Steps:
- Preheat the oven to 375 degrees F. Add the panko, milk, cilantro, ketchup, barbecue sauce, Dijon mustard, chili powder, cumin, cayenne, garlic, green onions, eggs, Spanish onion and red bell pepper to a large bowl and mix until thoroughly combined. Add the beef and mix until incorporated, being careful not to overwork. Put the meat mixture in a loaf pan set on a rimmed baking sheet and bake until it registers 165 degrees F on an instant-read thermometer, 60 to 75 minutes. Let stand 10 to 15 minutes before slicing. Serve with smashed red potatoes, green onions and sour cream.

- Preheat oven to 325 degrees F.
- In a medium saute pan, over medium-low heat, cook the onions, olive oil, salt, pepper, and thyme until translucent, but not browned, approximately 15 minutes. Add the Worcestershire sauce, chicken stock, and tomato paste and mix well. Allow to cool to room temperature.
- Combine the ground turkey, bread crumbs, eggs, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread the ketchup evenly on top. Bake for 1 1/2 hours until the internal temperature is 160 degrees F. and the meatloaf is cooked through. (A pan of hot water in the oven under the meatloaf will keep the top from cracking.) Serve hot, at room temperature, or cold in a sandwich.

- Mix the ground beef, eggs, onion, bread crumbs, salsa, ketchup, barbeque sauce, salt, pepper, and celery salt together in a bowl; transfer to a loaf pan.

I loved the salsa in this meatloaf! It really enhanced the flavor and adds moisture to the recipe. The mix of the bell peppers also added to the flavor of the meatloaf. Healthy comfort food!

SOUTHWEST MEATLOAF
This is a unique meatloaf recipe. Very moist. My friend gave me this recipe and I know she got it out of a magazine but neither one of us know which one! It called for more cilantro and onions and I did cut these back. This is not a pretty meatloaf....just a great tasting one!

MOMOSITA'S AMAZING GROUND TURKEY/CHICKEN MEATLOAF (WITH HIDDEN V
This is a Awesome (!) meatloaf that I've adapted from a turkey meatloaf recipe from allrecipes.com. The original recipe calls for 2# of ground turkey, but this recipe is better with 1# of ground chicken and the added shredded veggies. You can use ground turkey, but I personally prefer the milder taste of ground chicken. This meatloaf tastes amazing and is a great way to incorporate more colorful veggies into your menu (or to hide them for picky little ones). Bon apetit!

- Preheat oven to 400 degrees.
- Place milk and breadcrumbs in a bowl and let soak while mixing the rest of the ingredients.
- Pat and squeeze the shredded zucchini and carrots between paper towels to soak up extra moisture.
- Place ground turkey, carrot, zucchini, onion, eggs and cheese in a large bowl and mix by hand.
- Once the breadcrumbs have soaked up all of the milk, mix in the 2 Tbs of Italian seasoning and add to the turkey mixture.
- Stir in the seasoned salt, pepper, and worcestershire.
- Place mix in a greased loaf baking pan and drizzle the ketchup on top.
- Bake at 400 degrees for 55minutes or until the internal temperature reaches 180 degrees. Remove from the oven, cover tightly with tin foil and let sit for 10 minutes.

- Cook the bacon in a medium skillet over medium-high heat, until golden.
- Add onion, celery, green pepper, and garlic.
- Cook until the onion is soft.
- Stir in chili powder, oregano, salt and hot sauce.
- In a medium bowl, combine contents of skillet with the salsa, ground meat, breadcrumbs and egg.
- Spoon mixture in large loaf pan.

- In a large sauté pan, heat the olive oil over med-high heat and add the onions. Saute the onions until they begin to soften, add the bell pepper and continue cooking until the onions are translucent. Stir in the corn and continue cooking for approximately 3-4 minutes or until the vegetables begin to carmelize. Stir in the garlic, jalapeno and black beans and cook for 2 additional minutes. Add the chili powder and remove from the heat. Allow the mixture to cool to room temperature.
- In a large bowl, gently mix together the ground turkey, cilantro, salt, pepper, egg, panko and vegetable mixture using your hands or a pastry blender. Be careful not to compact the mixture too much or the meat will be tough. Form the meat mixture into a loaf in a large baking pan and top with half the enchilada sauce coating the entire surface. Sprinkle the top with the cheese and bake for 45-50 minutes or until the meatloaf is cooked through.
- Allow the meatloaf to rest for 10 minutes before serving. Slice into 1/2 inch pieces and serve. Serve with the remaining enchilada sauce and top with sour cream or greek yogurt if desired.
