HASH BROWN-CRUSTED HALIBUT WITH MANGO MINT RELISH



Hash Brown-Crusted Halibut with Mango Mint Relish image

Number Of Ingredients 15

4 skinless halibut fillets, 3 to 4 ounces each, about 1/2 inch thick
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/8 teaspoon granulated garlic
2 cups refrigerated shredded hash browns, such as Simply Potatoes
1 large egg, whisked in a shallow dish
2 tablespoons butter, melted and cooled slightly
1 tablespoon vegetable oil
Mango-Mint Relish, recipe follows
2 tablespoons thinly sliced fresh mint
Zest and juice of 2 limes
1 ripe medium mango, diced
1 Fresno chile, half of the seeds and ribs removed, diced
1 small shallot, minced
Kosher salt and freshly ground black pepper

Steps:

  • Sprinkle both sides of the halibut with the salt, pepper and granulated garlic. Compress the hash browns between 2 paper towels until they are flat and about the size of all 4 fillets. Eyeball the size and shape of the fillets and cut out hash brown "hats" to fit the top of each fillet. Dip the presentation side of each piece of halibut into the egg, then press a hash brown "hat" onto the egg.
  • Put the melted butter and oil into a cold, 12-inch nonstick pan. Place the fillets hash brown-side down directly into the butter and oil. Place on a burner and turn the heat to medium low. Cook, undisturbed, until the hash browns are golden brown, 8 to 10 minutes. Gently flip using a fish spatula and finish cooking until the fish registers 125 degrees F, about 5 more minutes. Serve immediately with the Mango-Mint Relish.
  • Mix together the mint, lime zest and juice, mango, chile and shallot in a bowl; season with salt and pepper.

4 (6 ounce) halibut
2 1/2 cups Simply Potatoes Southwest Style Hash Browns
1 teaspoon kosher salt
1 tablespoon chives, chopped
1/2 cup extra virgin olive oil

Steps:

  • Combine potatoes, salt, and chives together in a bowl.
  • Place 1/4 of potato mixture on each of the fish filets, packing mixture onto fish tightly and fully.
  • Heat oven to 350 degrees.
  • Heat olive oil in a large, oven proof skillet over medium high heat. Cast iron would be ideal.
  • When oil begins to shimmer, place fish filet, potato side down, into the skillet. Continue to cook potato side down until hash browns become golden brown. Place skillet in oven and continue to cook until fish is cooked though, about 12 minutes.
  • Remove from oven. Serve fish potato side up.

1/2 lb maple bulk pork sausage
1 (12 ounce) can refrigerated buttermilk biscuits (10 count)
1 1/4 cups frozen Simply Potatoes Southwest Style Hash Browns, thawed
1/2 cup black beans, drained and rinsed
3/4 cup shredded monterey jack pepper cheese

Steps:

  • Preheat oven to 400 degrees F. In 10-inch skillet, cook maple pork sausage over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain. Remove sausage from skillet; set aside.
  • Separate biscuits and roll each biscuit into a 5-inch round. In a medium bowl combine maple sausage, southwest style hash browns, black beans, and shredded pepper jack cheese.
  • Equally divide sausage potato mixture on half of each biscuit round. Fold other half over sausage filling; press edges with fingers to seal.
  • Place mini southwest style hand pies on a large nonstick cookie sheet.
  • Bake 11 to 15 minutes or until golden brown. Serve warm with your favorite salsa.

1 (16 ounce) jar salsa con queso
1 (16 ounce) container fat free sour cream
12 green onions
2 cups potato chips

Steps:

  • Wash green onions; separate the white portion from the green tops. Chop white portions of onions, mix together with hashbrowns, salsa con queso and sour cream.
  • Pour into 9x13 casserole dish (sprayed with Pam).
  • Top with potato chips. Bake 350F for 45-60 minutes.
  • Just prior to serving, the remaining green portions of onions can be thinly sliced at an angle and added on top of the potato chips.

3 1/2 cups Simply Potatoes Southwest Style Hash Browns
6 poblano peppers
1 lb chorizo sausage, diced
1 bunch cilantro, chopped
1 lb cheddar cheese, grated or 1 lb monterey jack cheese, for even more heat

Steps:

  • Preheat the oven to 450 degrees F. Put the poblanos on a baking sheet and a little oil and salt. Roast for 20 minutes or until all the skin blisters. Transfer to a bowl and cover with plastic wrap and let steam for 10 minutes.
  • Peel the skin and cut a slit into the side of each pepper. Remove the seeds and membranes by hand and rinse with a little water to get all seeds. Set aside.
  • In a large skillet over medium, render the diced chorizo until crispy. Remove the chorizo from the pan and set aside.
  • Add 1 package of Simply Potatoes Southwest Style Hash Browns to the skillet and spread evenly. Cook for 6-7 minutes or until golden brown on the bottom. Flip over in sections and continue to cook for another 6-7 minutes.
  • Remove from heat and mix in the cilantro and season with salt.
  • Using a spoon, stuff the poblanos with the hashbrown mix into the pobanos and top with the grated cheese.
  • Place the stuffed poblanos back into the oven for about 8 minutes or until the cheese is melted and golden.

3/4 cup water
1 1/2 cups peanut oil or 1 1/2 cups canola oil
1 (8 ounce) jar sweet and sour sauce

Steps:

  • Whisk water and chickpea flour together until all lumps are out.
  • Add the Simply Potatoes Southwest Style Hashbrowns to the mixture coating all the potatoes completely.
  • Heat oil on a medium heat.
