This ultimate layered nacho recipe is made with two types of gooey cheese. Tortilla chips topped with refried beans, chili, onion, pepper jack and cheddar is a party and game day favorite.

1 can refried beans
1 large bag white corn tortilla chips
1 medium chopped onion
1 can or homemade chili
1 cup shredded pepper Jack cheese
1 cup shredded cheddar cheese
1 cup sour cream
1 cup chopped green onion
1 diced tomato
1 sliced jalapeño

Steps:

  • Have all ingredients prepared and ready to assemble nachos.
  • Pre-heat oven to 350 °F.
  • In a small saucepan on low, heat refried beans until they are loose enough to spoon onto nachos. On a large oven proof platter, spread out tortilla chips and quickly put a teaspoon of hot refried beans on each chip. Working quickly, sprinkle with onions, Jack cheese, and jalapeño slices. Spoon on chili and top that with Cheddar cheese. Repeat this layering process until ingredients are used up. Place chips in the oven at 350 °F until cheese has melted. Remove from oven and place on a trivet or heatproof surface. Top nachos with sour cream, green onions, diced tomato and jalapeño slices and serve hot.

  • How to Make Classic Potato Skins:
  • Pierce 4 large russet potatoes with a fork. Bake directly on the oven rack at 350 degrees until tender, about 1 hour. Let cool, then quarter lengthwise and scoop out the flesh, leaving a 1/4-inch shell. Brush both sides with melted butter and season with salt and pepper. Bake, skin-side up, at 450 degrees until crisp, about 15 minutes. Add your favorite team toppings. (For cheesy skins, flip the baked shells over before topping, sprinkle with 1 cup grated cheddar cheese and bake an extra 5 minutes.)

Nachos are among the most ubiquitous of America's pastime foods. At ballgames, carnivals or bowling alleys you can expect a pile of limp tortilla chips, drowned in warm yellow cheese product. But nachos should, and can, be better than this. Try them showered in good shredded cheese and accompanied by a fragrant meat sauce, the fire of jalapeños, the chill and silkiness of sour cream, the tart excellence of a good tomato, with shredded lettuce and thin-sliced radishes. Here is avocado; there, the awesome funk of chopped cilantro. Want some bacon on there as well, or a slash of hot sauce? Go to! Some will add beans. Others black olives, chopped raw onion. Please do. But take care to layer well. Layering is the key to loaded nacho perfection.

1/4 pound slab or thick-cut bacon, diced
1 medium yellow onion, peeled and diced
1 1/2 pounds ground beef, like chuck or sirloin
3 cloves garlic, peeled and minced
2 tablespoons ancho chile powder
1 tablespoon ground cumin
2 teaspoons kosher salt
2 teaspoons smoked paprika, hot or mild
1 1/2 teaspoons black pepper
1 teaspoon light brown sugar
1 teaspoon cornstarch
1/2 teaspoon red pepper flakes
1/2 to 2/3 cup chicken stock, homemade or low-sodium, or water
1 12- to-16-ounce bag corn tortilla chips
1/2 head iceberg or romaine lettuce, shredded
1/2 cup pickled jalapeños
2 avocados, pitted and sliced
2 cups shredded Monterey Jack cheese
1 1/2 cups shredded sharp Cheddar cheese
1/2 cup crumbled Cotija cheese
3 radishes, cleaned and thinly sliced
2 cups cherry tomatoes, sliced into quarters
1/2 cup sour cream
1/2 cup roughly chopped cilantro leaves
2 limes, cut into eighths, for garnish
Hot sauce, if desired

Steps:

  • Heat oven to 400 degrees. Put a large sauté pan with high sides over medium-high heat and add the bacon. Cook, stirring occasionally, until the fat has rendered and the pieces are crisp, about 5 to 7 minutes, then remove the bacon and set aside.
  • Add the onions to the bacon fat and sauté, stirring occasionally, until they have softened and started to go brown around the edges, about 3 to 5 minutes. Add the ground beef and garlic and cook, breaking up the meat with a spoon, until browned, about 5 minutes. Add the chile powder, cumin, salt, paprika, black pepper, sugar, cornstarch and red pepper flakes and stir to combine and toast the spices. Add enough chicken stock or water to loosen the mixture, and allow it to simmer, uncovered, until the sauce is slightly thickened, about 5 to 6 minutes. (Add a little more stock or water if mixture is too thick.)
  • Assemble the nachos on a half sheet pan: Put a layer of tortilla chips on the pan and cover with about 1/3 of the meat sauce, then add about 1/3 of the lettuce, 1/3 of the jalapeños, some avocado slices and a handful of the Monterey Jack and Cheddar cheeses. Top with more tortilla chips, more meat sauce, more lettuce, jalapeños, avocado and cheese, then make a final layer of chips, meat, bacon, jalapeños, avocado and cheese. Top with crumbled Cotija cheese and slide the sheet pan into the oven to bake until the cheeses have melted through, about 10 to 12 minutes.
  • Top cooked nachos with the sliced radishes and tomatoes, and dot the tray with teaspoons of sour cream. Scatter the cilantro over the top and serve, accompanied by limes and hot sauce.

