- In a food processor; combine the first eight ingredients and 1/2 cup cheese; cover and process until smooth. Spread evenly over tortillas. Roll up and place seam side down in a greased 13x9-in. baking dish. , Cover and bake at 350° for 20 minutes or until heated through. Sprinkle with remaining cheese; let stand until cheese melts. Serve with sour cream and salsa if desired.

Steps:
- Preheat over to 375 degrees.
- Combine rice, parsley, scallions (or onions)and cheese. (You may saute onions first.).
- In blender, combine tofu, milk, pepper, spices and hot sauce until well mixed.
- Combine rice and tofu mixtures.
- Pour into crust.
- Bake for 30 minutes or until set.
- Serve hot.
- (I think it takes even better the next day when the flavors have blended and mellowed.).

While visiting my mom we found this recipe in a magazine. We tweaked on it a little bit, and instead of shredding the chicken, we just cubed it and rolled it up in the tortilla with everything else. It was delicious! My brother LOVED this! He couldn't get enough of it.

YUMMY HAMBURGER CASSEROLE
This is my favorite hamburger casserole. I like to serve it over the top of garlic mashed potatoes. Don't let it's unusual ingredients stop you from trying this--it is wonderful!

- Preheat oven to 400 degrees.
- Brown beef and onion in a large skillet; drain.
- Add beef back to skillet and stir in rice, salt pepper, soup and water; mix well.
- Place coleslaw mix in an ungreased 2 quart casserole dish.
- Spoon beef mixture over coleslaw.
- Cover and bake about 45 minutes.
- Uncover, top with cheese and pop back in oven for another 10 minutes uncovered or until cheese is melted and casserole is hot and bubbly.
JELLY ROLL
A light dessert and soooo easy! * I have also tried sifting confectionery sugar on a dry tea towel( not terry cloth) and turning the cake out on that. (Remove waxed paper carefully. Then try to roll the cake (on the long side) with the cloth as a buffer between each turn/layer. Let it rest for a minute or two then unroll and and let rest for a bit before you spread with jelly/jam . Re-roll. This seems to help keep the roll from tearing so easily.

Steps:
- Preheat oven to 375°F.
- Spray a 11 x15 baking/jellyroll pan with a light spritz of Pam.
- Fit with waxed paper and spray with cooking Pam again.
- Whip eggs, sugar, vanilla and water until light.
- Mix in dry ingredients.
- Pour thin batter unto sheet.
- Bake until sponge is golden and springs to the touch.
- Turn out on cloth wrung in cold water.
- Remove waxed paper.
- Spread with jam/jelly.
- Using the cloth as an aid, roll up the cake into a roll and trim the ends.
- Place on platter.
- Sprinkle with confectioner sugar.
- Serve warm or cold. Enjoy! =).

STUFFED CHEESEBURGER BUNS
These are so delicious and easy to make. Don't let the homemade dough scare you.....this is so simple and quick. They are great reheated the next day or at room temperature. I have made them in miniature for parties as a hot appetizer, as well. I clipped this from a magazine years ago and have made it countless times since. I hope you enjoy it as much as my family does.Prep time includes rising.

- In a large bowl, dissolve yeast in warm water. Add the milk, sugar, shortening, egg, salt and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough.
- Turn onto a floured surface; knead until smooth and elastic, about 4-6 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 30 minutes.
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce. Remove from the heat; set aside.
- Punch dough down; divide into 16 pieces.
- On a lightly floured surface, gently roll out and stretch each piece into a 5-in. circle. Top each circle with two pieces of cheese and about 3 tablespoons beef mixture. Bring dough over filling to center; pinch edges to seal.
- Place seam side down on a greased baking sheet. Cover and let rise in a warm place until doubled, about 20 minutes. Bake at 400° for 8-12 minutes or until golden brown. Serve warm. Refrigerate leftovers.

This dish may sound complicated at first, but don't let it fool you. It's easy to make, yet elegant to serve. If you can roll up a cake jelly-roll style or form the dough for cinnamon rolls, you can make this. In this recipe, you roll a cooked egg mixture instead of a cake or dough. The filling is made from cooked, savory vegetables.

- TO MAKE THE SOUFFLE: Preheat oven to 400*. Coat a 15x10" baking dish with nonstick spray. Line with waxed paper, then coat the waxed paper with nonstick spray.
- In a medium bowl, using an electric mixer set on high speed, beat the egg yolks for 5 minutes, or until thickened and lemon colored. Reduce the speed to medium and beat in the flour and salt. When incorporated, beat in the milk.
- In a large, clean bowl, beat the egg whites on high speed with clean, dry beaters until foamy. Add the cream of tartar and beat until stiff peaks form when the beaters are lifted. Fold in the yolk mixture. Spread into the prepared baking dish. Bake for 20 minutes, or until golden. Cool on a rack for 5 minutes.
- TO MAKE THE FILLING: Meanwhile, coat a large skillet with nonstick spray and warm over medium-high heat. Add the potatoes, peppers, onion, oregano, and salt and cook, stirring occasionally, for 10-15 minutes, or until tender. Stir in the turkey ham and remove from heat.
- Carefully invert the warm souffle onto a clean kitchen towel. Peel off the waxed paper. Top evenly with the filling. Sprinkle with the cheese. Beginning at a short end, roll up, jelly-roll style. Place, seam side down, on a serving plate. Serve warm or at room temperature Cut into 8 slices and serve with salsa.
