Layered Southwestern Avocado Dip made with a smooth avocado mixture, black beans, sweet corn and tomatoes.

2 ripe avocados (peeled and pit removed)
1 cup light sour cream
1/8 teaspoon ground cumin
1/8 teaspoon ground chili powder
salt and fresh ground pepper, (to taste)
2 tablespoons lime juice
1 can (15 ounces) black beans, (rinsed)
1 cup sweet corn kernels
1 tomato (diced)
chopped parsley or cilantro, (for garnish)
Tortilla Chips, (for serving)

Steps:

  • Combine avocados, sour cream, cumin, chili powder, salt, pepper and lime juice in a blender; blend until smooth. If it's too thick, add more sour cream. Taste for seasonings and adjust accordingly.
  • In a small mixing bowl, mix together black beans, sweet corn kernels, and chopped tomato.
  • In a serving bowl, layer 1/3 of the black beans mixture; top with 1/3 of the avocado mixture.
  • Continue to layer, finishing with black beans mixture on top.
  • Garnish with parsley or cilantro.
  • Place in refrigerator for 15 to 30 minutes, or until chilled.
  • Serve with tortilla chips.

1 teaspoon kosher salt
1/3 cup chopped fresh basil

Steps:

  • To a food processor, add the cannellini beans, avocados, lemon juice and salt. Process until smooth, stopping to scrape down the sides with a rubber spatula as needed. Add the basil and pulse to incorporate. Serve alongside cut vegetables and toasted bread.

2-1/2 cups shredded cooked chicken
1-1/2 cups shredded Mexican cheese blend
2/3 cup frozen corn, thawed
2/3 cup canned black beans, rinsed and drained
5 green onions, chopped
1/4 cup minced fresh cilantro
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon grated lime zest
1/4 teaspoon cayenne pepper
20 egg roll wrappers
Oil for deep-fat frying
DIP:
1 cup ranch salad dressing
1 medium ripe avocado, peeled and mashed
1 tablespoon minced fresh cilantro
1 teaspoon grated lime zest

Steps:

  • In a large bowl, combine the first 10 ingredients. Place 1/4 cup of chicken mixture in the center of one egg roll wrapper. (Keep remaining wrappers covered with a damp paper towel until ready to use.) Fold bottom corner over filling. Fold sides toward center over filling. Moisten remaining corner with water; roll up tightly to seal. Repeat., In an electric skillet or deep-fat fryer, heat oil to 375°. , Fry egg rolls, a few at a time, for 2 minutes on each side or until golden brown. Drain on paper towels., Meanwhile, combine the dip ingredients. Serve with egg rolls.

1 small avocado
400g can cannellini beans , drained
1 garlic clove , finely grated
½ tsp chilli flakes , plus extra to serve
½ tsp ground cumin
1 lemon , zested and juiced
3 tbsp avocado oil , plus extra for drizzling
mixed seeds , crackers or crudités, to serve (optional)

Steps:

  • Scoop the avocado flesh into a blender or small food processor. Add the beans, garlic, spices, lemon zest and juice and oil. Blitz until completely smooth, loosening with 50-100ml water, if needed. Season.
  • Spoon into a bowl and top with extra chilli flakes and avocado oil. Serve with the seeds scattered over, and crackers or crudités, if you like.
