Enjoy this two-in-one turkey and stuffing recipe for Thanksgiving. Autumnal ingredients such as sage and dried cranberries add lively flavor to this hearty meal.

2 tablespoons extra-virgin olive oil
2 pounds ground turkey (85 percent lean) or ground chicken
1 teaspoon rubbed sage
3 tablespoons all-purpose flour
3 1/2 cups low-sodium chicken broth
Coarse salt and ground pepper
1 yellow onion, diced medium
3 celery stalks, diced medium
1 loaf crusty white bread, cut into large cubes (8 cups)
2/3 cup dried cranberries
2 large eggs, lightly beaten
2 tablespoons unsalted butter, cut into small pieces

Steps:

  • Preheat oven to 425 degrees. In a large skillet, heat 1 tablespoon oil over medium-high. Add turkey and cook, breaking up meat with a wooden spoon, until browned, 8 to 10 minutes. Add sage and flour and stir to coat. Add 1 1/2 cups broth and cook, stirring and scraping up any browned bits, until liquid is thickened, 2 minutes. Season with salt and pepper and transfer mixture to an 8-inch square baking dish.
  • Rinse out skillet; wipe dry. Return to heat and add 1 tablespoon oil. Add onion and celery and cook until softened, 8 minutes. Remove from heat and add bread, cranberries, and 2 cups broth; toss until combined. Stir in eggs. Spoon bread mixture over turkey mixture; dot with butter. Bake until juices are bubbling and bread is golden brown, 20 to 25 minutes. Let cool 10 minutes before serving.

1 cup chopped onion (2 medium)
4 slices bacon, cut into small pieces
4 cups seasoned cornbread stuffing mix
1 1/2 cups water
2 cups frozen chopped broccoli
1/2 teaspoon dried thyme leaves
1/2 teaspoon seasoning salt
1/2 teaspoon garlic powder
1/8 teaspoon ground red pepper
2 (3/4 lb) turkey breast tenderloins

Steps:

  • Heat oven to 350.
  • Spray 11x7-inch (2 quart) glass baking dish with nonstick cooking spray.
  • In Dutch oven, cook onions and bacon over medium-high heat 4 to 5 minutes or until bacon is browned and onions are tender, stirring occasionally. Remove from heat.
  • Add cornbread mix and water; mix well. Stir in broccoli. Spread in sprayed baking dish.
  • In small bowl, combine thyme, seasoned salt, garlic powder and ground red pepper; mix well. Rub on turkey tenderloins. Arrange over stuffing mixture, press into stuffing slightly. Cover with foil.
  • Bake 1 hour. Uncover baking dish; bake 10 to 15 minutes longer or until turkey is no longer pink in center. To serve, cut turkey into crosswise slices.

6 cups brioche, cubed and toasted
1 pound country ham, cubed
4 ounces (1 stick) butter
2 onions, chopped
4 ribs celery, chopped
3 tablespoons minced garlic
1/2 cup parsley, chopped
1/4 cup green onion, chopped
2 teaspoons dried sage
1 teaspoon file gumbo powder
1 cup chicken stock

Steps:

  • Preheat oven to 325 degrees F.
  • Toast bread cubes for 10 to 15 minutes until golden. Transfer to bowl. Raise oven heat to 425 degrees F.
  • Saute ham, in a skillet over medium heat, until brown, about 5 to 10 minutes. Transfer meat to bread bowl.
  • In same skillet, melt butter. Add onions, and celery to skillet. Saute until soft, about 10 minutes. Combine softened vegetables, herbs, spices, with bread meat mixture. Add just enough stock to moisten bread mixture. Pack the neck and cavity loosely with stuffing, folding the neck skin under and fastening with a skewer. Or lightly pack stuffing into large stoneware baking dish.
  • For a stuffed bird: Roast turkey at 425 degrees for 30 minutes, then turn oven down to 325 and roast bird for 15 minutes per pound, or until turkey temperature reaches 180 degrees and juices run clear when thigh is pierced.
  • For loose stuffing: Drizzle with stock, cover, and bake for 1 hour. Uncover and bake an additional 1/2 hour.

