4 chicken breasts, cut into strips
2 teaspoons oregano
1 teaspoon garlic powder
1 teaspoon seasoning salt
1/2-1 teaspoon pepper
1 lemon, juice of
vegetable oil, same amount to match the lemon juice

Steps:

  • Place the chicken in a bowl and add oregano, garlic powder, seasoning salt and pepper.
  • Toss to coat.
  • Marinate in fridge for at least 30 minutes -the longer the better.
  • In the meantime, if you are going to use wooden skewers, soak them for 30 minutes. This prevents them from burning on the BBQ.
  • Squeeze the lemon and then add an equal amount of vegetable oil.
  • Skewer chicken onto wooden or metal skewers.
  • BBQ chicken skewers until done.
  • Mix the oil and lemon mixture until "creamy" and drizzle over the hot chicken - do this as soon as they come off the grill.
  • Serve and enjoy!
  • **on a side note - if you own a George Foreman, grill this recipe works very well on it!

1/4 cup lemon juice
1/4 cup olive oil
4 garlic cloves, smashed
1 tablespoon dried oregano

3/4 cup prepared tzatziki, sauce (make your own, recipe in'zaar)
6 Greek pita breads

Steps:

  • Trim and cut pork into 1 inch cubes.
  • In large bowl, whisk together lemon juice, oil, garlic, oregano, salt and pepper.
  • Add pork and stir to coat.
  • Marinate for 10 minutes (make ahead: cover and refrigerate for up to 24 hours).
  • evenly thread pork onto six 8 inch skewers; place on foil lined baking sheet.
  • Brush with marinade.
  • Broil 6 inches away from heat, turning halfway through, until just a hint of pink remains inside, about 12 minutes.
  • Spread tzatziki over each pita.
  • Remove pork from skewers and place on pitas; fold over.

1 kg top sirloin beef cut in chunks (35 oz.)
2 tsps mustard
1-2 tsps honey
juice of 1 lemon
zest of 1 lemon
1/2 tsp hot paprika
6 tbsps olive oil
salt to taste
freshly ground black and pink peppercorns (to taste)
1 tsp dried oregano
2 tsps fresh thyme
1 clove of garlic, minced
1 green bell pepper, chopped
1 red bell pepper, chopped
1 large onion, chopped
1 tbsp olive oil
salt and pepper
9-10 wooden skewers

Steps:

  • To prepare this Greek beef souvlaki recipe, cut the beef into equal sized (3 cm/1 inch) cubes and set aside.
  • Prepare the marinade for the beef kabobs. In a large bowl add all the ingredients for the marinade and the meat and blend to coat. Cover the bowl with plastic wrap and let them marinade for at least 1 hour in the fridge. Preferably leave them to marinade overnight so they soak up even more all those wonderful flavours.
  • When you are ready to cook the kabobs, prepare the vegetables. Cut the peppers and onion into 3-3.5 cm equal wide squares. Place them in a bowl, drizzle with 1 tbsp olive oil and season with salt and ground pepper.

Souvlaki is a popular Greek dish consisting of marinated meat skewers. Keep some of this seasoning mix on hand for times when you want to whip up a few skewers.

Yield Makes 1/4 cup.

2 tbsp oregano, crumbled
2 tbsp paprika
2 tsp thyme, crumbled
1 tsp ground cumin
1 tsp garlic powder
1 tsp salt
1 tsp freshly ground pepper

Steps:

  • Combine all ingredients. Store in an airtight container in a cool dry place.
  • Stir Souvlaki Seasoning Mix before using.
  • To prepare marinade, combine 1 tbsp seasoning mix, 2 tbsp fresh lemon juice and 2 tbsp extra-virgin olive oil in a heavy zip-lock plastic bag. Add cubed meat (pork, lamb or chicken) and squeeze bag to coat meat with marinade. Seal bag and place on a plate. Refrigerate, turning bag occasionally, for up to 24 hours.
  • Soak bamboo skewers in hot water for 30 minutes. Meanwhile, preheat natural gas barbecue on medium heat for 10 - 15 minutes.
  • Remove meat from marinade; discard marinade. Thread meat onto soaked skewers.

