This easy and flavorful Asian-inspired soba noodle salad is perfect with any veggies you have on hand and can be served cold, warm, or at room temperature.

8 ounces Japanese soba noodles
2 cups green beans (trimmed and cut in 2 in. pieces)
1 medium carrot (grated)
1/2 cup scallions (minced)
2 tablespoons black roasted sesame seeds
salt and pepper to taste
2 tablespoons lime juice
2 tablespoons soy sauce (low sodium)
1 tablespoon sugar
1 tablespoon grated ginger
1 tablespoon sesame oil
1/2 tablespoon chili paste (optional)

Steps:

  • Bring a large pot of salted water to boil and add soba noodles. Cook according to package instructions adding the green beans 2 minutes before the end of cooking time.
  • Drain noodles and green beans in a strainer and rinse with cold water to stop cooking process. (This keeps the beans bright green.)
  • In the bottom of a medium bowl, whisk together the vinaigrette: lime juice, soy sauce, sugar, ginger, sesame oil, and sambal oelek (chili paste).
  • Add the soba noodles and green beans to the bowl with the vinaigrette along with the grated carrot, scallions, and black roasted sesame seeds.
  • Toss well to coat and season with salt and pepper to taste before serving.

State Bird Provisions on Fillmore Street in San Francisco is the brainchild of a wife-and-husband team of native Californians, Nicole Krasinski and Stuart Brioza. At the restaurant, food is brought out on carts, as it is in dim-sum parlors. Although the concept is familiar to everyone at this point, these are laden not with the mostly brown and steamed food common to dim-sum places but with gorgeous, far-out, inventively served creations. Many of their dishes were too complicated for me to deal with. This dish, though, is representative of the restaurant's food, highly flavored, unusual, delicious.

1/2 cup lime juice
1/2 cup dark soy sauce (or usukuchi, white soy sauce, if you have it)
1 small clove garlic, minced
1/2 teaspoon minced ginger
2 3-inch pieces kombu (kelp), wiped with a damp rag
1/2 cup bonito flakes
1 cup grapeseed oil
2 ripe avocados
Coarse salt
Togarashi or black pepper
Toasted sesame seeds

Steps:

  • Combine the first 6 ingredients in a bowl; let sit as little as a half-hour and up to 2 hours; strain, pressing to extract as much liquid as possible. Whisk in the grapeseed oil to make a vinaigrette.
  • Peel, pit and slice the avocados; arrange them on 2 or 4 plates; dress to taste. Sprinkle with salt, togarashi or pepper and toasted sesame seeds, and serve.

6 ice cubes
1 medium red onion, thinly sliced on a mandoline
1 mango, peeled, pitted, and chopped
5 radishes, thinly sliced on a mandoline
1 cup loosely packed fresh cilantro leaves
Canola oil, for frying
2 tablespoons all-purpose flour
2 tablespoons cornstarch
Coarse salt and freshly ground black pepper
1 pound firm white fish fillets, such as tile, snapper, or striped bass, skin on, cut into 1/4-inch pieces
1/4 cup Soy-Lime Vinaigrette

Steps:

  • Fill a small bowl halfway with water and add ice cubes. Add onion slices and let soak for 5 minutes. Drain and pat dry. Transfer to a medium bowl with mango, radishes, and cilantro. Transfer salad mixture to refrigerator and let chill while preparing fish.
  • Fill a countertop electric fryer or deep pot 2 inches high with oil and heat to 350 degrees.
  • In a shallow dish, mix together flour and cornstarch and season with salt and pepper. Lightly dredge fish in flour mixture, shaking off excess. Working in batches, place the fish into a fryer basket or spider strainer and carefully lower into hot oil. Fry for 2 to 3 minutes, until golden brown and crisp. Transfer to a paper towel-lined plate; immediately season with salt and pepper.
  • Remove salad from refrigerator and drizzle with vinaigrette; toss to combine. Arrange on a serving platter and top with fish; serve immediately.

Salad:
8 ounces dried rice noodles (thin, vermicelli-size)
1 to 2 cups bean sprouts, optional
2 tomatoes, cut, small slices
1 carrot, sliced into matchsticks
4 green onions, finely sliced
1 small green bell pepper, thinly sliced
1 small red or orange bell pepper, thinly sliced
Optional: 1 can shrimp, cooked, drained
1 cup cilantro , fresh leaves, roughly chopped
1/2 cup fresh basil, roughly chopped
1/4 cup dry-roasted peanuts, lightly chopped

Steps:

  • Gather the ingredients.
  • In a cup or small bowl, mix together lime juice , fish sauce, soy sauce, sugar, chili sauce, minced garlic, and sesame oil until the sugar has dissolved.
  • Taste test for a sweet-sour balance, adding more sugar if too sour for your taste. Note that the dressing will taste quite strong and salty now, but will be delicious when combined with the salad.
  • Gather the ingredients.
  • Lightly boil rice noodles until al dente , about 7 minutes.
  • Drain the noodles.
  • Add the optional bean sprouts , if using, while noodles are still hot. Gently toss (the residual heat from the noodles will lightly cook the sprouts), then rinse with cold water to keep from sticking. Set aside to drain.
  • Place noodles and sprouts in a large salad bowl. Add the tomatoes, carrot, green onions, bell peppers, optional shrimp or tofu , and fresh cilantro. Toss to mix.
  • Add half of the dressing plus fresh basil and nuts, tossing well to incorporate. Taste test, adding more or all of the dressing depending on how many noodles you've made. If not salty enough, add more fish sauce or soy sauce. If not spicy enough, add more chili. If too salty, add a little more lime juice. If too sour, add more sugar.
  • Place on a serving platter or in a salad bowl and sprinkle with fresh basil, cilantro, and peanuts.
