GRILLED VEGETABLE SKEWERS WITH A HONEY SOY GLAZE

Grilled Vegetable Skewers with a Honey Soy Glaze image

Provided by Alex Guarnaschelli

Time 50m

Yield 4 to 6 servings

Number Of Ingredients 11

1/4 cup honey
1 tablespoon low-sodium soy sauce
1 tablespoon apple cider vinegar
40 pearl onions, peeled
4 scallions, cut into thin rounds
Zest and juice from 1 large lemon
Kosher salt
3 large red bell peppers, seeded, quartered and cut into bite-size pieces (about 20 pieces per pepper)
3 large zucchini, halved lengthwise and cut into 1/2-inch pieces (about 20 pieces per zucchini)
3 tablespoons extra-virgin olive oil
Sesame seeds, for garnish

Steps:

  • Make the glaze: Cook the honey in a medium saute pan over medium heat until golden brown and bubbly, 2 to 3 minutes. Remove the pan from the heat. Add the soy sauce, vinegar, pearl onions, scallions and lemon zest and juice. Return the pan to the heat, add 1/4 cup water and a pinch of salt and cook until the onions are tender and the sauce is reduced, 5 to 8 minutes. Remove the onions and let them cool. Keep the sauce warm.
  • Skewer the vegetables: Start each skewer with a pearl onion followed by alternating 3 pieces pepper with 3 pieces zucchini and finishing with another pearl onion. Arrange the skewers in a single layer on a baking sheet.
  • Cook the vegetables: Preheat the grill for cooking at medium-high heat.
  • Brush the skewers with the olive oil and sprinkle with salt. Place the skewers in a single layer on the hottest part of the grill. Cook for 2 to 3 minutes, then turn them on the other side and move them to a slightly cooler part of the grill if they are getting overdone. Cook until the vegetables are tender, an additional 3 to 5 minutes.
  • Transfer the skewers in a single layer to a large serving platter and spoon the glaze over them. Sprinkle with the sesame seeds and serve.

STICKY GINGER SOY GLAZED CHICKEN

Sticky Ginger Soy Glazed Chicken image

Sticky Ginger Soy Glazed Chicken features and simple marinade that turns into a sticky and delicious glaze.

Provided by Beth - Budget Bytes

Time 1h

Number Of Ingredients 10

1/4 cup brown sugar ($0.16)
3 Tbsp soy sauce ($0.26)
2 cloves garlic ($0.16)
1 Tbsp fresh ginger, grated ($0.05)
Freshly cracked pepper ($0.05)
1 Tbsp cooking oil ($0.04)
8 boneless, skinless chicken thighs (about 1.75 lbs total) ($7.10)
1/2 Tbsp cooking oil ($0.02)
2 green onions ($0.17)
1 tsp sesame seeds ($0.07)

Steps:

  • Mince the garlic and grate the ginger using a fine holed cheese grater or box grater. In a small bowl stir together the brown sugar, soy sauce, garlic, ginger, some freshly cracked pepper (about 15 cranks of a pepper mill), and cooking oil. Place the chicken thighs in a shallow dish or a gallon size zip lock bag. Pour the marinade over the chicken and turn to coat. Cover the chicken and marinate for at least 30 minutes or up to a day (refrigerated).
  • When ready to cook the chicken, heat a large skillet over medium flame. Once hot, add 1/2 Tbsp cooking oil and swirl to coat the bottom of the skillet. Add half of the chicken pieces and let cook until well browned on each side and cooked through. Remove the cooked chicken to a clean plate, then repeat with the second batch.
  • Once all the chicken has been removed from the skillet, pour the leftover marinade into the skillet and allow it to come up to a boil. Whisk the marinade as it boils to dissolve any browned bits from the skillet. Let it continue to boil until it reduces to a thick glaze*. Turn the heat off, add the cooked chicken back to the skillet, and dredge it in the thick glaze. Garnish with sliced green onions and sesame seeds if desired.

Yield Makes 8 first-course servings

Number Of Ingredients 11

9 ounces ground chicken breast meat
9 ounces ground chicken leg meat
2 large green onions, chopped
2 teaspoons minced peeled fresh ginger
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1/4 teaspoon sansho powder
1 teaspoon plus 2 tablespoons soy sauce
16 10-inch bamboo skewers, soaked 1 hour in water
2 tablespoons mirin
Shichimi togarashi (Japanese seven-spice seasoning)

Steps:

  • Mix first 7 ingredients and 1 teaspoon soy sauce in large bowl. Cover and refrigerate 30 minutes.
  • Brush baking sheet with water. Using wet hands, shape generous 1/4 cup chicken mixture into 4-inch-long log. Insert 2 skewers lengthwise into meat, each slightly off center. Push skewers all the way through meat, leaving 3 inches of skewers exposed on each end. Transfer to prepared baking sheet. Repeat with remaining chicken mixture and skewers to form total of 8 skewers.
  • Prepare barbecue (medium-high heat). Mix remaining 2 tablespoons soy sauce and mirin in small bowl. Space 2 bricks 4 1/2 inches apart and wide sides down on grill. Working in batches, suspend skewers across bricks, allowing skewer ends to rest on bricks (meat will not touch grill). Cook until golden, turning occasionally, about 8 minutes. Brush with soy sauce mixture and cook until chicken is cooked through, about 1 minute per side. Brush with more soy sauce mixture; transfer to plates. Sprinkle with shichimi togarashi.

  • Light your fire. We want a direct, high heat grilling zone to cook the chicken most of the way through and then a medium, indirect heat zone to finish them off while we glaze. If using a gas grill, light two of the burners on high and the remaining burners on low. If using a charcoal (like me this time), pile all of the coals up to one side.
  • Add the garlic and ginger and cook to soften, around 4 minutes, stirring occasionally so we don't burn. We just want to soften, not brown or burn, so watch carefully.
  • Stir in the soy sauce and allow to simmer gently for about 2 minutes and then add the honey. Gently simmer the honey for another 2 minutes to melt, stirring frequently.

  • Clean chicken wings by removing any excess fat. If using whole wings, cut at the joint so that you have 2 pieces. Also cut off the wing tip and discard.
  • Put chicken wings in a bowl and season with salt, pepper, rice wine, ginger, garlic and onion powder. Massage wings and leave for few minutes.
  • Heat vegetable or canola oil in a fryer pot or any heavy bottom pot. Oil should be at least 2 inches deep in the pot. Heat oil on high heat for about 8 minutes or until it reaches 325°F (160°C). If you don’t have a thermometer, you can also check by dropping couple crystals of sea salt or kosher salt. It should make a loud popping noise as it reaches the bottom.
  • While oil is heating, make the glaze. Heat a small sauce pot or pan over medium high heat. Add 1 tsp of sesame oil and 1 tsp of vegetable oil and sauté dried red Japones chiles and garlic slivers until slightly brown and fragrant. About 30 seconds.
