This authentic Italian recipe was given to me by my cousin's wife, who is from Italy. It's so hearty and satisfying, everyone's eyes light up when I tell my family that we're having this for supper! -Etta Winter, Pavillion, New York

2 cans (28 ounces each) diced tomatoes, undrained
1 can (12 ounces) tomato paste
1-1/2 cups water, divided
3 tablespoons grated onion
1 tablespoon sugar
1-1/2 teaspoons dried oregano
1 bay leaf
1-1/4 teaspoons salt, divided
1 teaspoon minced garlic, divided
3/4 teaspoon pepper, divided
6 slices day-old bread, torn into pieces
2 large eggs, lightly beaten
1/2 cup grated Parmesan cheese
2 tablespoons minced fresh parsley
1 pound ground beef
Hot cooked spaghetti
Additional Parmesan cheese, optional

Steps:

  • In a Dutch oven, combine the tomatoes, tomato paste, 1 cup water, onion, sugar, oregano, bay leaf and 1/2 teaspoon each of salt, garlic and pepper. Bring to a boil. Reduce heat and simmer, uncovered, for 1-1/4 hours., Meanwhile, soak bread in remaining water. Squeeze out excess moisture. In a large bowl, combine the bread, eggs, Parmesan cheese, parsley and remaining salt, garlic and pepper. Crumble beef over mixture and mix well. Shape into thirty-six 1-1/2-in. meatballs. , Preheat oven to 400°. Place meatballs on a rack in a shallow baking pan. Bake, uncovered, until no longer pink, 20 minutes; drain. Transfer to spaghetti sauce. Simmer, uncovered, until heated through, stirring occasionally. Discard bay leaf. Serve with spaghetti; if desired, top with additional Parmesan.

1 pound lean ground beef
1 cup fresh bread crumbs
1 tablespoon dried parsley
1 tablespoon grated Parmesan cheese
¼ teaspoon ground black pepper
⅛ teaspoon garlic powder
1 egg, beaten
¾ cup chopped onion
5 cloves garlic, minced
¼ cup olive oil
2 (28 ounce) cans whole peeled tomatoes
2 teaspoons salt
1 teaspoon white sugar
1 bay leaf
1 (6 ounce) can tomato paste
¾ teaspoon dried basil
½ teaspoon ground black pepper

Steps:

  • In a large bowl, combine ground beef, bread crumbs, parsley, Parmesan, 1/4 teaspoon black pepper, garlic powder and beaten egg. Mix well and form into 12 balls. Store, covered, in refrigerator until needed.
  • In a large saucepan over medium heat, saute onion and garlic in olive oil until onion is translucent. Stir in tomatoes, salt, sugar and bay leaf. Cover, reduce heat to low, and simmer 90 minutes. Stir in tomato paste, basil, 1/2 teaspoon pepper and meatballs and simmer 30 minutes more. Serve.

1 medium onion, chopped
1 tablespoon olive oil

1 (6 ounce) can Italian-style tomato paste
2 (14 1/2 ounce) cans tomatoes seasoned with basil garlic & oregano, chopped
2 (28 ounce) cans Italian-style tomato sauce
1/8 cup red wine
1 cup fennel head, chopped (optional)
1 teaspoon fennel seed
garlic salt
pepper
salt
sugar
2 lbs ground chuck
1/2 lb Italian sausage
1 teaspoon garlic clove, minced
fennel seed
1 small onion, finely chopped
1 cup breadcrumbs
2 eggs
1 (16 ounce) box thin spaghetti

Steps:

  • Mix together ground beef, Italian sausage, 1 tsp minced garlic, a sprinkle of fennel seed, small onion, dash of garlic salt, dash of pepper, dash of salt, 1/2 tsp Italian seasoning, bread crumbs, eggs.
  • Roll into balls and bake at 350 degrees until done (about 20 minutes).
  • Sauté in 4 1/2 QT or bigger pan, medium onion, 1/2 TBL chopped garlic, chopped fennel in olive oil until onion is tender. Add 1 1/2 tsp Italian seasoning, tomato paste, chopped tomatoes, tomato sauce, red wine, 1 tsp fennel seed, dash of garlic powder, dash of salt & pepper and 1 TBL sugar.
  • Add the meatballs when they're done baking.
  • Let simmer for an hour or more. Pan will be very full. I usually use a little less tomato sauce, so it's not so full.
  • Serve over spaghetti noodles.

