8 pork loin or rib chops, 1/2 inch thick (2 1/2 pounds)

Steps:

  • Mix all ingredients except pork.
  • Spread chili powder mixture evenly on both sides of pork. Cover and refrigerate at least 30 minutes but no longer then 24 hours.
  • Heat coals or gas grill for direct heat. Cover and grill pork 4 to 6 inches from medium heat 10 to 12 minutes, turning frequently, until slightly pink when cut near bone.

2 cups corn kernels ((2 ears of corn))
1 small jalapeño (seeded and minced)
¼ cup red onion (diced, ¼-inch dice)
¼ cup cucumber (diced, seeded and ¼-inch dice)
¼ cup bell pepper (diced, ¼-inch dice)
½ cup baby tomatoes (quartered)
½ avocado (¼-inch dice)
1 tablespoon olive oil
2 tablespoons lime juice (plus zest of 1 lime)
¼ cup cilantro (chopped)
2 pounds bone-in pork chops ((6 portions, ½-inch thick))
kosher salt (as needed for seasoning)
black pepper (as needed for seasoning)
1 teaspoon garlic powder
1 teaspoon cumin
¼ teaspoon cayenne powder
½ teaspoon smoked paprika
olive oil (as needed for pork)

Steps:

  • Lightly brush each corn cob with olive oil and sprinkle salt and pepper.
  • Heat grill to high heat. Add a small amount of vegetable oil on a folded piece of paper towel, and then carefully grease the grill grates.
  • Once the grill is nice and hot, add the corn. Close the lid and cook about 2-3 minutes on each side, flipping and covering, about 12 minutes total. You want to achieve some char marks on each side. Set corn aside and allow it to cool enough to handle. Reduce grill heat to medium-high.
  • Carefully cut the corn kernels off the cob on a cutting board.
  • In a medium-sized bowl, combine the corn, jalapeno, red onion, cucumber, bell pepper, tomatoes, avocado, 1 tablespoon olive oil, lime zest, lime juice, and cilantro. Toss together and season with salt and pepper as desired. Set aside and make the pork.
  • Generously season both sides of the pork chop with salt and pepper.
  • In a small bowl mix the garlic powder, cumin, cayenne powder, and paprika. Sprinkle each side of the pork chops with about ¼ teaspoon of spice mix on each side.
  • Lightly brush both sides of the pork with olive oil.
  • Cook first side of pork covered, for about 3 minutes. Flip over and cook uncovered another 1-2 minutes, until the pork reaches an internal temperature of 135-140°F, or until no longer pink. Remove from the grill and transfer to a clean plate. Serve warm with corn salad.

1/4 cup extra-virgin olive oil
4 bone-in pork chops (1/2 to 3/4 inch thick; about 1 3/4 pounds)
Kosher salt and freshly ground pepper
5 ears of corn, kernels removed (or 3 cups thawed frozen corn)
1 red onion, thinly sliced
3 cloves garlic, thinly sliced
1/4 to 1/2 teaspoon red pepper flakes
3 tablespoons white balsamic or white wine vinegar
2 tablespoons honey
1 5-ounce container baby arugula (about 8 cups)
1 cup torn fresh basil

Steps:

  • Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Season the pork with salt and pepper and add to the skillet. Cook until browned and just cooked through, about 3 minutes per side. Remove to a plate and loosely cover with foil to keep warm.
  • Wipe out the skillet and heat 1 more tablespoon olive oil over medium-high heat. Add the corn, red onion and 1/2 teaspoon salt. Cook, without stirring, until the corn starts browning, about 3 minutes. Stir and continue cooking until charred and tender, about 2 more minutes. Add the garlic and red pepper flakes and cook until softened, about 30 seconds. Stir in 2 tablespoons vinegar and the honey; remove from the heat.
  • Combine the arugula and the remaining 2 tablespoons olive oil and 1 tablespoon vinegar in a large bowl. Season with salt and pepper and toss. Divide the pork and arugula among plates. Stir the basil into the corn mixture and spoon over the pork.

1 medium onion, chopped
2 tablespoons olive oil, divided
1-1/2 teaspoons minced garlic
2 cans (14-1/2 ounces each) diced tomatoes, drained
1 can (15 ounces) black beans, rinsed and drained
3/4 cup chicken broth
1-1/2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
4 bone-in pork loin chops(1/2 inch thick and 6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
Hot cooked rice
2 tablespoons minced fresh cilantro, optional

Steps:

  • In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Meanwhile, in another skillet, brown pork chops on both sides in remaining oil over medium-high heat. Sprinkle with salt and pepper. Pour tomato mixture over chops. Cover and simmer for 10-15 minutes or until a thermometer reads 160°. Using a slotted spoon, serve over rice. Sprinkle with cilantro if desired. Freeze option: Cool pork chop mixture. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat through slowly in a covered skillet until a thermometer inserted in pork reads 165°, stirring occasionally and adding a little broth or water if necessary. Serve as directed.

