SOUTHWEST-STYLE SCALLOP CEVICHE SALAD
This summer salad includes scallop ceviche and a colorful medley of tomatoes, corn, avocado, cilantro, and jalapeno.

Steps:
- At least one hour before serving, place the scallops, lime juice, cilantro, jalapeno, red onion, and salt and pepper as desired in a medium bowl. Stir to combine ingredients. Cover and refrigerate for 1 hour or up to 12 hours.
- On a large serving platter, place large lettuce leaves overlapping each other in a circle so the frilly edges extend just beyond the rim of the platter. Using a slotted spoon to leave juices behind, mound ceviche in the center.
- Place corn, chili powder, and 1 1/2 tablespoons of olive oil in bowl; mix together and season to taste with salt. Arrange corn in a ring around ceviche so that the corn covers the bottom third of the lettuce leaves. Place tomatoes in an overlapping ring surrounding the corn and covering the middle third of lettuce leaves.
- Distribute pressed garlic over the tomatoes, drizzle remaining oil on them, and season to taste with salt. Place the avocado slices and lime wedges on the top third of the lettuce leaves, around the tomatoes. Serve immediately.

- Blanch scallops in boiling water for 10 minutes. Remove and place in ice bath.
- Marinate scallops with 2 tsp cornstrch, egg white, and salt andpepper; set aside 30 minutes.
- Mix together soy, remaining cornstrach, and 1 tsp water.
- Heat oil; cook vegetables 2-3 minutes.
- Add scallops and cook 1 minute before adding sauce mixture; stir till thickens.
- Place the scallop mixture in a lettuce leaf with bean sauce. Eat and enjoy.

Steps:
- Heat a 12 inch saute pan over high heat. Whaen very hot, add oil and garlic.
- Saute for a few seconds and add scallops.
- Stir scallops until they turn white, about 1 minute,.
- Pour scallops into a pan and refrigerate until chilled.
- Separate the lettuce leaves and break into small lettuce cups.
- Place ancho chile in a small bowl and cover with boiling water.
- Let it sit for 30 minutes.
- Remove seeds and finely chop chile.
- Comine chile, green onion, cilantro, lime juice and sugar.
- Add scallops.
- Serve in lettuce cups or serve in a bowl with lettuce cups surrounding it. Your guests can serve themselves.
- Enjoy!

BACON WRAPPED SCALLOPS WITH SPICY MAYO

- Heat the broiler. Wrap each scallop in a piece of bacon and secure it with a toothpick. Place the bacon wrapped scallops onto a baking sheet, drizzle them with olive oil, and season them with salt and pepper. Cook them under the broiler for about 10 to 15 minutes until the bacon is cooked through, turning once.
- Make the spicy mayo by combining the mayonnaise, chili paste, lime juice, and chopped cilantro. Stir well and refrigerate until ready to use.
- To serve, carefully peel away the lettuce leaves and line a large platter with the lettuce cups. Top each with a bacon wrapped scallop, 2 slices of avocado, and a spoonful of spicy mayonnaise. Garnish with cilantro leaves.
SCALLOP SEVICHE IN CUCUMBER CUPS
Steps:
- Combine the scallops, tomatoes, herbs, peppers, olive oil, and hot sauce. Add enough lime juice to cover the scallops. Season with salt and pepper, to taste. Marinate, covered, in the refrigerator at least 1 hour and up to 8 hours, stirring occasionally.
- Trim the cucumber slices with a round, fluted cutter to remove the rind. Scoop a pocket out of the middle of the cucumber slices. Do not cut all the way through the slice. Fill the cucumber cups with the seviche. Garnish each seviche cup with a small dot of sour cream and a cilantro leaf.

- In a small bowl, mix seasonings. Pat scallops dry with paper towels; sprinkle with seasonings, pressing to coat., In a large skillet, heat 1 tablespoon butter over medium-high heat. - PREPARE SWEET POTATOES:.
- Preheat the oven to 400 degrees Fahrenheit. Pierce the potatoes in several places.
- Bake sweet potatoes until tender, about 45 minutes.
- Halve the potatoes lengthwise, and scoop the pulp into a medium bowl.
- Stir in the milk, ginger, salt and pepper.
- Beat with an electric mixer at low speed until blended and smooth; keep warm.
- PREPARE SCALLOPS:.
- Heat the butter in a large nonstick skillet over medium-high heat. Cook until the butter just begins to brown slightly.

STIR-FRIED SCALLOPS WITH LETTUCE
From Wei-Chuan's Cookbook, Chinese Cuisine. This is an authentic chinese recipe. The dried scallops or dried shrimp lends a complex aroma to the clean crisp lettuce. Dried scallops are expensive, but they lend a sweet seafood taste and is much preferred, the dried shrimp is tasty too, but the flavor is more robust. Although I made this as is with the dried scallops --it was excellent, and I loved the texture of the lettuce, I find iceberg void of the nutrients of true green leafy vegetables favored by the Chinese. Therefore, this dish can be made with romaine lettuce, baby bok choy or pea shoot leaves (which are abundant in late winter and early spring in chinatowns in major cities.) We actually ordered this dish with scallop/pea shoot leaves recently over Chinese New Year in a restaurant and it would've been tastier with this sauce!

- Early morning PRE-PREP:.
- Place the scallops in a bowl; add 1/2 cup water, soak for approximately 10 hours (or steam for 1 hour) til the scallops are softened.
- Final Prep:.
- Wash and tear lettuce into large sheets.
- Remove scallops and drain, retaining soaking liquid. Tear the scallops into shreds. Place the shredded scallops, retained liquid, and the sauce ingredients into a pot; bring to boil, Add the cornstarch slurry/thickner into the pot and allow to thicken, then set aside.
- Heat a wok (or saute pan) over med-high heat, add oil, and add the scallions, stir-fry until fragrant and then add lettuce. Continue stir-frying until it is limp. Remove from heat and using a slotted spoon (or drain the lettuce) and add to the scallop sauce. Reheat the lettuce and scallop sauce over medium heat and transfer to a serving platter and serve.
- IF using dried shrimp, the shrimp must be rinsed and soaked for 20 minutes until soft before using.