These are good, richly flavored meatballs, baked in the oven, till pink, and then simmered in the sauce, you can make your own sauce, buy one, or cook the one given here. I have others on the site, but this is a good all-purpose one, and excellent on spaghetti, I think. You will not use all of the it.

1/4 cup extra virgin olive oil
3 garlic cloves, sliced fine
2 teaspoons creole seasoning
6 ounces tomato paste
2 tablespoons dry red wine
1/2 cup chicken stock
1/2 cup water
28 ounces of whole tomatoes with juice, crushed by hand
1 egg
1 egg yolk
1/2 teaspoon salt
pepper
nutmeg, grated
1 pinch dry basil
1 pinch dry oregano
1 pinch dried rosemary
1 pinch dried thyme
1 pinch dried dill
1 ounce parmigiano-reggiano cheese
1 fresh baguette, split in two
2 tablespoons milk
chopped fresh parsley, to taste
1 lb ground beef, 90% lean
3 tablespoons extra virgin olive oil
garlic powder, to taste
grated parmesan cheese
1 lb good spaghetti or 1 lb other pastas
1 tablespoon butter (optional)
parmigiano-reggiano cheese, grated, for saucing
pasta water, if needed
parmigiano-reggiano cheese, for serving
chopped herbs, if desired

Steps:

  • Cook the sauce: Put the olive oil and sliced garlic into a heavy sauce pot or broad sauté pan. Turn the heat to medium-high.
  • Cook gently until the garlic becomes colored a light gold, then add the creole seasoning (do not omit this), and stir, once or twice.
  • Stir in the tomato paste, turn the heat down, and break up well with a metal whisk.
  • Add no salt, add pepper, if desired.
  • Put in the two (or three) tablespoons red wine, and reduce a little. Then add the broth, water, and tomatoes. Bring to a simmer, stirring every so often, and cook gently for 20 to 30 minutes. Remove pan from heat.
  • Make the meatballs: Put the egg, egg yolk, salt, pepper, to taste, the nutmeg and all the herbs into the bowl of a food processor. Grate in the cheese. Purée. Set aside.
  • Remove the soft white crumb from both sides of the split baguette. Measure 1/2 cup of it, save the remainder for another purpose, or discard.
  • Put into a bowl with the milk, squeeze between the fingers until it is well broken up.
  • Add to the food processor with the wet ingredients, and pulse to well combine.
  • Empty the contents of this into a bowl with the crumbled meat. Work to a paste, adding some chopped fresh parsley.
  • Form into 12 meatballs, and place evenly on a foil lined, sprayed sheet pan.
  • Bake at 400 degrees for 12-15 minutes. Remove, add to sauce, using a spatula to loosen balls, if necessary.
  • Keep oven on.
  • Bring a pot of salted water to a boil to cook pasta.
  • Combine olive oil and garlic powder to taste (1/2-1 teaspoon), brush on both sides of cut baguette.
  • Sprinkle lightly with Parmesan cheese, a pinch of salt and pepper, and chopped parsley if desired.
  • The bread needs to bake for 10 minutes, add it to the oven, on a sheet pan, to bake, when dropping the pasta.
  • Return the pan of sauce to the stove and bring to a gentle simmer, covered, simmer till done, but less than 10 minutes.
  • Drop the pasta into boiling salted water, cooking till al dente.
  • Retrieve the meatballs to a plate with tongs. Reserve a little of the pasta cooking water.
  • Drain the pasta, toss with the tablespoon of butter, if using, a handful or two of grated Parmesan cheese, and adding about 2 cups of the sauce. Thin lightly with cooking water if nessecary.
  • Cut the garlic toast into pieces. Place pasta on warm plates, topping each with three meatballs, and sprinkle each serving with more grated Parm.
  • Serve at once with garlic bread on the side, and if desired, any additional sauce.

From Tyler Florence's program, Tyler's Ultimate. This looks so good I just had to write it down so I can make it! Key points, he uses milk soaked fresh white bread. Dried breadcrumbs just don't make a nice meatball because they soak up moisture. He specifies San Marzano Plum/Italian Tomatoes for the sauce and uses a food mill to puree the tomatoes and seive the seeds out at the same time.

