HAM WITH RED EYE GRAVY
The way the bitter coffee marries with the sweet, smoky fat is far from unpleasant, and infinitely better than simply pouring the pan drippings over your food.

COUNTRY HAM AND REDEYE GRAVY
Every "old time" Southern cook has their version of this one. This is how my Mom taught me to prepare this breakfast treat. To this day, if the country ham has been cured properly for at least a year, I would rather have it on my plate than any other meat (including steak). We always had a country ham breakfast on Christmas...

Steps:
- 1. FRYING THE HAM Trim off fat from country ham slices and render in hot skillet. When fat is crisp, remove the pieces and discard leaving the liquid in the skillet.
- 2. With medium heat, lightly brown each side of the country ham, 3-4 minutes per side. Do not overcook as the ham will become tough. Note: If the ham is too salty for your tastes, pour a cup of water in the skillet as you fry it and it will draw some of the saltiness out.
- 3. Remove ham slices and drain on paper towels. Serve warm.
- 4. MAKING THE GRAVY Retain 3/4 cup of the grease in the skillet.
- 5. Add the coffee and water and simmer for 5 minutes, stirring occasionally.
- 6. Pour on hot biscuits and enjoy!

Steps:
- Heat a large skillet (preferably cast-iron) over medium-high. Cook ham, adding 1/2 Tbsp. butter if ham is lean to help the browning process, until browned and fat has rendered, 2-3 minutes per side. Transfer ham to a platter.
- Pour coffee into the same skillet and cook over medium-high heat, scraping skillet with a wooden spoon to deglaze and loosen any browned bits. Add broth and sugar; simmer, stirring occasionally, until thickened and reduced to about 1/4 cup, 3-4 minutes. Add 1 Tbsp. butter and whisk until emulsified, about 1 minute more. Pour gravy into a small bowl or serving vessel and serve drizzled over or alongside ham.

Steps:
- In a medium saucepan over moderate heat, melt the butter. Add chicken and brown skin side down. Turn over and add chopped onion. Cook until soft and starting to color about 6 to 8 minutes. Cover with chicken stock, and add the coffee and brown sugar, if using. Reduce heat to medium and cook the red eye gravy until thick enough to coat the back of the spoon, about 2 to 4 hours. Strain stock into a large bowl and reserve. The chicken can be used for another recipe or discarded.

- In the same skillet, once steaks have been removed, reduce heat to medium and fry the eggs to desired doneness.
- Cover the steaks with red-eye gravy and crown with a fried egg. This dish can be served with potatoes, hash browns or biscuits, if desired.

- Place a large cast-iron skillet over medium-high heat and cook the ham steak until browned on both sides, 6 to 8 minutes.
- Use a fork or tongs to plonk the ham steak on a plate. Keep the skillet over medium-high heat. You should have 1/2 to 1 tablespoon drippings left in the skillet along with some small pieces of ham.
- Sprinkle the flour over the drippings and stir until well combined. Add the coffee and whisk to thicken the gravy. Add the butter, salt, pepper, and hot sauce and whisk until incorporated. Add the brown sugar and whisk until the sugar dissolves and the mixture begins to bubble.
- Taste the gravy for accuracy, season if necessary, and add more hot sauce if you’re brave. Serve alongside the ham or pour it over the top. Originally published January 16, 2016.

- Let ham steak come to temperature for 20 minutes. Blot it with a dry paper towel so it browns and doesn't steam in the pan.
- Place a large frying pan over medium heat. When completely hot, add 2 teaspoons of oil and tilt pan to distribute the oil.
- Put the ham in the pan and cook for 2-3 minutes per side until browned and warmed through. Remove to a plate and keep warm.
- Turn the heat down to med-low and add the coffee and water, stirring with a wooden spoon to scrape up any brown bits. Let it reduce slightly, then add the butter and ketchup (see post for other ideas). Stir until the butter melts and is slightly emulsified in the gravy.

- In a large frying pan (it should be big enough to accommodate ham, even more than one slice, in a single layer), melt butter over medium-high heat. Once butter foams, add ham and cook until browned on both sides, 2 to 3 minutes per side. Transfer to a plate and tent loosely with foil to keep warm.
- Pour coffee into pan and cook, stirring and scraping bottom of pan to release browned bits, until liquid is reduced by about half and just slightly thickened, 2 to 4 minutes. (Gravy will still be thin.) Season with pepper to taste, pour over ham and serve hot.
