CILANTRO-LIME PORK CHOPS

6 tablespoons lime juice
1 tablespoon grated lime zest
1-1/2 teaspoons ground cumin
1-1/2 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon garlic powder
6 bone-in pork chops (1 inch thick)
2 tablespoons olive oil
1-1/2 teaspoons cornstarch
1 cup chicken broth
1/2 cup orange juice
2 tablespoons honey
1/4 cup minced fresh cilantro

Steps:

  • In a small bowl, combine the first six ingredients. Set aside 1 tablespoon marinade; cover and refrigerate in a small bowl. Pour remaining marinade into a large bowl. Add pork chops; turn to coat. Cover and refrigerate for 20 minutes., Drain and discard marinade from pork. In a large skillet over medium heat, cook chops in oil for 8-10 minutes on each side or until a thermometer reads 160°. Remove and keep warm. , In a small bowl, combine cornstarch and reserved marinade until smooth. Stir in the broth, orange juice and honey; add to skillet. Bring to a boil; cook and stir for 1-2 minutes or just until thickened. Stir in cilantro. Add pork chops; heat through.

Southwestern Pork Stir Fry with Creamy Cilantro Polenta image

Number Of Ingredients 19

3 to 4 cups whole milk
3/4 cup whole grain polenta (not instant)
1 tablespoon salted butter
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped fresh cilantro
2 tablespoons olive oil
27.2 ounce Smithfield Mesquite Pork Loin Filet, trimmed and cut into 1-inch pieces
1 large zucchini, washed, trimmed and diced
1 small red bell pepper, seeded and cut into 1/4-inch strips
1 small yellow bell pepper, seeded and cut into 1/4-inch strips
1/2 small red onion, thinly sliced
1 cup fresh or frozen corn kernels
1 medium jalapeño pepper, seeded and thinly sliced
1 medium clove of garlic, minced
1 1/2 tablespoons freshly squeezed lime juice
1 teaspoon chili powder
salt and freshly ground black pepper to taste
1 teaspoon cornstarch dissolved in 1/2 cup chicken broth

Steps:

  • Prepare the Polenta: In a medium saucepan, bring 1 cup of milk to a boil. Whisk in the polenta and reduce the heat to low. Simmer for 3 to 5 minutes, stirring often until thickened. Add another 1 cup of the milk and stir. Continue to stir and simmer for 5 to 6 more minutes. Stir in another 1 cup of milk and continue to simmer, still stirring often, until the polenta is thick and creamy, 5 to 6 more minutes. Stir in the butter, salt, pepper and cilantro. Set aside while you make the stir fry. Prepare the stir fry: Heat the olive oil in a large skillet until hot. Add the pork to the skillet. Cook for 2 minutes, stirring often. Add all of the vegetables to the skillet. Sprinkle with lime juice, chili powder, and a sprinkle of salt and pepper. Cook for 3 to 4 minutes longer, stirring often, until the vegetables begin to soften and the pork cooks through. Add the broth to the skillet and cook just until the liquid comes to a boil and begins to thicken. Serve over polenta. HINT: If the polenta thickens too much upon standing, just add in some additional milk, heat and stir. It should easily re-gain its creamy consistency again.

1-1/2 cups chopped fresh cilantro
1/2 cup packed brown sugar
1/2 cup reduced-sodium soy sauce
3 tablespoons honey
6 garlic cloves, minced
2 teaspoons ground cumin
2 teaspoons ground mustard
1 pork tenderloin (1 to 1-1/4 pounds)

Steps:

  • In a large resealable plastic bag, combine the first seven ingredients; add pork. Seal bag and turn to coat; refrigerate overnight. , Drain and discard marinade. Prepare grill for indirect heat. Grill, covered, over indirect medium-hot heat, for 20-27 minutes or until a thermometer reads 145°. Let stand for 5 minutes before slicing.

I got this recipe from cdkitchen.com. I have not made it yet but I plan to soon. I tend to take recipes and turn them into "dump" recipes (put it all in a ziplock bag and freeze it for later use) and it looks like this one may also work!

4 pork chops
salt and pepper, to taste
1 tablespoon vegetable oil
1 bunch fresh cilantro, coarsely chopped and divided
1/2 red onion, chopped
2 teaspoons ground cumin, divided
2 teaspoons chili powder, divided
2 medium tomatoes, coarsely chopped

Steps:

  • Heat vegetable oil in large non-stick skillet. Rub pork chops with salt and pepper. Place on hot skillet. Cook each side 2-3 minutes.
  • Meanwhile, place half of the chopped cilantro, red onions, half the cumin, half the chili powder, and salt and pepper in bottom of crock pot. Place the pork chops on top. Place chopped tomatoes, remaining cilantro, remaining cumin, remaining chili powder, and salt and pepper on top of pork chops. Cook on HIGH for 3-4 hours.

1 can (8 ounces) tomato sauce
1 cup barbecue sauce
1 large sweet onion, thinly sliced
1/4 cup chili powder

1 boneless pork loin roast (2 to 2-1/2 pounds)
Flour tortillas
TOPPINGS:
Sour cream, shredded lettuce and chopped tomatoes, optional

Steps:

  • In a 3-qt. slow cooker, combine the chilies, tomato sauce, barbecue sauce, onion, chili powder, cumin and oregano. Cut pork in half; place on top of tomato sauce mixture. Cover and cook on low for 8-9 hours or until meat is tender., Remove pork. When cool enough to handle, shred meat using two forks. Return to slow cooker and heat through. 1/4 teaspoon salt
1/4 teaspoon pepper
2/3 cup Yoplait® Fat Free plain yogurt (from 2-lb container)
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1 tablespoon canola oil
1/2 teaspoon sugar
1/4 teaspoon salt
8 cups bite-size pieces mixed salad greens or 1 bag (4 oz) mixed salad greens
1 medium yellow bell pepper, sliced
1 package (8 oz) sliced fresh mushrooms (3 cups)
1 can (15 oz) black-eyed peas, rinsed, drained

Steps:

  • Heat oven to 350°F. Place pork on rack in shallow roasting pan. Sprinkle with 1/4 teaspoon salt and the pepper.
  • Bake uncovered 30 to 40 minutes or until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F. Cool pork; cut into slices.
  • Meanwhile, in small bowl, mix yogurt, cilantro, lime juice, oil, sugar and 1/4 teaspoon salt until well blended; set aside.

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 can (15 ounces) black beans, rinsed and drained
3/4 cup chicken broth
1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
4 bone-in pork loin chops(1/2 inch thick and 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice
2 tablespoons minced fresh cilantro, optional

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil.
