I created this colorful side dish after eating something similar at a restaurant. It complements any Tex-Mex meal wonderfully. Sometimes I add cubes of grilled chicken breast to the rice to make it a meal in itself. -Michelle Dennis, Clarks Hill, Indiana

Number Of Ingredients 11

1 tablespoon olive oil
1 medium green pepper, diced
1 medium onion, chopped
2 garlic cloves, minced
1 cup uncooked long grain rice
1/2 teaspoon ground cumin
1/8 teaspoon ground turmeric
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 cups frozen corn (about 10 ounces), thawed
1 can (15 ounces) black beans, rinsed and drained
1 can (10 ounces) diced tomatoes and green chiles, undrained

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat; saute pepper and onion 3 minutes. Add garlic; cook and stir 1 minute., Stir in rice, spices and broth; bring to a boil. Reduce heat; simmer, covered, until rice is tender, about 15 minutes. Stir in remaining ingredients; cook, covered, until heated through.

1 lb Cooked Chicken Breasts (shredded or Ground Turkey Meat, browned)
1 cup Brown rice or quinoa (cooked)
10 oz can of Black Beans (I use low sodium)
1/2 lb frozen corn (or can of corn)
Fresh Cilantro (chopped)
Salsa or Fresh cut tomatoes
Plain fat free plain Yogurt (or low fat sour cream)
Sliced Avocado or Guacamole (optional)
Chopped Scallions (optional)
Shredded cheese (optional)
Pepper to taste

Steps:

  • Cook chicken, if necessary, and shred into pieces.
  • Cook rice as directed.
  • Layer rice, chicken, black beans, and then corn in a bowl.
  • Top with Cilantro, salsa, fat free plain yogurt, scallions and cheese.

1 pound lean ground beef (90% lean)
1 medium onion, chopped
1 medium green pepper, chopped
1 jalapeno pepper, seeded and finely chopped
1-1/2 cups uncooked instant rice
1 can (14-1/2 ounces) diced tomatoes with mild green chiles
1-1/2 cups beef broth
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Mexican cheese blend

Steps:

  • In a large skillet, cook beef, onion, green pepper and jalapeno over medium heat until meat is no longer pink and vegetables are tender, 8-10 minutes, breaking beef into crumbles; drain., Add rice, tomatoes, broth and seasonings. Bring to a boil, then reduce heat. Simmer, covered, until liquid is absorbed, about 5 minutes. Fluff with a fork. Remove from heat; sprinkle with cheese. Let stand, covered, until cheese is melted.

1 (16 ounce) can black beans, rinsed and drained
1 cup pitted and chopped fresh fruit, mango, pineapple, papaya, peaches or 1 cup sweet cherries
2 tablespoons chopped cilantro
2 tablespoons chopped onions
1 tablespoon lime juice
1 tablespoon chopped jalapeno pepper
1/2 teaspoon garlic salt, divided
1/4 teaspoon ground pepper
4 cups hot cooked white rice or 4 cups brown rice
12 ounces boneless skinless chicken breasts, sliced in strips (about four 4 ounce breasts)
garlic salt
dried chipotle powder or achiote chili powder
2 teaspoons olive oil
2 cups shredded lettuce
4 sprigs cilantro
sour cream (optional)

Steps:

  • To make salsa, combine beans, chopped cherries (or other fresh fruit), cilantro, onion, lime juice, jalapeno, garlic salt and pepper. Mix well and set aside.
  • Season chicken with garlic salt and chipotle or achiote chile powder; saute in oil until thoroughly cooked.
  • Portion 1 cup rice in four individual bowls. Top each with 1/4 cup salsa, 1/4 of chicken (about 1/3 cup), 1/2 cup lettuce and sprig of cilantro with a dollop of sour cream on the side.
