This is my favourite recipe for curried scallops. It is creamy and rich, with a nice tangy flavour to the sauce. This is the mixture I use for my curried scallop pies, or you can just serve it over rice.

500 g scallops
45 g butter
2 tablespoons flour
2 teaspoons curry powder
1 1/2 cups skim milk
1/2 cup low-fat mayonnaise
2 teaspoons lemon juice
1 egg
1 onion, finely chopped

Steps:

  • Melt butter, add onion and cook gently until softened.
  • Add flour and curry powder, mix well.
  • Gradually add milk and mayonnaise, stirring continuously.
  • Cook until sauce starts to thicken, then add scallops.
  • Leave on heat until scallops are just cooked - Don't over cook them!
  • Remove from heat, add egg and lemon juice.
  • Stir well, and serve hot over rice, or leave to cool and make into pies.

SCALLOPS WITH CURRIED CAULIFLOWER

1 small head cauliflower, cut into florets
1 red onion, cut into 1/2-inch wedges
5 tablespoons extra-virgin olive oil
Kosher salt
2 cloves garlic, grated
1 tablespoon curry powder
1 1/4 pounds medium sea scallops (about 24), ?foot? muscles removed
1/3 cup golden raisins
1/4 cup roasted salted cashews
1/2 cup fresh cilantro
1/2 cup plain low-fat yogurt
Lime wedges, for serving

Steps:

  • Put a baking sheet on the middle oven rack and preheat to 450 degrees F. Toss the cauliflower, red onion, 3 tablespoons olive oil, 1/2 teaspoon salt, the garlic and curry powder in a large bowl. Spread on the hot baking sheet and roast, without stirring, until very tender and well browned in spots, about 25 minutes.
  • Meanwhile, heat the remaining 2 tablespoons olive oil in a large nonstick skillet over high heat. Season the scallops with salt, add to the skillet and cook, undisturbed, until well browned on the bottom, about 3 minutes. Flip and cook until no longer translucent, about 1 more minute; transfer the scallops to a plate.
  • Toss the cauliflower mixture with the raisins and cashews and divide among plates. Top with the scallops and cilantro; drizzle with the yogurt. Serve with lime wedges.

TASSIE CURRY SCALLOP PIE

I came up with this recipe after reading a forum request and concensus was that it was delicious. Adjust the amount of curry powder to taste, two tablespoons is relatively strong. You can also prepare a few hours in advance, pop it all in the fridge and bake later, which is what I did.

350 g scallops (preferably Tasmanian)
1 tablespoon unsalted butter
1 medium brown onion, diced
1 -2 tablespoon curry powder
1 1/2 cups reduced-fat milk
2 tablespoons plain flour
400 g potatoes (uncooked weight)
2 tablespoons plain flour
350 g puff pastry (2 frozen sheets)

Steps:

  • Quarter potatoes and boil until soft, around 20 minutes.
  • Slightly cool potatoes under cold running water, peel skin and mash with half a cup of the milk and then set aside, it will be runny.
  • Melt butter in large saucepan over medium heat and saute onion a few minutes until soft.
  • Add curry powder and stir fry for one minute.
  • Blend half a cup of milk with the flour.
  • Add milk / flour fix and scallops to saucepan and bring to boil, stirring constantly.
  • Cook further two minutes continuing to stir, remove scallops and reserve.
  • Add mashed potato to saucepan, mix well and return to low to medium heat, stirring constantly for a few minutes.
  • Reduce heat to low and allow to simmer for 10 minutes, stirring occasionally.
  • Cut scallops in half and return to saucepan along with last 1/2 cup milk and allow to simmer a further 20-30 minutes until thickened.
  • Remove from heat and allow to cool while preparing the pastry, stirring once or twice.
  • Allow pastry sheets to thaw for 10 minutes or so at room temperature.
  • Place a 200mm (8") cake dish (must be around 50mm or 2" deep) over the top of one sheet of pastry and scribe around it with a knife to form the lid for the pie.
  • Lightly grease the dish and fold the other sheet of puff pastry into the bottom to form the base. You may need some reserved pastry from the lid to tidy things up depending on the size of the sheets.
  • Pour the cooled mixture into the dish and place the pastry lid over the top, folding the edges up and trimming as required to make it neat.
  • Brush the top of the pastry with either water or milk and prick with a knife a few times in the middle to form some vent holes.
  • Bake in preheated oven at 230°C (450°F) for 20 minutes.

