1 Ib (450g) of ground 80/20 beef
¼ Ib (115g) of ground pork
1 Anchovy fillet, finely chopped - TFD uses Ortiz brand only
4 Free range egg yolks
1 goodly pinch of white pepper
2 Tablespoons capers, chopped
1 Tablespoon cornichon pickles, chopped
3 Tablespoons pickled beetroot, finely diced
1 Onion, finely chopped
1 Tablespoon of Swedish mustard (preferred) or use Dijon
Salt & pepper
Organic ghee for frying

To serve:
8 Potatoes
4 Free range eggs
Organic ghee for frying, and butter for thickening the sauce
½ Cup (1.25dl) of good beef stock
Splash of the cornichon liquid
Splash of the pickled beetroot liquid
Salt & black pepper
Chives for garnish

Steps:

  • Blend all the ingredients for the beef patties in a large mixing bowl until they are all very well mixed.
  • With your hands, form 4 large beef patties and fry them over medium heat in butter for about 5 minutes on each side. When done, deglaze the pan with the beef stock and cornichon/beetroot liquids, and let reduce to half.
  • Thicken the sauce with a knob of butter and season with salt and pepper.
  • Peel and dice the potatoes and fry them in a little ghee and vegetable oil on low heat until golden brown on the outside and soft on the inside - about 15 minutes.
  • Fry the eggs in ghee and serve on top of the beef patties. Place the fried potatoes and drizzle the pan sauce around the beef and garnish with chives.

A Swedish classic! This is no ordinary hamburger....ground beef is mixed with pickled beets, capers and onion to create a zesty and delicious patty bursting with flavor. Top it off with a fried egg for the fully authentic experience.

1 pound ground beef (about 85% lean)
1 large egg (beaten)
2 teaspoons dijon mustard
⅓ cup panko bread crumbs
½ teaspoon fine salt
½ teaspoon freshly ground pepper
⅓ cup grated onion (grated on the large holes of a box grater)
½ cup Spicy Pickled Beets (or store bought pickled beets, chopped)
3 tablespoons capers (drained, rinsed and chopped coarse)
2 tablespoons unsalted butter (divided)
4 large eggs
Chopped fresh dill (parsley or chives for serving)

Steps:

  • Preheat the oven to 400 degrees and place a wire rack inside of a rimmed baking sheet. Set aside.
  • Combine ground beef, beaten egg, mustard, panko, salt, pepper, onion, beets and capers in a large bowl. Knead with your hands to combine. Shape into 4 patties and make a shallow divot in the center of each patty.
  • Heat 1 tablespoon of butter in a large skillet (preferably nonstick) over medium high heat. Once the foaming subsides, add the patties and cook until nicely browned, about 3 minutes per side. Place the patties on the wire rack prepped in step 1 above. Transfer the baking sheet to the oven and bake until patties are firm and cooked through, about 8-12 minutes (a thermometer inserted into each patty should read 160 degrees F)
  • Transfer the burgers to a plate and tent with foil. Rest for at least 5 minutes. Meanwhile, make the fried eggs: Heat the remaining tablespoon of butter in a nonstick skillet over medium. Crack 4 eggs into the skillet, salt and pepper the eggs and cover. Cook until white and yolks are just set, about 3 minutes (or until eggs are done to your liking), adjusting the heat as necessary. Top each burger with a fried egg and a sprinkle of chopped fresh dill and serve.

1 lb freshly minced beef
4 egg yolks
4 tablespoons heavy cream
4 tablespoons finely chopped boiled potatoes
3 tablespoons finely chopped pickled beets or 3 tablespoons boiled beetroots
2 tablespoons grated onions
1 tablespoon capers
salt, white pepper
butter (for frying)

Steps:

  • Mix all ingredients and make four nicely shaped, high burgers.
  • Fry them at once in lots of butter (they should not be made in advance).
  • They should be medium rare inside.
  • Serve the beefs with the butter they fried in and fried potatoes, or on a toast.
  • You can also put a fried egg on top.