2 large onions
1 head garlic
3 tablespoons extra virgin olive oil
50 g fresh flat leaf parsley, approx 1 handful
2 (800 g) cans san marzano whole tomatoes
8 slices fresh white bread
1 cup whole milk
1 egg
2 tablespoons freshly grated parmesan cheese
1 1/2 lbs ground beef
1 1/2 lbs ground pork
salt
pepper
1 lb pasta
200 g fresh mozzarella cheese
fresh basil (to garnish)

Steps:

  • Preheat oven 350°F.
  • Dice onions & crush garlic by first peeling and flattening with knife and then roughly chopping. Keeping garlic on cutting board and drizzling some olive oil and a sprinkle of salt take knife and crush together to make a paste. (Oil keeps it together and the salt acts as an abrasive). Divide onions and crushed garlic between two pans with oil, one for the sauce and the other for the meatball base (and eventually to fry them in). Put both of them on moderate heat to sweat and slightly caramelize.
  • To the meatball base add a roughly chopped handful of flat leaf parsley.
  • Meanwhile (both onion mixes are still cooking) remove the crusts from the slices of bread and place in bowl with about 1 cup of milk. Put aside to allow the milk to soak into the bread.
  • Put water in large pot for cooking pasta on (bring to simmer and then salt it.).
  • Once you've put the water for the pasta on you should be able to turn the heat off the meatball base.
  • Allowing time for the meatball base to cool, put the tomatoes through a food mill and add to the onions and garlic which have sweated down and started to caramelize. This will then cook down and thicken.
  • To make the meatballs place all of the base in a bowl, (put pan back on heat with some olive oil for frying the meatballs) squeeze the soaked bread slightly and place in bowl with base along with egg, a good grating of parmesan cheese, stir and add ground meats and salt and pepper to taste. Incorporate together with hands. Shape into balls between golf ball and tennis ball in size.
  • Fry meatballs in 2 batches of about 8 (depending on pan size) to seal and caramelize them on both sides. You can place them straight from forming them into the pan, once you have made about 8 then the first one will be ready to turn.
  • Place them in an oven proof pan all together and place 1/2 the tomato sauce in with the meatballs and place torn bits of fresh mozzarella on top and place uncovered in oven for 15 minutes to finish of cooking.
  • Add salt to simmering water, cook pasta for 12 minutes, al dente and drain, add to pan with remaining tomato sauce drizzle extra virgin olive oil and a good amount of grated parmesan and stir to mix.
  • Plate up pasta with 2 meat balls and garnish with a couple of basil leaves and more grated parmesan.
  • Cooking times and yield are estimates, once I make this dish I will change them if necessary.

  • My update Note: I was leary of making this without first pre-cooking the meatballs, but this is by far the best spaghetti and meatballs I have ever made. The meatballs ended up a nice brown color, they were not over cooked and I think putting them in before browning allowed some of the meat flavor to seep into the sauce.
  • #2 Instead of using all ground beef, I opted to use a combination of ground pork and ground beef (12 oz ground beef, 4 oz ground pork) -instead of plain bread crumbs, I used pre-seasoned breadcrumbs, I increased the parmesan cheese to 4 oz. With the sauce, instead of using 2 (28 oz) cans of whole tomatoes, I used 1 (28 oz can) of whole tomatoes, and then two smaller cans (14 oz) of crushed tomatoes. After simmering the sauce, I ran half of it through the blender to make it smoother. I also added a small can of tomato sauce in addition to the tomato paste, plus for added flavour I added 1 tsp italian seasoning, 1/2 tsp basil, and 1 tsp garlic powder.

1 clove garlic minced
1/4 cup bread crumbs
3 tablespoons freshly grated Romano cheese
1/4 teaspoon ground nutmeg
1/8 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • 1. Place all of the meatball ingredients in a large bowl, and mix with your hands until well-combined. Roll into mini meatballs the size of ping-pong balls. 2. Heat the oil in a large deep skillet over medium-low heat. Add the meatballs and brown on all sides. Using a deep spoon, remove any excess oil from the skillet, then add the sauce. Bring to a boil, then reduce the heat to low. Simmer for 20 minutes, stirring occasionally. 3. While the sauce simmers, cook the spaghetti al dente according to package directions. Do not overcook. Drain well, add to the sauce, and gently toss to coat well. Leave over very low heat until ready to serve. 4. Preheat the oven to 350°F. 5. Rub the cut sides of the garlic halves on the inside of the bread bowl, then coat with butter. Sprinkle with Parmesan, patting it onto the bottom and sides of the bowl. 6. Place in the oven and bake for 3 minutes, or until the bowl is hot and the cheese is melted. Remove from the oven, fill with spaghetti and meatballs, and serve.
