Number Of Ingredients 17

1 tablespoon chopped fresh oregano
1 teaspoon minced garlic
1 teaspoon orange zest plus 1 Tbsp. fresh orange juice
1 teaspoon ground cumin
2 tablespoons olive oil, divided
2 teaspoons lime zest, divided, plus 2 Tbsp. fresh lime juice, divided
1 1/8 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
4 (7-oz., 1-inch-thick) bone-in, center-cut pork chops
1 pound red new potatoes, halved
1/2 large sweet onion, cut into 1/2-inch wedges (about 1 cup)
1 cup red bell pepper strips
Canola oil cooking spray
3/4 cup cubed ripe avocado
1 cup orange segments
2 tablespoons chopped fresh cilantro
1 tablespoon finely chopped seeded jalapeño

Steps:

  • Preheat oven to 425°F. Stir together oregano, garlic, orange zest and juice, cumin, 1 tablespoon oil, 1 teaspoon lime zest, 1 tablespoon lime juice, 1/2 teaspoon salt, and 1/2 teaspoon black pepper in a small bowl. Rub both sides of pork chops with mixture. Set aside.
  • Toss together potatoes, onion, bell pepper, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and remaining 1 tablespoon oil in a bowl. Spread mixture in an even layer on a rimmed baking sheet coated with cooking spray. Bake at 425°F until potatoes are just tender, 20 to 22 minutes, stirring once.
  • Stir together avocado, orange segments, cilantro, jalapeño, remaining 1 teaspoon lime zest, remaining 1 tablespoon lime juice, remaining 1/8 teaspoon salt, and remaining 1/4 teaspoon pepper. Set aside.
  • Remove pan from oven. Move potato mixture toward the edges, leaving just enough room in center for pork chops. Place pork chops in center of pan, and return to oven. Bake at 425°F for 5 more minutes. Turn on broiler to high, and broil until a thermometer inserted in thickest part of pork registers 140°F, 3 to 4 more minutes. Serve with salsa.

1/2 cup chopped sweet onion
1/2 cup lime juice
1/4 cup finely chopped seeded jalapeno peppers
2 tablespoons olive oil
4 teaspoons ground cumin
1-1/2 pounds pork tenderloin, cut into 3/4-inch slices
3 tablespoons jalapeno pepper jelly
SALSA:
2 medium ripe avocados, peeled and chopped
1 small cucumber, seeded and chopped
2 plum tomatoes, seeded and chopped
2 green onions, chopped
2 tablespoons minced fresh cilantro
1 tablespoon honey
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For marinade, mix first 5 ingredients. In a large bowl, toss pork with 1/2 cup marinade; refrigerate, covered, up to 2 hours., For glaze, place jelly and 1/3 cup of the remaining marinade in a small saucepan; bring to a boil. Cook and stir until slightly thickened, 1-2 minutes; remove from heat. Place salsa ingredients in a large bowl; toss lightly with remaining marinade., Drain pork, discarding marinade. Place pork on a lightly oiled grill rack over medium heat. Grill, covered, until a thermometer reads 145°, 4-5 minutes per side, brushing with glaze during the last 3 minutes. Serve with salsa.

4 boneless pork chops (1 lb.), 3/4 inch thick
1 lime, cut in half
2 cups chopped English cucumbers
1 avocado, chopped
1/4 cup finely chopped red onions
1 clove garlic, minced
2 Tbsp. chopped fresh cilantro

Steps:

  • Heat oil in large nonstick skillet on medium-high heat. Meanwhile, sprinkle taco seasoning evenly onto both sides of chops.
  • Add chops to skillet; cook 3 min. on each side or until done (145°F). Remove chops from heat; let stand 3 min.
  • Meanwhile, cut 1 lime half into 4 wedges; reserve for later use. Combine cucumbers, avocados, onions, garlic and cilantro in large bowl. Squeeze juice from remaining lime half. Add to vegetable mixture; mix lightly.
  • Serve chops with cucumber mixture and reserved lime wedges.

2/3 cup fat-free Italian salad dressing
2/3 cup salsa
2 tablespoons lime juice
2 tablespoons fresh cilantro, minced
6 garlic cloves, minced
1/2 cup red onion, minced
4 teaspoons lime zest
1/2 teaspoon hot pepper sauce (to taste)
6 boneless pork loin chops
1 avocado, chopped

Steps:

  • In a bowl, combine the first eight ingredients. Pour 1/2 cup into a large resealable plastic bag; add the pork chops. Seal bag and turn to coat; refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade.
  • Drain and discard marinade from chops. Place on a broiler pan rack. Broil 4 inches from the heat for 7 minutes on each side or until juices run clear. Baste with reserved marinade.
  • Serve topped with remaining marinade and garnished with avocado and cilantro.

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 can (15 ounces) black beans, rinsed and drained
3/4 cup chicken broth
1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
4 bone-in pork loin chops(1/2 inch thick and 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice
2 tablespoons minced fresh cilantro, optional

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Meanwhile, in another skillet, brown pork chops on both sides in remaining oil over medium-high heat. Sprinkle with salt and pepper. Pour tomato mixture over chops. Cover and simmer for 10-15 minutes or until a thermometer reads 160°. Using a slotted spoon, serve over rice. Sprinkle with cilantro if desired. Freeze option: Cool pork chop mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in pork reads 165°, stirring occasionally and adding a little broth or water if necessary. Serve as directed.
