3 tablespoons extra-virgin olive oil
1/4 cup grated carrot
1/4 cup grated onion
1/2 pound mild Italian sausage, ground
1 pound ground beef, 80/20
2 tablespoons tomato paste
3 garlic cloves, sliced
1/4 cup red wine
Salt and pepper
1 large (28 ounce) can crushed tomatoes
1/2 pound fresh pasta, such as pappardelle
3 tablespoons minced fresh basil
1/4 cup minced parsley, with some reserved for garnish
Grana Padano cheese, grated, for garnish

Steps:

  • Bring 4 quarts salted water to a boil in large pot.
  • In a large pot on high heat, add extra-virgin olive oil. Add carrot and onion and cook for 1 minute. Add both sausage and ground beef and cook until 3/4 done, about 5 minutes.
  • Add tomato paste and garlic and cook for 2 minutes. Deglaze with wine and reduce for 2 minutes. Season with salt and pepper. Stir in crushed tomatoes and reduce for 10 minutes on medium heat until slightly thickened.
  • Add pasta to water and cook for 2 to 3 minutes, stirring to prevent sticking.
  • Stir in basil, parsley, and pasta and season with salt and pepper. Add pasta cooking water, if needed, to loosen sauce to liking. Garnish with grated cheese and parsley.

I've been working on this recipe for years--tweaking and fussing, and I believe it is about ready. My family and friends love it. I also use it as meat sauce filling for lasagna.

1 lb ground beef
1 lb link Italian sausage
3 (8 ounce) cans tomato sauce
2 (8 ounce) cans tomato paste
1 (14 ounce) can diced tomatoes (drained)
1 1/2 cups onions (diced)
1 cup bell pepper (diced)
1 cup mushroom (sliced)
1 cup red wine
3 garlic cloves (minced)
2 tablespoons olive oil
1 -2 tablespoon sugar
3 teaspoons basil
1 teaspoon black pepper
2 teaspoons marjoram (dried)
2 teaspoons thyme
1 teaspoon salt
1 teaspoon paprika
2 tablespoons mozzarella cheese (grated)
2 tablespoons parmesan cheese (grated)
1 teaspoon cornstarch
1 tablespoon water

Steps:

  • Brown ground beef, season to taste with salt and pepper, drain and set aside.
  • Cut link sausage up into meatball size pieces, brown, drain, and set aside. I use Thomasville Hot. If making sauce for lasagna, remove sausage from casings and brown with the ground beef.
  • Sauté garlic, onion, and bell pepper in olive oil, just until the onions are translucent.
  • Add meat, tomato sauce, tomato paste, diced tomatoes, herbs and spices, mushrooms, sugar, and wine. I use fresh mushrooms, and a red burgandy for a deeper earthy flavor. Omit mushrooms if making sauce for lasagna.
  • Simmer on medium low for at least one hour, stirring occasionally.
  • When ready to serve, mix corn starch with water and add to sauce, along with both cheeses to thicken.
  • When cheese is incorporated, and sauce has thickened, serve over your choice of pasta or use as a meat filling for lasagna.

1/2 cup grated Parmesan or Romano
3 to 4 cloves garlic, minced
1/2 cup extra-virgin olive oil

1/2 teaspoon cracked black pepper
1 pound ground beef
1 pound ground pork
3 slices bacon, chopped
1/2 cup dried onion
1/4 cup minced garlic
1/4 cup dried fennel seeds
2 teaspoons salt
1 teaspoon oregano
1 teaspoon cracked black pepper
1 tablespoon extra-virgin olive oil
1 medium onion, diced
1 carrot, diced
3 stalks celery, diced
1 tablespoon all-purpose flour
1/4 cup white wine
3 cups store-bought tomato marinara sauce
1 cup beef or chicken stock
1 bay leaf
Salt and cracked black pepper
1 pound dry linguine or spaghetti
Salt
1/2 cup sour cream, thinned with milk or heavy cream and seasoned with salt and pepper
Grated Parmesan or Romano, for serving
Chopped fresh basil, for serving, optional

Steps:

