- In a large cast-iron or other heavy skillet, heat butter over medium-high heat. Add corn; cook and stir until tender, 3-5 minutes. Reduce heat to medium-low; stir in tomato, lime juice, salt and cumin. Cook until heated through, 3-4 minutes. Remove from heat; stir in cilantro.

This potato salad is colorful, flavorful and creamy with a light sweetness and delicious taste of chiles.

Steps:
- Preheat oven to 325°F.
- Cut off the top third of the garlic head so the cloves are exposed.
- Place garlic in a small baking dish or ramekin and drizzle lightly with olive oil.
- Turn garlic cut side down and roast for 60-75 minutes at 325F or until cloves have softened.
- Increase oven temperature to 400°F.
- Lightly oil a large baking sheet and set aside.
- Place russet-type potatoes in a large mixing bowl and toss with 1 tablespoon olive oil.
- Spread in a flat layer on baking sheet.
- In the same mixing bowl, toss zucchini and sweet potatoes with 2 tablespoons of olive oil and 2 tablespoons balsamic vinegar.
- Spread in a flat layer on baking sheet as well.
- Roast vegetables at 400F for 30 minutes, or until tender.
- Allow to cool.
- Squeeze roasted garlic cloves into a large mixing bowl and mash lightly with a fork.
- Add thawed peas, minced sage, honey, scallions, cayenne pepper, dijon mustard, mayonnaise, toasted pine nuts, salt, pepper, chili powder, and cumin to the garlic in the mixing bowl and stir until blended.
- Fold in the roasted vegetables and chopped egg.
- Cover and refrigerate several hours before serving.

- Char poblano chilies directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag 10 minutes. Peel, seed, and coarsely chop chilies. (Can be prepared 1 day ahead. Cover; chill.)
- Melt butter in large nonstick skillet over medium-high heat. Add cumin seeds and stir until fragrant, about 1 minute. Add onion and sauté until almost tender, about 6 minutes. Add corn, oregano, 1 teaspoon chipotle chilies, and poblano chilies and sauté until corn is heated through, about 5 minutes. Stir in radishes, 1/2 cup cilantro, lime juice, and lime peel. Sauté until radishes are slightly softened but still retain their color, about 2 minutes. Add more chipotle chilies by 1/2 teaspoonfuls, depending on spiciness desired. Season generously with salt and pepper. Transfer to bowl. Sprinkle with remaining 1/4 cup cilantro. Garnish with lime wedges, if desired, and serve.

- Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 5 minutes. Drain potatoes and toss with oil., Grill poblanos, covered, over high heat 8-10 minutes or until skins are blistered and blackened on all sides, turning occasionally. Immediately place peppers in a small bowl; let stand, covered, 20 minutes. - Prepwork: Chop vegetable ingredients, drain corn and add 1 tsp lime juice to marinate corn and 2 tsp sugar. Combine 1 cup ricotta cheese with 1 tbl spoon mayo, 2 tbl spoons sour cream and 2 tsp lime juice with 1/4 cup chopped cilantro and 1/2 cup chopped celery, 3/4 cup green onion, 1/4 cup green bell pepper. Meanwhile, in skillet. heat up olive oil and brown Simply Potatoes Hashbrowns ( Prefer Southwest flavor) add 1/4 cup chopped red bell pepper. Season potatoes with a tsp of chili powder, paprika and 1 tsp spoon cumin. Drain potatoes and combine in serving bowl with the white mixture. Garnish with Taco cheese, red bell pepper and fritos with a sprig of cilantro to top.

- Remove 1 chipotle chile from can. Chop chile to measure 2 teaspoons. Reserve remaining chiles and adobo sauce for another use.