3 teaspoons southwestern seasoning mix
2 tablespoons chopped fresh cilantro
2 teaspoons butter or margarine, melted
1 teaspoon lime juice
2 ears frozen corn-on-the-cob

Steps:

  • Heat gas or charcoal grill for indirect cooking as directed by manufacturer. Sprinkle pork chops with 2 teaspoons of the seasoning mix. Let stand at room temperature no more than 5 minutes.
  • Meanwhile, in small bowl, mix cilantro, melted butter, lime juice and remaining 1 teaspoon seasoning mix. Coat corn with 1 tablespoon cilantro mixture; reserve remaining mixture. Wrap each ear of corn in heavy-duty foil, sealing edges well and leaving room for heat expansion.

1 teaspoon ground cumin
1 teaspoon mustard powder

2 small pork tenderloins (about 1 1/2 pounds total)
4 ears corn, husked
3/4 cup apple cider vinegar
3 tablespoons packed light brown sugar

Steps:

  • Make the pork: Combine the paprika, 2 teaspoons salt, 1/2 teaspoon pepper, the brown sugar, cumin, mustard powder, onion powder and garlic powder in a bowl. Rub the olive oil all over the pork, then coat with the spice rub. Wrap each tenderloin tightly in plastic wrap and refrigerate 3 to 6 hours.
  • Make the sauce: Combine the vinegar, 1/2 cup water, the brown sugar, ketchup, red pepper flakes and 1 teaspoon salt in a small saucepan over medium heat. Bring to a simmer, stirring until the sugar dissolves; remove from the heat.
  • Remove the pork from the refrigerator about 30 minutes before grilling. Preheat a grill to medium high. Cook the pork, turning occasionally, until a thermometer inserted into the thickest part registers 140 degrees F to 145 degrees F, about 20 minutes. Transfer to a cutting board and let rest 15 minutes.
  • Meanwhile, brush the corn with olive oil; grill, turning, until marked, about 5 minutes. Slice the pork and drizzle with the sauce. Serve with the corn.

1/4 cup barbecue sauce
3 tablespoons fresh lime juice (from about 3 limes)
2 tablespoons extra-virgin olive oil, plus more for brushing
1 1/2 pounds pork tenderloin, trimmed of excess fat (about 2 small tenderloins)
Kosher salt and freshly ground pepper
2 ears corn, shucked
1 14-ounce bag shredded coleslaw mix
1 tablespoon white vinegar
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat a grill to medium high. Make the sauce: Whisk the yogurt, barbecue sauce and 1 tablespoon each lime juice and olive oil in a bowl. Reserve 1/4 cup of the sauce for the pork; set the rest aside.
  • Season the pork with 1/4 teaspoon each salt and pepper. Brush the grill grates with olive oil. Grill the pork, turning and brushing with the reserved 1/4 cup sauce, until marked on all sides and a thermometer inserted into the thickest part registers 145 degrees F, 20 to 25 minutes. Transfer the pork to a cutting board and let rest 10 minutes.
  • When the pork is about halfway done, put the corn on the grill and cook, turning, until slightly charred, about 10 minutes. Let cool slightly, then cut the kernels off the cob. Toss with the coleslaw mix, vinegar, cilantro, the remaining 2 tablespoons lime juice and 1 tablespoon olive oil, 1/2 teaspoon salt, and pepper to taste in a bowl.
  • Slice the pork and divide among plates. Serve with the slaw and the remaining sauce.

1 (18 ounce) can creamed corn (2 cans if your corny)
salt and pepper
garlic salt

Steps:

  • Season chops with salt, pepper, garlic salt; brown chops in skillet.
  • Drain the chops of grease and then add 1/2 cup water. Cover and simmer 45 minutes; add can(s) of cream corn to cover chops and salt and pepper corn to taste.
  • Cover and simmer for at least 15 minutes more or until pork is done.
  • You can bake these puppies in oven if you want at 350° for the same amount of time. I cook longer cause I like my pork really done.

1 cup Progresso™ chicken broth (from 32-oz carton)
1 cup uncooked instant rice
2 teaspoons Mexican seasoning
1/2 cup frozen whole kernel corn (from 1-lb bag)
1/4 cup chopped bell pepper
2 medium green onions, sliced (2 tablespoons)
2 pork boneless rib or loin chops, 3/4 to 1 inch thick (4 oz each)
1 teaspoon Mexican seasoning
Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • Heat gas or charcoal grill. Cut two 18x12-inch pieces of heavy-duty foil. Spray half of one side of each piece with cooking spray.
  • In 1 1/2-quart saucepan, heat broth to boiling; remove from heat. Stir in rice and 2 teaspoons Mexican seasoning; let stand about 5 minutes or until broth is absorbed. Stir in corn, bell pepper and onions.
  • Sprinkle each pork chop with 1/2 teaspoon Mexican seasoning; place on center of sprayed half of foil. Spoon rice mixture over pork. Fold foil over pork and rice so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
  • Cover and grill packets over medium heat 15 to 20 minutes or until pork is no longer pink in center and meat thermometer inserted in center reads 160°F. Place packets on plates. Cut large X across top of each packet; fold back foil. Serve with salsa.
