Make a tasty squash pie featuring a saucy meat filling! The crust of Spaghetti Squash Pie is made with spaghetti squash, butter, eggs, Parmesan and garlic.

Steps:
- Heat oven to 350ºF.
- Pierce squash with fork several times. Microwave on HIGH 15 min. or until tender when pierced with knife.
- Meanwhile, brown meat in large skillet; drain. Return to skillet. Stir in pasta sauce and 1/2 tsp. seasoning; bring to boil. Simmer on medium-low heat 5 to 8 min. or until slightly thickened.
- Cut squash in half; remove seeds. Scrape squash into large bowl. Add flour; toss to coat. Add butter, eggs, Parmesan and garlic; mix lightly. Spoon into 10-inch pie plate sprayed with cooking spray; top with meat sauce, leaving 1/2-inch rim around edge. Top with shredded cheese and remaining seasoning.
- Bake 30 to 35 min. or until squash mixture is heated through and cheese is lightly browned.

- Peel and seed 1 spaghetti squash; cut into 1 1/2-inch chunks. Toss with olive oil, salt and pepper. Roast on a preheated baking sheet at 450˚ until tender and browned, about 45 minutes. Brown 1 tablespoon butter in a skillet over medium heat. Remove from the heat and stir in 1/3 cup chopped pitted dates, 1/4 cup chopped pecans, 1/2 teaspoon fresh thyme and a pinch of salt; scatter over the squash.
SPAGHETTI SQUASH AND PECAN PIE

- Heat oven to 180˚C (350˚F). Combine all ingredients in a food processor, except for pecans. Pour into a greased 22 cm (9 in.) pie plate. Top with pecan pieces. Bake about 50 minutes or until knife inserted in centre comes out clean. Allow to cool. Garnish with whipped cream or a scoop of ice cream before serving. *How to cook squash: Cut in half and remove seeds. Place on a plate and cover with microwave-safe plastic wrap. Microwave on high 10 to 15 minutes or until squash is tender and shreds easily. Note: This recipe can be prepared with most types of winter squash, so feel free to substitute spaghetti squash with butternut squash (musky squash), acorn squash, buttercup squash, or pumpkin.
SPAGHETTI SQUASH WITH PARSLEY AND PECAN PESTO
Steps:
- Preheat the oven to 375 degrees F.
- Rub the cut sides of the squash with 1 teaspoon of the olive oil and sprinkle with salt and pepper. Set the squash cut-side down on a baking sheet. Cut the tops off of the garlic heads, exposing the cloves but leaving the heads intact. Set the heads on a large piece of foil, drizzle with the remaining 1 teaspoon of the olive oil and season with salt and pepper. Wrap up the foil to make a pouch and place on the baking sheet with the squash. Bake until the squash is tender and the garlic soft and roasted, 35 to 40 minutes. Set aside to cool.
- When the roasted garlic is cool enough to handle, press out the cloves and add them to a food processor along with the minced garlic, toasted pecans, 1/2 bunch parsley and 1/2 teaspoon salt. Pulse until the ingredients are pulverized. With the motor running, drizzle in the 1/4 cup olive oil. Add the Asiago and lemon juice and pulse until just combined.
- Shred the squash into a bowl using a fork and toss with 1/2 cup of the pesto. Season with salt and pepper. Serve garnished with chopped parsley.
SPAGHETTI SQUASH CUSTARD PIE FOR WEIGHT WATCHERS
If you use your imagination, you have a pretty good coconut custard pie for dieters, sans the crust. I found this recipe on a WW blog site and bravely tried it. Before you get excited, no, it doesn't taste like Mom's coconut pie, but if you crave dessert (I did) and happen to be following WW Core diet plan (I am), Bob's your uncle! ;-) Prep time does not include cooking the squash - use your favorite method for this, microwave or oven or use up leftovers as I did. The original recipe called 4 eggs, but I used 2 + 1/2 cup Eggbeaters. The fat-free margarine option: this was in the recipe as I copied it but that's not something I ever use. Unable to think of a reasonable substitute, I left it out altogether. My pie turned out just fine but use the margarine if you prefer. Or heck, go all out and sling in some butter. Just don't forget to count the points!

