Easy Marinated Vegetables image

Serve these marinated vegetables as a salad or as an appetizer. Optional add ins include: pitted Greek olives, cubes of feta cheese, and thin slices of Maui or Walla Walla onion.

1 ½ cups broccoli florets
1 ½ cups cauliflower florets
1 green bell pepper, cut into 1 inch pieces
1 cucumber - peeled, seeded and chopped
1 carrot, coarsely chopped
¼ cup Italian-style salad dressing

Steps:

  • Bring a large pot of salted water to boil. Place the broccoli and cauliflower florets into the boiling water for one minute. Drain and rinse florets.
  • Combine broccoli, cauliflower, bell pepper, cucumber, carrot and Italian salad dressing in a medium size mixing bowl. Cover the bowl and refrigerate the vegetables for one hour.

1 large head cauliflower (about 2 pounds), cut into small florets
1/4 cup white-wine vinegar
1/4 cup finely chopped red onion
1 teaspoon Dijon mustard
1/2 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
2 tablespoons brine-packed capers, drained and rinsed
2 tablespoons chopped fresh parsley

Steps:

  • Bring a medium pot of salted water to a boil. Working in batches, blanch cauliflower until just tender, about 2 minutes. Drain; transfer to a bowl.
  • Whisk together vinegar, onion, and mustard in a small bowl. Pour in oil in a slow, steady stream, whisking constantly until emulsified. Season with salt and pepper. Drizzle vinaigrette over warm cauliflower, and add capers and parsley. Stir to combine.
  • Cover, and refrigerate overnight or up to 1 day. Serve chilled or at room temperature.

Steps:

  • In a small saucepan, bring vinegar, oil and water just to a boil., Meanwhile, place next 5 ingredients in a large heatproof bowl. Add hot oil mixture; toss to coat. Refrigerate, covered, at least 6 hours or overnight, stirring occasionally. , Add carrot, onion, parsley and basil; toss to coat. Refrigerate, covered, 2 hours longer. Discard bay leaf. Serve with a slotted spoon.

2 whole heads cauliflower, greens and stems trimmed
Kosher salt and freshly ground black pepper
Hot Hungarian paprika, for dusting (optional)
1/2 cup mayonnaise
1/4 cup Thai chile sauce
1 tablespoon honey
1 tablespoon sriracha
Kosher salt and freshly ground black pepper
2 scallions, chopped
Lemon wedges, for spritzing

Steps:

  • For the cauliflower: Preheat the oven or a grill for cooking over indirect heat to 400 degrees F.
  • Lightly brush the oil on the cauliflower. (If roasting, cut into florets and place on a baking sheet lined with parchment paper or nonstick aluminum foil.) Sprinkle with salt, a few grinds of pepper and paprika, if using.
  • Place the cauliflower stem-side down over the indirect heat and grill until golden and tender when pierced with a fork or the tip of a knife, about 40 minutes. (If roasting, roast until the cauliflower is golden in parts, 20 to 25 minutes.)
  • Meanwhile, make the sauce: In a medium bowl, add the mayonnaise, chile sauce, honey and sriracha and whisk until smooth. Taste and season with salt and a few grinds of pepper.
  • Cut the cauliflower unto large florets and add to a large bowl. Drizzle the sauce over the cauliflower and toss to coat evenly. Transfer to a platter. Sprinkle with the scallions, spritz with lemon wedges, and serve hot, warm or chilled.

1 head cauliflower, broken in flowerettes
1 green pepper
1 red pepper
3 -4 stalks celery
1 onion, finely diced
1/2 cup white wine vinegar
2 tablespoons poppy seeds
1 cup white sugar
2 teaspoons mustard powder
1/2 teaspoon salt
1 1/2 cups olive oil

Steps:

  • Blanch broccoli and cauliflower until just tender.
  • Drain and rinse with cold water.
  • In a large bowl combine cauliflower, broccoli, peppers, celery and onion.
  • In a saucepan, place the vinegar, poppy seeds, sugar, mustard, salt and oil.
  • Boil until the sugar has disslved.