Nice way to enjoy scallops. The use of flour with curry powder might sound unusual because of the natural thickening effect of the curry, but I find it gives a bit of bulk to the curry without making it too strong.

1 tablespoon garlic, crushed
1 medium onion, finely diced
1 medium red capsicum, diced
1/4 teaspoon ground black pepper

1 tablespoon flour

Steps:

  • Heat oil in a wok over medium temperature and saute garlic, onion and capsicum a few minutes.
  • Add scallops, season with pepper and sprinkle curry powder over the top, mix well and cook around one minute stirring to cover scallops with the curry powder.
  • Reduce temperature a little, add cream, milk and wine and cook gently around 5 minutes.

800 mls Coconut Milk ((2 cans) I use Thai Kitchen regular coconut milk)
1 tsp Lime Juice ((or to taste))

1 tsp Salt ((or to taste) For authentic flavor, use fish sauce instead of salt.)
8 c Frozen Swimming Scallops in shell
1/2 c Each: Basil and Cilantro

Steps:

  • In a large pot or saucepan with lid, heat oil on medium heat. Add and saute onion, garlic and ginger until soft and fragrant.
  • Add curry paste, stir and cook 2-3 more minutes, then add coconut milk and stir. Simmer on low for 15 minutes.
  • Add rinsed frozen scallops. Stir and put lid on. Cook 5 minutes (until most scallops have opened).
  • Sprinkle basil and cilantro over top and serve immediately with rice or naan bread.

Steps:

  • Cook carrots in large pot of boiling salted water 2 minutes. Add cucumbers and cook until all vegetables are crisp-tender, about 1 minute longer. Drain well. Pat scallops dry with paper towels. Sprinkle with salt and pepper. Melt 2 tablespoons butter with oil in heavy large skillet over high heat. Working in batches, add scallops; sauté until golden and just cooked through, about 2 minutes per side. Transfer to platter.
  • Add cream, ginger and curry powder to same skillet. Add any accumulated juices from scallops on platter. Reduce heat to medium. Simmer until slightly thickened, about 3 minutes. Add remaining 2 tablespoons butter; whisk until melted. Season to taste with salt and pepper. Return scallops to skillet. Add carrots and cucumbers; toss to combine. Cook just until scallops and vegetables are heated through, about 1 minute.

Sauté just until shrimp turn pink, about 4 minutes. Add cream and lemon peel. Simmer until shrimp and scallops are just opaque in center and sauce thickens slightly, about 5 minutes.   • Cook peas on stovetop with water (1/4 cup) according to package directions (do not drain). Pulse in a food processor with cooking water, butter, scallions, lime juice (to taste), and 1/4 teaspoon salt to a coarse purée. Season with salt.
  • Stir together curry powder and 1/2 teaspoon each of salt and pepper on a plate. Pat scallops dry and coat all over with curry mixture.
  • Heat oil in a large nonstick skillet over medium-high heat until hot, then sauté scallops in 2 batches, turning once, until browned and just cooked through, about 4 minutes per batch. Transfer with tongs to a clean plate. Serve scallops over pea purée.

Steps:

  • Remove tough muscle from side of each scallop if necessary. Pat scallops dry and sprinkle with curry powder and salt and pepper to taste. Heat 1/2 tablespoon oil in a large nonstick skillet over moderately high heat until hot but not smoking, then sear scallops in 2 batches, adding another 1/2 tablespoon oil if necessary, until golden, 1 to 2 minutes on each side. Transfer scallops to a plate.
  • Add remaining tablespoon oil to skillet, then cook ginger and garlic over moderate heat, stirring, until fragrant, about 30 seconds. Add zucchini and salt and pepper to taste, then cook, stirring frequently, until crisp-tender, 4 to 5 minutes.
  • Return scallops to skillet with any juices accumulated on plate and toss with zucchini just until heated through, about 1 minute.