  • For the basil pesto: Place basil leaves, grated cheese and garlic in the blender (with basil on the bottom).
  • Add half of the oil and turn the blender on to medium, then add the rest of the oil and blend until smooth.
  • Remove from blender and place in a bowl; check flavor and season with salt and pepper.
  • For the Italian sausage: In a large mixing bowl, mix the three meats together. In a smaller bowl, mix the dried onion, garlic, fennel seeds, salt, oregano and black pepper together. Sprinkle the seasonings over the meat and mix until everything is incorporated.
  • Preheat the oven to 275 degrees F.
  • Line a sheet pan with nonstick wax paper and press the meat onto it, spreading it evenly in a 1/2-inch layer. Bake for 25 to 30 minutes. Remove from the oven and let chill completely in the fridge. Crumble up the sausage.
  • For the bolognese meat sauce: Heat the olive oil in a large saucepan over medium-low heat, then add the onions, carrots and celery. Cook until the vegetables start to soften, then add 3 cups crumbled Italian sausage and cook for 1 minute. Add the flour and stir into the sausage, then cook for another couple of minutes, stirring occasionally. Add the wine to the pan and cook until evaporated. Add the marinara sauce, beef/chicken stock and bay leaf, then turn the heat to low and let simmer for 30 minutes. Give the sauce a taste and season with salt and pepper if desired.
  • For the pasta: Cook the pasta according to the package directions in salted water (do not rinse the pasta with cold water when it is finished). Drain, then return it the cooking pot and toss it with the basil pesto.
  • Place 1 cup pasta in a bowl, then top with 1/2 cup meat sauce, a tablespoon of the sour cream mix and grated Parmesan. If you wish, top with chopped fresh basil.

1/4 cup tomato paste

1 cup dry white wine
1 can (28 ounces) crushed tomatoes in puree
1 cup milk
12 ounces spaghetti
Finely grated Parmesan cheese, for serving

Steps:

  • Make sauce: In a Dutch oven (or 5-quart saucepan), heat oil over high heat. Add onions, carrots, and garlic; cook, stirring, until slightly softened, about 2 minutes. Add beef and pork; cook, breaking up meat with a spoon, until no longer pink, about 5 minutes. Stir in tomato paste; cook 1 minute. Season generously with salt and pepper.
  • Add wine and tomatoes. Bring sauce to a simmer; cook, partially covered, stirring occasionally, until thickened, about 1 hour. Add milk; simmer until completely absorbed, about 15 minutes more. Season again with salt and pepper.
  • When sauce is almost done, cook pasta in a pot of boiling salted water until al dente, according to package instructions; drain. Toss pasta with half the meat sauce; save remaining sauce for next day. Serve sprinkled with cheese.

I usually make a batch once every two or three months, and freeze it in 2-cup serving size increments (each 2-cup serving feeds 2 to 3 people, depending on how much you like sauce). Then I can defrost & enjoy yummy homemade pasta sauce at least once a week, with little to no effort involved! It's super simple to make this super tasty sauce. I pour the sauce over our pasta of choice, sprinkle a generous serving of Parmesan, Asiago & Romano cheese blend over the top, and pair it with hot, crusty Italian bread!

2 lbs ground chuck
2 large white onions
12 garlic cloves
12 cups crushed tomatoes

Steps:

  • Combine and brown sausage and ground beef in large dutch oven, or other heavy-bottomed pan. Drain and set aside.
  • Heat 2 tbsp olive oil in same dutch oven over medium high heat, and add red pepper flakes, chopped onion and garlic. Cover and cook until onions are translucent.
  • Add tomatoes, seasonings, browned meats and remainder of olive oil and mix well.
  • Bring to low boil, then lower heat and simmer for 30 to 60 minutes, stirring often.
  • You can choose to omit the red pepper, but my family prefers the extra kick! The granulated garlic can also be omitted if you don't care for a strong garlic flavor. I use the 102 oz. food service-sized cans of crushed and diced tomatoes (each can contains 24 half-cup servings). You can buy these at warehouse stores like Sam's Club, BJ's or Costco.

Steps:

  • In a large pot, set on medium heat, add the olive oil and sauté the onions, celery, carrots, and garlic until they are soft, about 10-15 minutes.
  • Add garlic and cook for an additional 2-3 minutes.
  • Add the ground beef and the sausages. Season with salt and pepper, and break up the meat with a spoon and frying until no longer pink.
  • Next, add the tomato paste, Italian seasoning, and red wine. Stir and reduce until the wine has almost completely evaporated.
  • Now add all the remaining ingredients, except the parmesan and cream. Stir to ensure everything is well mixed.
  • Simmer for 30 minutes to 3 hours. The longer the simmer, the deeper and more concentrated the flavor.
  • Stir in the parmesan and cream to the sausage bolognese.
  • Add the cooked pasta to the sauce.
  • Serve with more parmesan, if desired.
  • Enjoy!

Recipe passed on from my Italian grandfather. The ultimate comfort food. Leftovers freeze nicely! To make this recipe more authentic, you can use a mixture of ground veal, pork, and beef. You can also substitute the balsamic vinegar for 1/2 cup of red wine.