- Preheat oven to 350*F. Coat a 9-inch baking pan with cooking spray.
- Put all ingredients except squash in your blender and whiz on low for a minute or so.
- Stir in the squash by hand. Pour mixture in the pan. Let stand 5 minutes.
- Bake for 30-40 minutes or until just set. The top will puff up and brown.
- NB: I like it better cold. The cornmeal settles to the bottom and forms a kind of sweet polenta crust.
FRESH SPAGHETTI SQUASH CASSEROLE
We grow fresh spaghetti squash in our garden, and this is about our favorite way to eat it. We usually leave the mushrooms out. My kids ask for seconds every time! It looks hard only because the ingredient list is a little long with all those herbs and seasonings. It is really quite easy to prepare.

- Slice the squash in half lengthwise and scoop out the seeds. Place squash, cut side down, in a baking dish. Add water and cover tightly with foil. Bake at 375° for 20-30 minutes or until easily pierced with a fork.
- Meanwhile, melt butter in skillet. Add the onion, garlic, mushrooms, herbs and seasonings; sauté until onion is transparent. Add the tomatoes; cook until most of the liquid has evaporated. Set aside.
- Scoop out the squash, separating strands with a fork.
- Combine squash, tomato mixture and all remaining ingredients except Parmesan cheese. Pour into a greased 2-qt. casserole. Sprinkle with Parmesan cheese.
- Bake, uncovered at 375° for 40 minutes or until heated through and top is golden brown.
SPAGHETTI SQUASH CASSEROLE (SOUTH BEACH DIET P1)
I got this from another website and everyone in my family liked it. I thought it was delicious and very filling. I use the "Mexican style" type diced tomatoes. For a different taste, use Parmesan or low fat cheddar on top.

- Pierce the squash in several places, put on a plate and microwave until tender (mine took about 20 minutes).
- Allow cool while you cook the meat and veggie mixture.
- Brown meat with garlic, onion, salt and pepper, and bell pepper.
- Drain and add Italian spice and tomatoes.
- If it seems really liquidy, cook some of the liquid off.
- Cut the squash in half and scrape out the seeds and discard them.
- Use a fork to scrape the spaghetti into strands and mix gently with sauce mix.
- Transfer to a large casserole dish that has been sprayed with cooking spray.
- Bake uncovered for 35 minutes at 350 degrees.
- Sprinkle the cheese on top and bake 10-15 minutes more.

- Beat the sugar and eggs together in a mixing bowl until light and frothy. Beat in the butter, lemon juice, and vanilla until well blended. Stir in the spaghetti squash. Pour the mixture into the prebaked pie shell. If desired, dust the top with nutmeg and cinnamon.

This is my " altered" spaghetti pie recipe being allergic to wheat I often use spaghetti squash in place of noodles and as a diabetic I make other substitutions to lower fat and calories.

- Spray 9" pie pan with non stick spray.
- Mix squash noodles with egg whites and parmesan cheese press into pan forming crust.
- Spread with yogurt.
- Cook ground beef in skillet with onions, green peppers, garlic and any of the spices and or herbs that you have chosen. When meat is brown, add tomatoes and tomato sauce.
- Add meat mixture to noodle crust and bake at 350 degrees for 20 minutes.

- Preheat oven to 350°F.
- Cut squash in half lengthwise.
- Remove and discard seeds.
- Place squash, cut side down, in greased baking pan.
- Bake 45 minutes to 1 hour or until just tender.
- Using fork, remove spaghetti-like strands from hot squash and place strands in large bowl.
- Add tomatoes with juice, beans, 1/2 cup cheese, cilantro, cumin, garlic salt and pepper; toss well.

- Set oven 350.
- With two forks, scoop squash from shell and set aside (you want approximately 3 cups).
- In large mixing bowl combine eggs, sugar, butter, lemon juice and vanilla.
- Whisk well.
- Stir in spaghetti squash.
- Pour into prebaked pie shell and sprinkle with nutmeg or cinnamon if desired.
- Bake 40-45 minutes until a knife inserted in the center comes out clean.
- Cool on rack.
- Serve with a dollop of whipped cream.
- Store, covered, in the refrigerator.
SQUASH PIE
A wonderful use for fall squash. If there is too much filling, surplus may be baked in custard cups set in pan of hot water. Do not bake together with the pie, because the steam from the water will make the pie soggy.

- Preheat oven to 425 degrees F (220 degrees C). In a small saucepan, cover squash cubes with water. Bring to a boil and cook until tender, about 15 minutes. Drain, cool and mash. Measure out 2 cups of mashed squash and refrigerate remaining leftover amount.