2 shallots, minced
2 cloves garlic, minced
1 jalapeño pepper, seeded and minced
2 tablespoons chopped fresh oregano, plus more for topping
Juice of 1 lemon
1/2 cup extra-virgin olive oil
Kosher salt
2 pounds boneless leg of lamb, trimmed and cut into 1 1/2- to 2-inch chunks
Freshly ground pepper
1 cup plain Greek yogurt

Steps:

  • Combine the shallots, garlic, jalapeño, oregano, lemon juice, olive oil and a pinch of salt in a gallon-size zip-top bag. Add the lamb, turning to coat, and refrigerate at least 3 hours or preferably overnight.
  • Heat a grill or grill pan to medium high. (If using wooden skewers, soak 12 to 16 of them in water for at least 20 minutes.)
  • Remove the lamb from the marinade and thread 2 pieces onto each skewer. Season with salt and pepper. Grill on the hottest part of the grill for 2 minutes per side, then move to a cooler part of the grill. (If using a grill pan, reduce the heat to medium.) Cover and cook until the meat reaches an internal temperature of 145 degrees F, 4 to 5 minutes. Top the souvlaki with oregano and serve with a dollop of Greek yogurt.

1/4 cup fresh lemon juice
3 tablespoons olive oil
1/2 teaspoon salt

2 teaspoons minced garlic
1/4 cup grated onion
2 teaspoons olive oil
1 large white onion, thinly sliced
1 teaspoon Essence, recipe follows
Pita bread rounds
Tzatziki, recipe follows
1 medium cucumber, peeled, sliced in half and seeded, and finely chopped
1/8 teaspoon plus 1/4 teaspoon salt
1 cup plain yogurt
1 tablespoon olive oil
1 teaspoon fresh lemon juice or white wine vinegar
1 teaspoon minced fresh dill or oregano leaves
1 teaspoon minced garlic
1/2 teaspoon Essence, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Place the meat in a non-reactive bowl. Mix together the lemon juice, oil, salt, pepper, 1 tablespoon oregano, garlic, and grated onion, and pour over the meat. Cover and chill at least 2 hours and up to overnight. Thread the meat onto metal or bamboo skewers.
  • Heat the oil on a griddle or in a large skillet over high heat. Add the onions, remaining teaspoon oregano and Essence to the griddle and cook light brown, about 6 minutes, stirring occasionally. Remove from the pan.
  • Preheat a grill. Grill the skewers, turning occasionally, until brown on all sides. Remove from the grill. Quickly heat the pita bread on the grill until just warmed through and pliant. Holding a pita in the left hand, and the skewer in the right hand, pull the contents from the skewer into the pita bread. Repeat with the remaining skewers. Divide the cooked onions among the pita, and top with Tzatziki (cucumber sauce). Serve immediately.
  • Put the cucumber in a strainer set over a bowl. Sprinkle with 1/8 teaspoon salt and drain for 1 hour. Put the yogurt in another strainer set over a bowl and drain for 1 hour. Combine the cucumber and yogurt in a bowl with the remaining ingredients and stir well. Cover and chill for at least 1 hour before serving.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

1 kg pork shoulder, boneless
1 medium onion, grated
3 cloves of garlic, minced
1 tsp salt, heaping
1 tsp black pepper, heaping
1/4 cup olive (or canola) oil
1 tsp dried Greek oregano, heaping

Steps:

  • Cut off any excess fat or membranes from the meat, then cut it into equal sized cubes.
  • Toss the meat in a large bowl together with all the marinade ingredients, then refrigerate for a minimum of five hours (best overnight). Also, place the wooden skewers in a shallow container filled with water overnight.
  • The next day, take the meat out of the refrigerator and first wait until it comes to room temperature and then skewer it.
  • Grill the souvlaki over medium-high heat, about 3-4 minutes per side. Keep warm until ready to serve. Sprinkle the grilled souvlaki with lemon juice, salt, and Greek oregano.
  • Serve just with bread, or inside a pita with tzatziki sauce and toppings of your choice.
