced
1 zucchini, diced
1 red bell pepper, chopped
½ onion, diced
1 tablespoon Italian seasoning
1 teaspoon dried basil
½ teaspoon freshly ground black pepper
½ teaspoon dried oregano
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon dried thyme
¼ teaspoon red pepper flakes
1 (14 ounce) can tomato sauce

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Poke 8 to 10 holes in the spaghetti squash; place whole in a baking pan.
  • Bake in the preheated oven until squash is easily pierced with a knife, about 25 minutes. Remove and let cool until easily handled.
  • Cut squash in half; remove seeds and ribs. Place squash halves facedown in a baking dish with a little bit of water and cover with foil. Bake until you can pull the sides away easily with a fork, about 25 minutes more.
  • Meanwhile, heat a medium skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Set beef aside.
  • Heat a large, deep skillet over medium-low heat. Add olive oil, yellow squash, zucchini, bell pepper, onion, Italian seasoning, basil, black pepper, oregano, garlic powder, thyme, and red pepper flakes. Cook and stir until vegetables are tender, about 10 minutes. Pour in tomato sauce and simmer until heated through, adding the beef halfway through, about 10 minutes more.
  • Turn spaghetti squash face-up; shred the sides from the center out with a fork. Scoop "spaghetti" from squash onto serving plates. Flatten and top with the sauce.

1 spaghetti squash, halved lengthwise and seeded
1 ½ pounds ground beef
1 white onion, diced
1 tablespoon extra-virgin olive oil
1 cup sliced mushrooms
1 zucchini, diced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 (14.5 ounce) can crushed tomatoes
1 (8 ounce) can crushed tomatoes
¼ cup chopped fresh basil, or to taste
¼ cup chopped fresh oregano, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Pour water into a baking dish. Place squash halves with cut sides down in baking dish; roast for until tender, 30 to 40 minutes.
  • While squash is baking, cook and stir ground beef and onions in a skillet over medium-high heat until the beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Set beef aside.
  • Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir mushrooms, zucchini, green and red bell peppers, both amounts of crushed tomatoes, basil, oregano and thyme. Simmer over medium heat until vegetables are cooked through and tender, about 10 minutes. Add the ground beef and onions; stir to combine. 1 cup water
1 pound lean ground beef (90% lean)
1 large onion, chopped

Cut some carbs from a classic comfort food by swapping out pasta in favor of roasted spaghetti squash. You'll be amazed how satisfying these veggie "noodles" can be -- especially when paired with our homemade meatballs. They're tender, juicy and packed with flavor.

1 medium spaghetti squash (about 2 pounds)
Kosher salt
3 tablespoons extra-virgin olive oil, plus more for brushing
2 stalks celery, chopped
1 medium carrot, roughly chopped
1 medium onion, roughly chopped
6 cloves garlic
1 cup fresh parsley leaves
1 pound ground beef
1 pound ground pork
2 large eggs
1 cup Italian-style breadcrumbs
1 cup plus 3 tablespoons grated parmesan cheese
2 28-ounce cans tomato puree
2 large sprigs basil
1 teaspoon dried oregano

Steps:

  • Preheat the oven to 425 degrees F. Halve the squash lengthwise and scoop out the seeds. Sprinkle the cut sides with 1/2 teaspoon salt, then brush both sides with olive oil. Put the squash, cut-side up, in a baking dish and cover tightly with aluminum foil. Roast 20 minutes, then uncover and continue roasting until the squash is tender, about 35 more minutes.
  • Meanwhile, make the meatballs: Brush a baking sheet with olive oil. Pulse the celery, carrot, onion, garlic and parsley in a food processor to make a paste. Transfer half of the vegetable paste to a bowl; add the ground beef, ground pork, eggs, breadcrumbs, 1 cup parmesan and 1 teaspoon salt and mix with your hands until just combined. Form into about 24 two-inch meatballs; transfer to the prepared baking sheet. Bake until firm but not cooked through, about 10 minutes.
  • Make the sauce: Heat 3 tablespoons olive oil in a large pot over medium-high heat. Add the remaining vegetable paste and cook, stirring occasionally, until it looks dry, about 5 minutes. Stir in the tomato puree; rinse each can with 1 cup water and add to the pot. Stir in the basil, oregano and 1 1/2 teaspoons salt. Bring to a simmer, then add the meatballs and simmer until the sauce thickens and the meatballs are cooked through, 15 to 20 minutes. Remove the basil.
  • Use a fork to scrape the spaghetti squash flesh into strands; transfer to a large bowl and toss with 2 tablespoons grated parmesan. Season with salt. Divide the squash among bowls and top each with some meatballs, sauce and the remaining 1 tablespoon parmesan.
  • This recipe makes extra sauce and meatballs. Let cool completely, then freeze in a storage container for up to one month.

The Best Vegan Spaghetti image

This tasty meat sauce for a vegan spaghetti is super easy to make, is one pot, and loaded with protein from walnuts and mushrooms versus typical lentils.