I'm on a Jetblue flight and watching the Food Network channel and on comes Paula Deen (I've never seen one of her shows) doing a ball game episode. This recipe made me crave Mexican food so we went out for Mexican that night! Have not tried this recipe yet but wanted to post since I was able to find it on foodnetwork.com. Cooking and prep times are estimated.

1 jalapeno, sliced crosswise, plus extra for garnish
1 (15 ounce) can chili (or your favorite chili recipe)
1 cup cheddar cheese, shredded
1 cup sour cream
1 cup green onion, chopped
1 tomatoes, diced

Steps:

  • Have all the prepped ingredients easily accessible to assemble nachos.
  • Preheat oven to 350.
  • In a small saucepan over low heat, cook refried beans until they are loose enough to spoon onto nachos.
  • On a large ovenproof platter, spread out a layer of tortilla chips and quickly put a teaspoon of hot refried beans on each chip.

This is a Paula Deen recipe. I made these for a fight night get together we were having and my guests loved them. In fact, I wanted more and they were all gone! Hope you enjoy this easy and delish recipe. Prep time includes cooking time.

4 green onions, chopped
2 ripe tomatoes, diced
2 jalapenos, sliced
tortilla chips
1 (16 ounce) can refried beans
1 (16 ounce) package monterey jack cheese
1 (16 ounce) package cheddar cheese
1 (8 ounce) container sour cream
1 (12 ounce) can prepared chili with beans

Steps:

  • Heat oven to 350.
  • Lay chips on oven safe platter. You will be layering this so split them.
  • Warm beans and chili on stove or in microwave. Stir beans until smooth.
  • Spread beans over tortillas. Top with onion, cheese, jalepenos, chili and cheddar cheese. Repeat by layering tortilla chips and toppings until gone.
  • Place in oven and bake until cheese is melted.
  • Dollop with sour cream. Add tomatoes and green onions on top.

2 boneless whole pork loin roasts (3-1/2 pounds each)
1 cup unsweetened apple juice
6 garlic cloves, minced
1 teaspoon salt
1 teaspoon liquid smoke, optional
2-1/2 cups barbecue sauce
1/3 cup packed brown sugar
2 tablespoons honey
1 package (16 ounces) tortilla chips
1-1/2 cups frozen corn
1 can (15 ounces) black beans, rinsed and drained
1 medium tomato, seeded and chopped
1 medium red onion, chopped
1/3 cup minced fresh cilantro
1 jalapeno pepper, seeded and chopped
2 teaspoons lime juice
1 package (16 ounces) process cheese (Velveeta), cubed
1/4 cup 2% milk

Steps:

  • Cut each roast in half; place in two 5-qt. slow cookers. Combine the apple juice, garlic, salt and, if desired, liquid smoke; pour over meat. Cover and cook on low 7-8 hours or until tender. , Preheat oven to 375°. Shred pork with 2 forks; place in a very large bowl. Stir in barbecue sauce, brown sugar and honey. 1 red pepper, thinly sliced
1 green pepper, thinly sliced

2 cups colby-monterey jack cheese
1/2 tablespoon southwest seasoning, spice
12 ounces corn tortilla chips
iceberg lettuce, shredded
15 grape tomatoes, cut in half, lengthwise
2 tablespoons butter
2 tablespoons flour
2 cups half-and-half cream
1 cup colby-monterey jack cheese
1 (10 ounce) can Rotel Tomatoes, drained (mild or hot)
1/2 teaspoon salt
1/4 teaspoon pepper (ground ancho or chipotle pepper tastes great)
1/2 avocado, mashed
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup buttermilk
1 tablespoon dried dill
1 bunch chives, chopped, to taste (can sub thinly sliced green onions)
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon garlic
1/4 teaspoon pepper (try chipotle powder or ancho powder)

Steps:

  • Preheat oven to 350 °F.
  • Season steak and sweet peppers with salt and pepper. Place peppers on a lined baking sheet and put seasoned steak on top. Bake for 25-30.
  • Let rest for 10 minutes. Shred steak with a fork and put in a medium bowl along with peppers.
  • Add cheese and southwest seasoning. Toss together.
  • On a lined large baking sheet, line pan with tortilla chips and top with half of the cooked steak/sweet pepper mixture, repeat. Set aside.
  • Directions for Salad:.
  • Combine lettuce and sliced tomatoes in a bowl. Set aside.
  • Directions for Cheese Sauce:.
  • Before you start sauce, place nachos in oven for 10 minutes while you make your sauce.
  • Add butter and flour to sauce pan on medium-high heat and make blonde roux. Gradually add half & half, constantly whisking. Sauce will thicken. Add cheese and seasoning. Mix together.
  • Add drained Rotel. Keep on low heat until ready to put on nachos.
  • Directions for Dressing:.
  • Mix 1st five ingredients until smooth with a hand mixer.
  • Add remaining ingredients and mix with a spoon or small hand whisk.
  • Building the Nachos:.
  • Ladle cheese sauce over nachos and top with salad.
  • Dress with avocado ranch dressing.
  • Serve immediately!