2 tablespoons butter
2 pounds ground turkey, at room temperature and patted dry
About 2 teaspoons Worcestershire sauce
Salt and freshly ground black pepper

2 ribs celery, chopped
1 carrot, chopped
1 onion, chopped
1 small potato, peeled and chopped
2 tablespoons finely chopped fresh thyme
2 tablespoons flour
2 to 2 1/2 cups turkey or chicken stock
1/2 cup organic frozen peas
6 tablespoons butter, cut into pieces
3 to 4 ribs celery with leafy tops, chopped
2 small apples, such as Macintosh or Honeycrisp, chopped
1 large fresh bay leaf
1 onion, chopped
About 1 tablespoon poultry seasoning, such as Rachael Ray Perfect Poultry Seasoning
Salt and freshly ground black pepper (if not included in the poultry seasoning blend)

1 bag traditional seasoned stuffing mix, such as Pepperidge Farm, or 5 cups cubed stale bread
About 3 cups turkey or chicken stock

Steps:

  • For the turkey filling: Heat the EVOO in a large, deep skillet over medium-high heat and melt in the butter. Add the turkey and cook, crumbling the meat, until browned. Season with the Worcestershire and some salt and pepper. Add the celery, carrots, onions, potatoes and thyme and cook, partially covered, to soften the vegetables, 8 to 10 minutes. Stir in the flour and cook for 1 minute; add the stock and cook to thicken. Stir in the peas until warmed through. Transfer the mixture to a casserole dish.
  • For the stuffing: Heat a large skillet over medium heat and add the butter. When melted, add the celery, apples, bay leaf and onions. Add the poultry seasoning and salt and pepper if using and cook until tender, 12 to 15 minutes. Add the stuffing mix and moisten with the stock. Arrange the stuffing on top of the turkey filling and dot with butter.
  • Cool and store for a make-ahead meal, or bake to serve immediately. If baking immediately, bake at 375 degrees F until brown, bubbly and crisp on top, 15 to 20 minutes. If baking later, bring to room temperature and bake at 375 degrees F until brown, bubbly and crisp on top, 40 to 45 minutes.

This dressing is adapted from "The Silver Palate Cookbook. It's rich and is always a big hit. No other bread is needed on the Thanksgiving table. Cook your turkey about 12-15 minutes per lb. at 325 degrees, basting frequently.

6 tablespoons butter
2 1/2 cups onions, finely chopped
6 tablespoons butter
3 tart apples, peeled, cored and chopped
1 lb pork sausage
3 cups cornbread, coarsely crumbled
3 cups whole wheat bread, coarsely crumbled
3 cups sourdough bread or 3 cups French bread, coarsely crumbled
1 1/2 teaspoons dried thyme
1 teaspoon dried sage
salt, to taste
black pepper, freshly ground, to taste
1/2 cup fresh parsley, chopped
1 cup pecans, chopped
2 eggs, lightly beaten
chicken stock or turkey broth, to moisten

Steps:

  • Melt 6 tablespoons butter in a large frying pan. Add onions. Cook over medium heat until onions are quite soft and tender, about 15 minutes. Transfer onions and butter to a large mixing bowl. Set aside. Melt another 6 tablespoons butter in the same frying pan. Add apple. Cook over medium heat, until lightly colored but not mushy. Transfer apples and butter to mixing bowl with onions.
  • Crumble sausage into frying pan. Cook over medium heat, until lightly browned. With a slotted spoon, transfer sausage to mixing bowl. Reserve fat. Add remaining ingredients, except eggs and stock, to mixing bowl. Mix well. Add eggs. Mix. Add enough stock to bowl to make a moist, but not runny, mixture. Add fat to stuffing if desired. Stuff a 20-lb. turkey. If cooking dressing separately from turkey, pour fat over dressing in casserole. Bake at 325 degrees Fahrenheit for 45 minutes, or until nicely browned and cooked through.

This recipe was handed down by my great-grandmother. It is a family favorite that we make every Thanksgiving. This traditional stuffing has a crispy top with a moist inside. No need to worry about stuffing the turkey this year! This tasty side-dish bakes in a casserole dish or Pyrex bowl.

8 cups soft bread cubes, unseasoned
1 medium onion, diced
2 stalks celery, chopped
1/2 cup fresh parsley, diced
1/4 cup butter, melted
1 egg, beaten
1 teaspoon poultry seasoning
1 cup milk, approximately
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Mix onion, celery, parsley, melted butter, egg and poultry seasoning in a large bowl. Stir.
  • Add bread crumbs and stir with a spoon to evenly distribute the mixture.
  • Slowly drizzle milk over bread while stirring until bread cubes are moist but NOT soggy. (May need a bit more or less milk than this recipe calls for.).
  • Stir in salt and pepper.
  • Pour in a greased casserole dish or Pyrex bowl. (A 9x14" baking dish will do in a pinch).
  • Bake at 350 degrees for 35-45 minutes or until bread cubes on top are crispy.