1 bunch broccoli, cut into small flowerets

1 (16 ounce) can water chestnuts, drained and sliced
1 (16 ounce) can black olives, drained and chopped
1 (10 ounce) jar green olives, drained and chopped
1 (16 ounce) jar zesty Italian dressing
1 (2/3 ounce) package Good Seasonings Italian salad dressing mix (mixed with oil and vinegar)
1 pint cherry tomatoes

Steps:

  • Chop all of the vegetables and place in large bowl. Mix dry dressing mix with oil and vinegar as directions suggest, add prepared Zesty dressing and pour over the vegetables.

While this sandwich is not one of our top sellers, it has its fervent followers, like those of the anchovy sandwich (see page 68). Taking our inspiration from the traditional New Orleans muffaletta-the sandwich of salty meats and tangy olive salad on a thick round roll-we often pair a fresh smoked salami similar to a sopressata with a drier saucisson sec. But you can customize your sandwich for your palate with your own favorites: prosciutto, mortadella, pancetta-any salumi will stand up nicely to the myriad flavors that burst from the marinated cauliflower salad. Don't let the name cauliflower dissuade you-this is not the boiled bane of your childhood. Rather, it's a textured mix of tastes in a bold marinade, with raisins and caraway seeds.

Yield makes 4 sandwiches

1 medium head cauliflower
1/4 red onion, finely chopped
1 teaspoon finely chopped garlic
1/2 cup small golden raisins
3 tablespoons capers, drained
Pinch of red pepper flakes
2 teaspoons caraway seeds, toasted
1/2 cup flat-leaf parsley, finely chopped
4 teaspoons chopped fresh oregano, or 2 teaspoons dried Sicilian oregano
1 cup extra-virgin olive oil
1/3 cup white wine vinegar
2 teaspoons kosher salt
Freshly ground black pepper
4 soft ciabatta rolls
1/2 pound salami or saucisson sec, thinly sliced
2 cups loosely packed bitter greens, such as dandelions, beet greens, or mustard greens
4 teaspoons Dijon mustard

Steps:

  • Remove any green leaves from the cauliflower while keeping the stem. Quarter, and using a sharp knife or the slicing attachment on a food processor, slice the cauliflower as thin as possible. (Don't worry if some of the cauliflower crumbles into small pieces.) In a bowl, combine the cauliflower with all the marinade ingredients and mix well. Set aside to marinate for 6 hours or more. Make sure to stir the mixture from the bottom before using.
  • Slice the ciabatta rolls in half, with a thicker bottom half (see Note). Place the marinated cauliflower on the bottom slices and top with the salami and the bitter greens. Spread the mustard evenly on the top slices and close the sandwiches. Cut into halves and serve.
  • Cut the bottom of the bread a bit thicker than usual, and then make the salad your bottom layer, so that the marinade soaks into the bread.

1 head cauliflower
5 celery ribs
1/4 cup lemon juice
1/2 cup white wine vinegar
5 cups water
1/4 cup fresh oregano
1/4 cup fresh basil
1 teaspoon salt
1 cup olive oil
salt and pepper
1/2 lb black olives (pitted)

Steps:

  • Clean and quarter the mushrooms. Cut cauliflower into bite size florets. Trim celery into 3 inch lengths.
  • In a large pot combine lemon juice, vinegar, water, oregano, basil and salt.
  • Simmer for 5 minutes.
  • Add mushrooms and cook 5 minutes.
  • With a slotted spoon transfer mushrooms to a bowl. Add cauliflower to the pot and simmer for 5 minutes.
  • With a slotted spoon transfer cauliflower to the bowl with the mushrooms.
  • Raise heat to high and boil until reduced to 1 1/2 cups.
  • Remove from heat strain and whisk in the olive oil to blend well.
  • Add salt and pepper to taste. Pour dressing over vegetables in bowl. Add celery and olives, cover and refrigerate.

This is from Kentaro Kobayashi's book Bento Love. I make this for my lunchbox quite often, as it's so easy to throw together. The combination of the curry and rice vinegar makes a very flavorful marinade, which doesn't go bland being served at room temp, which is a bonus when you don't have the facilities to heat up your lunch! Any curry powder will do in this recipe, if you like the hot stuff, go for it! Note- this is meant to be a side dish. If you want to enjoy this as the main (or only) item in your lunch, increase the quantities to suit your appetite.