4 servings spaghetti or pasta of choice
4-5 cups assorted mushrooms (whole is fine as we will be processing them)
1 heaping cup walnuts (raw, whole)
2 tbsp. olive oil
1 large onion (rough chop)
2 celery ribs (rough chop)
3 medium-sized carrots (rough chop)
4 large cloves of garlic (whole)
1/2 tsp chili flakes
1 tsp cinnamon spice
1/2 tsp clove spice
2 tbsp. dry basil spice
1 tbsp. parsley spice
1 bay leaf
1/4 cup tomato paste
1 680 ml bottle of passata - I used organic
2 tbsp. vegetable stock paste
2-3 cups boiling water
season to taste

Steps:

  • Into a food processor place 1/2 of the mushrooms and process until finely ground. Remove mushrooms from the processor and repeat with the other 1/2 of mushrooms. See notes.
  • Into the food processor add your walnuts and process till finely ground. Transfer walnuts to the bowl with the mushrooms.
  • Into a large soup pot add your olive oil and heat on medium-high heat for around 20 seconds before adding your mushroom and walnut mixture. Cook for around 6-8 minutes, stirring often to avoid burning. Cook until all the liquid has evaporated and the mixture has browned beautifully.
  • Into the same food processor add your onion, celery, carrots and garlic. Process till finely ground. See notes.
  • Remove the mushroom and walnut mixture from the pot and transfer to a bowl.
  • Into the same pot add your onion mixture and cook on medium heat for around 5-6 minutes, or until browned and fragrant. If the mixture starts to sticks to the bottom of the pot simply add a little water bit by bit to help loosen the browned parts. This is a flavour building step, so I highly suggest it if needed.
  • To the mixture add your chili flakes, cinnamon, clove, basil, parsley and bay leaf. Stir till well combined. Cook for around 1-2 more minutes.
  • Now, push the cooked onions mixture to the sides and makes room for the tomato paste. Cook on its own for a minute or so or until browned. Once browned stir the tomato paste into the onion mixture and transfer your walnut and mushrooms to the pot. See notes.
  • Stir till well combined, increase heat and add your passata and vegetable stock paste. Cook for around 5 minutes before adding your water and bringing mixture to a boil.
  • Put on your pot lid and simmer for around 25-30 minutes. See notes. Before serving taste for salt and pepper and add as needed.
  • Enjoy with your favourite pasta, garnished with parsley and a side of garlic toast!

I grow spaghetti squash in my garden and often try different ways to cook it. This is one of my favorite recipes for spaghetti squash, I found one similar in an old cookbook and just added my own things. It is really yummy!!

1 large spaghetti squash
1 (16 ounce) jar favorite spaghetti sauce
1 (14 ounce) can stewed tomatoes
1 chopped onion
1 (10 ounce) package frozen chopped spinach
1 (4 ounce) can mushrooms
1 garlic clove, minced
salt and pepper
butter

Steps:

  • Wash spaghetti squash then cut in half, lengthwise.
  • Scrape out seeds.
  • Sprinkle salt and pepper on spaghetti squash halves, add butter then put in baking pan with 1/4 cup water.
  • Cover with aluminum foil and bake at 350 for 45 minutes.
  • Remove from oven.
  • Meanwhile, as squash is cooking, put stewed tomatoes, onions, mushrooms, garlic and spinach in sauce pan, bring to a low boil and simmer 30 minutes.
  • Drain off juice, add spaghetti sauce, bring back to a boil, simmer 15-20 minutes .
  • Using a fork, scrape squash from shell, starting at one end finishing at the other.
  • It will look just like spaghetti noodles.
  • Put squash in one bowl and sauce in another bowl.
  • Serve with Parmesan cheese and garlic bread or a salad.

1 1/2 tablespoons olive oil, (divided)
1 medium sweet onion, (diced)
1 carrot, (peeled and finely diced)
2 garlic cloves, (minced)

1 tablespoon tomato paste
1 28- ounce can crushed tomatoes
2 teaspoons Italian seasoning
1/2 teaspoon crushed red pepper
salt and pepper
freshly grated Parmesan cheese

Steps:

  • Heat oven to 400 degrees. Slice spaghetti squash in half lengthwise and scrape out the seeds. Rub 1/2 tablespoon olive oil onto the cut side of squash and season with salt and pepper. Place cut side down on a large, rimmed baking sheet and cook for 45 to 60 minutes, until tender all the way through.
  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Add onion and carrot and cook for 2 minutes. Add turkey and garlic and cook until turkey is cooked through, breaking into pieces with a wooden spoon. Season with salt and pepper and add Italian seasoning.
  • Add tomato paste and crushed tomatoes and stir well to combine everything. Reduce heat and simmer 5-10 minutes. Add red pepper flakes and more salt and pepper if necessary.
  • Scrape out insides of spaghetti squash with a fork. Serve topped with meat sauce and Parmesan cheese.

  • Halve squash lengthwise and scoop out the seeds. Place facedown in a microwave-safe dish; add water. Microwave, uncovered, on High until the flesh can be easily scraped with a fork, 10 to 15 minutes.
  • Heat 1 tablespoon oil in a large skillet over medium-high heat. Scrape the squash flesh into the skillet and cook, stirring occasionally, until the moisture is evaporated and the squash is beginning to brown, 5 to 10 minutes. Stir in 1/4 cup parsley. Remove from heat, cover and let stand.