600g (shelled weight) queen scallops , cleaned
1 tbsp coconut or groundnut oil
½ tsp black mustard seeds
¼ tsp cumin seeds
1 onion , very finely chopped
2 green chillies , halved, deseeded and finely sliced
4 garlic cloves , very finely chopped
2.5 cm cube of ginger , peeled and grated
20 curry leaves (or 40 dried)
½ tsp ground turmeric
400ml can coconut milk
12 cherry tomatoes , halved
squeeze of lime juice or lemon juice (to taste)
1½ tbsp chopped fresh coriander , to serve
plain boiled rice , to serve

Steps:

  • Look at the scallops to find a little white bit at the side - this becomes tough when cooked, so cut it off (watch our how to prepare scallops video to find out more). If you have small queen scallops, you probably won't need to halve them, but if you have large ones, slice them in half horizontally.
  • Heat the oil and add the mustard and cumin seeds. Cook until the mustard seeds start to pop, then add the onion, chillies, garlic, ginger and curry leaves. Cook for 12 mins or until the onion is golden and the ginger no longer tastes 'raw'. Add the turmeric, cook for 1 min, then add the coconut milk. Bring to a simmer, season and add the tomatoes. Cook for 12-15 mins or until the mixture is slightly thicker and reduced. (If you want to cook this in advance - and the base does taste better after a day in the fridge - stop now, cool and chill. When reheating, bring it to just under the boil before you add the scallops.)
  • Add the scallops (and prawns or fish, if using) and cook gently for 5 mins (longer if you're using meaty chunks of fish fillet) or until cooked through. Add lime or lemon juice to taste and season well. Scatter with coriander and serve with rice.

This is a lovely curry from Australian chef David Thompson. If you can't get scallops, other seafoods are easily substituted. Try mussels, clams, prawns or even a fish such as salmon.

2 cups coconut cream
1 tablespoon palm sugar
2 tablespoons fish sauce
1 cup coconut milk or 1 cup stock
12 -16 small scallops, cleaned
4 kaffir lime leaves, shredded
1 little red chile, julienned
1/2 cup coriander leaves
5 -8 long dried red chilies, soaked and drained
1 pinch salt
5 slices galangal or 5 slices ginger
3 tablespoons chopped lemongrass
4 tablespoons chopped garlic
3 tablespoons sliced red shallots
1 tablespoon coriander, chopped
10 white peppercorns
1 1/2 teaspoons shrimp paste

Steps:

  • First make the paste, using the listed ingredients.
  • The traditional way to do this is to add individual ingredients in a certain order (from the hardest and driest to the softest and wettest), with each being reduced to a pulp before the next is added.
  • A pestle and mortar is the ideal tool for this.
  • When the paste is made, crack the coconut cream over medium heat, add 3 tablespoons of the paste and fry, stirring regularly, for at least 5 minutes and until fragrant.
  • Season with sugar and fish sauce.
  • Add coconut milk and simmer until reduced.
  • Add scallops and half the kaffir lime leaves, simmering until the scallops are just cooked.
  • Check the seasoning, then arrange the scallops on a plate.
  • Drizzle over the coconut cream, sprinkle with the remaining lime leaves, red chilli and coriander.

This light and quick entree is elegant enough for guests but filled with wonderful flavor. A bag of scallops can be purchased from the freezer case; they defrost in minutes. This recently published recipe came from the Arizona Daily Star newspaper. We loved it and I think you will too. Serve with my Rice with Carrots; they look lovely together. Hope one of you gets a photo of it for me (hint, hint:)

1 1/2 tablespoons curry powder (if yours is more than 6 months old, buy new, it loses it flavor quickly)
olive oil flavored cooking spray
salt & fresh ground pepper
2 tablespoons apricot jam
3 tablespoons heavy whipping cream
2 tablespoons sliced scallions

Steps:

  • Rinse and drain scallops, and pat dry with a paper towel. Toss with the curry powder, coating all sides.
  • Heat a nonstick skillet on high and spray with olive oil. Saute scallops 3 minutes per side. Add salt and pepper to taste and remove to a bowl.
  • Add 1/4 cup water and the apricot jam to the skillet; simmer 30 seconds, stirring to melt jam. Add cream and simmer 1 minute to thicken. Add salt and pepper to taste.
  • Spoon sauce over scallops and sprinkle scallions on top.
