3/4 cup flour, plus
2 tablespoons flour
6 tablespoons cold butter, cut into bits
1/3 cup sweetened flaked coconut, toasted and cooled
1/4 cup confectioners' sugar
1/4 teaspoon salt
4 large eggs
1 cup sugar
1/3 cup flour
1/2 cup fresh lime juice, plus
2 tablespoons fresh lime juice
1 tablespoon freshly grated lime zest
1/3 cup sweetened flaked coconut, toasted and cooled

Steps:

  • For crust: Preheat oven to 325F.
  • Butter and flour an 8-inch square baking pan, knocking out excess flour.
  • Blend together with fingertips flour, butter, coconut, confectioners’ sugar and salt until mixture resembles coarse meal.
  • Pat mixture into prepared pan and bake in middle of oven 25-30 minutes, or until golden-brown.
  • Reduce oven temperature to 300F.
  • Make filling: Whisk together eggs and sugar until combined well and stir in flour, lime juice and zest.
  • Pour filling mixture over crust and bake in middle of oven for 20 minutes.
  • Top custard with coconut garnish and bake 5-10 minutes longer, or until just set.
  • Cool on rack and chill 1 hour.
  • Cut into 16, 2-inch squares.

1 cup butter, cubed
1 cup sugar
1/2 cup milk
1 large egg, beaten
1 cup sweetened shredded coconut
1 cup chopped walnuts
1 cup graham cracker crumbs
24 whole graham crackers
FROSTING:
1/4 cup butter, softened
2 cups confectioners' sugar
2 tablespoons milk
1 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • In a heavy saucepan, melt butter. Stir in sugar, milk and eggs. Bring to a boil; cook and stir for 10 minutes. Remove from the heat. Stir in coconut, nuts and cracker crumbs. , Line a greased 15x10x1-in. pan with 12 whole crackers. Spread with the coconut mixture. Top with remaining crackers; press down gently. Cover with plastic wrap and refrigerate for 30 minutes. , Meanwhile, in a small bowl, combine frosting ingredients; beat until smooth. Break each cracker into four portions; spread with frosting.

I don't know where I got this recipe but I've had it for years and am just now trying it.I'm very glad I did!It's so simple,throw it all in one bowl and it's done.I was skeptical about the absence of flour but I guess the graham crumbs acts as a flour.There is an icing with the recipe but I did not make that.I used another one that I had left over.It doesn't even need the icing,it's good on its own.

1 cup brown sugar
1 cup milk
1 teaspoon baking powder
1 teaspoon vanilla
1/2 cup melted butter
1 cup coconut

1 cup icing sugar
2 tablespoons cocoa
1 tablespoon butter
milk

Steps:

  • Cake:.
  • Mix all ingredients and put into a greased 9 x 9 inch baking pan.
  • Bake at 350F until golden,about 30 minutes.

2 cups graham cracker crumbs
1/2 cup sugar
1/2 cup butter, melted
2 cups sweetened shredded coconut
1 can (14 ounces) sweetened condensed milk
TOPPING:
1-1/2 cups packed brown sugar
6 tablespoons heavy whipping cream
1/4 cup butter, cubed
3/4 cup semisweet chocolate chips

Steps:

  • In a small bowl, combine the graham cracker crumbs, sugar and butter. Press onto the bottom of a greased 13-in. x 9-in. baking pan. Bake at 350° for 8-10 minutes or until lightly browned. , Combine coconut and milk; spread over warm crust. Bake for 12-15 minutes or until edges are lightly browned. Cool on a wire rack. , In a large saucepan, combine the brown sugar, cream and butter. Bring to a boil over medium heat, stirring constantly. Boil for 1 minute. Remove from the heat; stir in chocolate chips until melted. Spread over coconut layer. Cool before cutting.

Steps:

  • In medium bowl, beat powdered sugar, butter and salt with spoon or with electric mixer on low speed until well blended.
  • Beat in coconut extract and 1 tablespoon of the milk. Gradually beat in just enough remaining milk to make frosting smooth and spreadable.
