Easiest Ever Baked Stuffed Apples image

4 McIntosh apples
1/2 lemon
4 tablespoons butter, softened
3/4 cup whole-grain cereal with dried fruit (recommended: Mueslix)
2 tablespoons dark brown sugar
1/4 cup chopped walnuts
1 pint vanilla ice cream

Steps:

  • Heat the oven to 425 degrees F.
  • Trim the tops and scoop out the center and the seeds of each apple and rub the edges of the trimmed fruit with the lemon. In a medium bowl, combine the butter, cereal, sugar, and walnuts. Fill the apples with the cereal mixture. Set the apples upright in muffin tins and bake until tender and bubbly, about 20 minutes. Transfer to serving dishes, top with ice cream and serve hot.

2 small Braeburn or Gala apples
1/4 cup grated Parmesan cheese
3 tablespoons quick-cooking oats
2 tablespoons all-purpose flour
2 tablespoons brown sugar
Dash ground nutmeg
1 tablespoon butter, melted
Honey, optional

Steps:

  • Preheat oven to 350°. Cut a 1/4-in. slice off top of each apple. Core apples, leaving bottoms intact; place in a microwave-safe 8-in. square baking dish. Microwave, covered, 3-4 minutes or until tender., In a small bowl, mix cheese, oats, flour, brown sugar and nutmeg; stir in melted butter until crumbly. Carefully fill apples with oat mixture. Bake, uncovered, 12-15 minutes or until topping is golden brown. If desired, drizzle with honey.

4 cups apples, peeled & sliced (I used Gala apples)
3/4 cup almonds (roasted, unsalted)
1 cup raisins
2 T. coconut oil (+1 T. for greasing dish)
3/4 tsp. cinnamon
1/4 tsp. ground cloves
1/4 tsp. nutmeg dash of salt

Steps:

  • Preheat your oven to 400. Grease an 8x8 baking dish (or a 1.5 or 2 quart baking dish) with 1 tablespoon of coconut oil. Place the sliced apples in the dish, and add the remaining ingredients to your food processor. Process the mixture until it resembles the texture of coarse sand. Evenly distribute the almond and raisin mixture over the fruit. Cover and bake for 25 minutes, then bake uncovered for another 10 -15 minutes, or until fruit is bubbling and apples are soft. Your almond and raisin topping should darken. Serve and enjoy!

This recipe was given to me by caterer Cyndy Totten who attends our church. This is a delicious and different way to make apple crisp. This method makes it possible to be a dish for one or more persons. I am posting the recipe as if you were making it for only one person. Increase the number of servings by simply increasing the number of apples and increasing the amount of the other ingredients by the number of servings you are making.

1 large baking apple
2 tablespoons rolled oats (you could substitute 1 T chopped nuts for 1 T of rolled oats for more crunch)
1 tablespoon firmly packed brown sugar, plus
1 teaspoon firmly packed brown sugar
1 1/2 teaspoons butter
1 1/2 teaspoons flour
1/4 cup cranberry-apple juice or 1/4 cup apple cider (you may use any flavor apple juice)
2 tablespoons caramel ice cream topping

Steps:

  • Preheat oven to 350 degrees.
  • Put the oats, brown sugar, flour and butter into a small bowl.
  • Stir well until well blended.
  • With a sharp knife or a melon baller,cut the core and seeds out of the center of apple, keeping the apple whole.
  • Place the apple in a small baking dish.
  • Spoon the oat mix into the center core hole and mold the remaining oat mix on the top the sliced area.
  • Pour the juice over the apple.
  • Bake, until the apple is tender-- about 50-60 minutes.
  • Baste with the juice a few times during baking.
  • Place the warm apple in a dessert dish.
  • Spoon the juice from the pan over the apple.
  • Heat the carmel topping for a few seconds in a microwave.
  • Drizzle the caramel topping over the apple.
  • Enjoy.

  • Halve and core 2 crisp apples; trim the uncut sides to sit at. Scoop out and chop most of the flesh. Combine with 1/2 cup each shredded cheddar and crumbled cornbread, 1/4 cup each chopped celery and scallions, 2 tablespoons olive oil and 1 teaspoon chopped thyme; season with salt and pepper. Fill the apples with the stuffing; arrange in a baking dish. Pour in 1/2 cup apple cider. Cover with foil and bake at 425 degrees F until tender, 20 to 25 minutes.   • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut the stem out of the apple and hollow out the center until it is about 1 1/2 inches wide without going through the bottom. In a small cup, stir together the cinnamon, nutmeg and sugar. Set aside half of this mixture, and mix the rest with the cream cheese and dried cranberries.
  • Sprinkle some of the reserved cinnamon sugar into the apple's cavity. Fill with the cream cheese mixture, and sprinkle the remaining cinnamon sugar on the top. Place the apple in a small baking dish.

These apples are wrapped in crispy, buttery layers of phyllo dough and are stuffed as well as topped with a sweet mixture of oats and spices, which resemble "fruit crisp" topping. This is a relatively easy to assemble dessert with an eye-appealing presentation.

4 apples, medium, peeled and cored (Macintosh)
1 cup oats, rolled, old fashioned
1 cup brown sugar, loosely packed
1 teaspoon cinnamon, ground
1/4 teaspoon nutmeg, ground
1/4 teaspoon clove, ground
1/2 cup butter, melted
8 ounces phyllo pastry sheets, thawed (half of a box, found in the frozen desserts section of your grocery store)

Steps:

  • Preheat oven to 350°F.
  • In a medium mixing bowl, combine oats, brown sugar, cinnamon, nutmeg and cloves. Stir in 1/4 cup butter, tossing with a fork until crumbly texture achieved.
  • Place one phyllo leaf on a dry kitchen towel and lightly brush with butter, using remaining 1/4 cup of melted butter. Place a second leaf on top of first phyllo leaf and brush with butter. Repeat until four leaves have been used.
  • Place peeled and cored (whole) apple in center of layered phyllo. Gently pick up sides of phyllo and gather evenly around apple. Do not enclose apple. Leave the top of the apple exposed and the phyllo edges open. Brush butter lightly around exterior of apple. Repeat process with remaining three apples.
  • Pack oat stuffing mixture into cored center of each apple. Mound remaining stuffing atop exposed portion of apple.
  • Place each wrapped and stuffed apple in a baking dish, leaving space between so they do not touch.
  • Bake for 40-45 minutes or until phyllo and topping are golden brown and crisp, and apple is tender.
  • Serve warm.
