SPAGHETTI-ALFREDO PASTA SAUCE
I discovered this recipe once by accident when I mixed my alfredo sauce with spaghetti sauce during lunch at school..And it turned out to be amazing and simple at the same time! (This is definitely a great recipe for beginners.) The sauce is a little sweet, creamy, and delicious all at once.

Steps:
- Follow directions on box to make pasta noodles.
- (You can use any kind of pasta noodles you want, such as shells or spirals, but I use penne because I think the sauce sticks well to the penne pasta.).
- As for the pasta sauce --
- Turn stove on to medium heat and add oil in a medium-sized pot.
- Once the oil is hot, saute the minced garlic until light brown.
- Once the garlic is light brown, pour Ragu spaghetti sauce and Classico alfredo sauce into the pot.
- Stir the sauces together to make a beautiful orange colored sauce.
- Turn heat up to medium-high until the sauce boils.
- Turn heat back down to medium and add salt and pepper to taste. (I usually do not add very much, just a few pinches of each.)
- (Optional!) Add crushed red pepper to add a spicy kick to the sauce. If you want you can add more or less, it is really up to you!
- Serve pasta noodles on plates and pour sauce over each serving. (I would not recommend mixing the pasta into the sauce until it is ready to serve because the noodles will get soggy.).

SPAGHETTI SQUASH ALFREDO
Steps:
- Slice spaghetti squash in half lengthwise. Scoop out the seeds with a spoon and clean as you would a pumpkin. Completely submerge 1 half at a time, in a large pot of boiling water and cook for about 20 minutes until the inside is just tender to a fork and pulls apart in strands. (Cook's Note: It is better to undercook if you're not sure.) Remove, drain and cool with cold water or ice bath to stop the cooking.
- Scoop out the cooked squash from its skin with a spoon as you would an avocado and discard the skin. Use a fork to fluff and separate the squash into "spaghetti"- like strands. You can also use your hands. Reserve the separated cooked squash and dip with a strainer into boiling water to reheat just before serving.
- Melt half the butter in a medium saucepan over medium-high heat. Add cream and reduce for about 2 minutes, then add garlic and cheese and whisk quickly, heating through. Stir in the rest of the butter and parsley. Place spaghetti squash in a large serving bowl, and pour Alfredo sauce over squash. Garnish with basil and tomatoes. Serve and enjoy!

- Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, stirring occasionally, about 4 minutes. Drain. Stir 2 cups of the cream and the lemon juice in a heavy large skillet to blend. Add the butter and cook over medium heat just until the butter melts, stirring occasionally, about 3 minutes. Remove from the heat. Add the pasta and toss. Add the remaining 1/2 cup of cream, and Parmesan to the cream sauce in the skillet. Add the lemon zest, nutmeg, salt, and white pepper. Toss the pasta mixture over low heat until the sauce thickens slightly, about 1 minute.

- In a medium saucepan, stir the clotted cream, butter and cornflour over a low-ish heat and bring to a low simmer. Turn off the heat and keep warm.
- Meanwhile, put the cheese and nutmeg in a small bowl and add a good grinding of black pepper, then stir everything together (don't add any salt at this stage).
- Put the pasta in another pan with 2 tsp salt, pour over some boiling water and cook following pack instructions (usually 3-4 mins). When cooked, scoop some of the cooking water into a heatproof jug or mug and drain the pasta, but not too thoroughly.
- Add the pasta to the pan with the clotted cream mixture, then sprinkle over the cheese and gently fold everything together over a low heat using a rubber spatula. When combined, splash in 3 tbsp of the cooking water. At first, the pasta will look wet and sloppy: keep stirring until the water is absorbed and the sauce is glossy. Check the seasoning before transferring to heated bowls. Sprinkle over some chives or parsley, then serve immediately.

This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

- Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
- In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
- Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

SKILLET BROCCOLI SPAGHETTI
This pasta, adapted from "I Dream of Dinner (So You Don't Have To)," by Ali Slagle (Clarkson Potter, 2022), might seem unorthodox at first. The pasta is cooked in the sauce instead of in a separate pot of boiling water? The broccoli is cooked until it's mushy enough to become sauce? Yes and yes, and for very good reasons. - Thinly slice the garlic and transfer to a large (12-inch) skillet with high sides. Cut the florets off the broccoli, keeping as much of the branch connected to the trunk as possible. Peel the trunk and cut the trunk and branches into 1/2-inch pieces. Transfer to the skillet. Roughly chop the florets so even the biggest pieces fit on a soup spoon. Leave the florets on the cutting board.
- To the skillet, add the butter and anchovies, and set over medium-high. Cook, smashing the anchovies and stirring the butter, until the garlic and broccoli are softened, 2 to 3 minutes.
- Add the spaghetti, the florets and any broccoli bits on the board, 2 teaspoons salt and the red-pepper flakes. Pour over 5 cups water. Bring to a boil over high, then cook, tossing often with tongs, until the spaghetti is al dente, 8 to 12 minutes. If the pasta is looking dry, add more water. Eat with grated Parmesan, if using.
ALFREDO PASTA CASSEROLE
I got this recipe from my mother-in-law. I believe she may have gotten it out of Southern Living magazine. It's a quick weeknight main meal for those that need dinner in a hurry, but tastes like good old fashioned comfort food. Enjoy!

- Brown ground beef with onion, drain & return to pan.
- Add red sauce to pan.
- Add water to jar and swish to get all the sauce loose & add to meat mixture.
- Add salt, pepper, garlic and bay leaf.
- Let simmer and thicken.
- Cook noodles according to pkg directions.
- Drain noodles & put back in the pot.
- Add alfredo sauce to the pot of noodles, stir gently to coat all the noodles.
- Add milk to alfredo jar and swish to loosen rest of the sauce, adding to the noodle pot.
- Spray 9 x 13 dish with cooking spray.
- Add 1/2 meat mixture to bottom of dish.
- Add 1/2 noodle mixture, then 1/2 of parmesan.
- Repeat layers ending with shredded parmesan.
- Cover and bake at 400 degrees for 40 minutes.
