Steps:
- Heat grill to medium heat.
- Mix meat, seasoning mix and 3 Tbsp. mayonnaise just until blended; shape into 12 (1/4-inch-thick) patties.
- Combine cheese and 2 Tbsp. salsa; spoon onto centers of 6 patties. Cover with remaining patties; pinch edges together to seal.
- Grill 5 to 6 min. on each side or until done (160ºF). Meanwhile, mix remaining mayonnaise and salsa until blended.
- Place lettuce on bottom halves of buns; top with tomatoes, burgers and mayonnaise mixture. Cover with tops of buns.

- Shape into 8 equal patties, about ¾ inch thick.

SLAMMIN' STUFFED SOUTHWEST BURGERS #RSC
Ready, Set, Cook! Hidden Valley Contest Entry. I LOVE to cook and always look for creative and flavorful ways to feed my family. My oldest daughter is an extremely picky eater and my little one has a ton of allergies, so cooking can be interesting! The nice thing about my cooking is that it is easy and substitutions can be made to accomodate my quirky family! These are a milder Southwestern inspired burger with a lemony guac to go on top! One tip I can offer in preparation is to wet your hands if picking up the burgers to seal the edges, as they can get a might bit sticky. If you wet them between each burger, your hands will fair a bit better and the burger should slide right off!

- Stuffing: Literally add all of the ingredients to a medium bowl, except the butter and veg stock. Mix well. Pinch off small bits of butter and drop into the mix. Add the vegetable stock and mix thoroughly. Set aside at room temp so that the liquid is absorbed.
- Guac: Mash the avocado, leaving small chunks. Add the remaining ingredients and mix, be careful not to over mix. Set aside at room temperature.
- Burgers: Again, add all of the ingredients to a large bowl and mix well.
- Preheat oven to 350 degrees.
- Seperate the burger mix into 12 equal balls, and place on a long piece of waxed paper leaving 6" on all sides. Place another long piece of waxed paper on top. Using the palm of your hand, press the balls into 1/2" thick patties. Remove the top sheet of waxed paper.
- Place one heaping tablespoon of the stuffing mixture in the centre of 6 patties and press down slightly. Take care not to come too close to the edges as we will be placing another patty on top and sealing the edges.
- Place the remaining 6 patties on top of the stuffed patties. Press the edges firmly to create a seal. You may have to pick them up individually in order to make sure all egdes are sealed properly.
- In a large frying pan, heat the oil on medium high. Add the patties carefully and sear each side until golden brown, about 4 mins per side. Remove from pan and place directly onto the prepared baking sheet (sprayed with cooking spray or caoted with cooking oil). Place in the over and bake for 15-20 minutes,until the center is no longer pink.
- To serve, place a patty into each of the 6 cut rolls. Eat as is or garnish with sweet onion, sliced dill pickles, sliced tomato or lettuce, or all of the above! And most of all, enjoy!

- To a large skillet, add bacon strips and heat over MED-LOW heat. Cook until bacon is cooked to your desired crispness, then transfer bacon to a paper-towel lined plate to cool. Drain all but about a tablespoon of the bacon grease, reserving that last Tbsp in the pan.
- Increase heat under the same skillet to MED heat. Add sliced onion and cook 8-10 minutes, or until golden brown. Remove onions to a plate, and turn off heat.
- Divide the beef into 8 equal portions and shape into balls. On a flat surface, lay down a sheet of wax paper and top with a ball of ground beef. Top with another sheet of wax paper and use a flat bottomed pan to press the meat into 1/4-1/2 inch patties. Repeat with remaining patties.
- To one of the thin patties, top with 1/8 cup cheddar cheese, a tablespoon or two of the onions, and another 1/8 cup cheese. Leave a border around the patty. Top with another thin patty, pressing the edges of the top and bottom patty together to seal well. - Double check burger to make sure there are no holes, then season well with salt and pepper.
- In the same skillet, add a drizzle of olive oil and the butter and heat over MED heat. Add burgers to pan (I like to cook 2 burgers at a time to make sure I have room to flip them carefully), and cook approximately 8 minutes, until burgers are brown up the sides. Use a wide spatula and carefully flip burger to the other side and cook another 5 minutes or so, until golden brown.

- In a small bowl, combine chilies, cheese, butter and garlic. Blend well.
- Divide ground beef into four, 3/4 cup pieces. Place 1 piece on cutting board; divide in half. Flatten each half into thin patty about 4 inches wide. Season each half with salt and black pepper.
- Place 2 tablespoons cheese mixture in center of one patty; cover with other patty. Pinch edges together to seal. Shape burger until round and slightly flattened. Season again with salt and black pepper, if desired.

STUFFED BACON CHEESEBURGERS

- Combine the jack cheese and chopped bacon in a bowl. Put the beef in another bowl and season with salt and pepper; use a rubber spatula to mix it in. Flatten 1/4 of the meat mixture in the palm of your hand. Squeeze together about a tablespoon of the cheese and bacon mixture to make a little nugget; put it in the center of the ground beef. Bring up the sides of the patty over the filling, making sure the cheese is completely covered by the meat. Flatten slightly for a nice patty shape. Set them side by side on a platter in the refrigerator while preparing the grill.
- Place a large grill pan on 2 burners over medium-high heat or preheat an outdoor gas or charcoal barbecue and get it very hot. Brush the grates with oil to keep the burgers from sticking. Grill the burgers for 8 minutes per side for medium. (The USDA recommends cooking ground beef until it is no longer pink and the internal temperature is 160 degrees F.) Remove the burgers to a clean side plate while you toast the buns.
- Rub the grill rack with more oil and place the buns cut-side down, toast for 1 minute. Serve the burgers with your favorite condiment and any garnish you like, such as lettuce, sliced tomato, onion, and/or avocado.
MOLTEN CHEESE-STUFFED BURGERS

- Heat the oil in a frying pan over a medium heat and fry the onion with a good pinch of salt for 15 mins until soft and translucent. Add the pancetta and cook for 5 mins more, then add the garlic and thyme, and cook for 2 mins. Remove from the heat and leave to cool for 15 mins.
- Tip the mince into a large bowl. Massage with your hands for 5 mins to tenderise the meat, then add the cooled onion mix, the breadcrumbs and egg yolk. Season generously. Divide evenly into four, weighing for accuracy, if you like. Mix the cheddar and mozzarella together. Form the beef portions into patties, patting each into a 10cm round. Divide the cheese mixture into four, and, in your hands, form each portion into a firm ball, then press into a roughly 4cm disc. Working one at a time, put a cheese disc into the centre of a beef patty, then bring the meat around the cheese to cover. Lightly pat with the palm of your hand to flatten slightly, then chill, covered, for at least 30 mins or up to 48 hrs.
- Make the sauce by whizzing the mayonnaise, mustard and herbs together in a small food processor. Stir through the gherkins, then cover and chill until ready to use.
- Light the barbecue. When the flames have died down, grill the burgers on each side for 4-5 mins until charred (if you don't have a barbecue, see tip, below). Wrap individually in foil and leave on the barbecue for 5-7 mins so the cheese centre melts.
- Grill the buns, cut-side down, for 1-2 mins until toasted. Spread all the cut sides with the sauce, then fill with the beef patties, lettuce, tomatoes and crispy onions.
