SOUTHERN PEACH COBBLER
Our peach cobbler can easily be made with either fresh or frozen peaches. Great dessert for most any meal and a real old Southern favorite.

Steps:
- Place peaches in a large mixing bowl.
- Add ½ cup of the sugar.
- Add extract.
- Add lemon juice.
- Toss gently to coat peaches. Set aside.
- Place flour in a separate small bowl.
- Add baking powder.
- Add the other ½ cup sugar.
- Add dash of salt.
- Stir dry ingredients together.
- Gradually stir in the milk until batter is smooth.
- Pour melted butter into baking dish (3qt)
- Pour flour mixture on top of butter. Do not stir.
- Pour peaches over top of flour mixture. Do not stir.
- Bake at 350F degrees for 50-60 minutes until golden brown on top.

- Preheat oven to 375 degrees. Melt butter in a 11X13 baking dish in oven. Remove from oven when melted.
- Mix flour, 1 cup of sugar, baking powder and salt in a small bowl. Add milk and mix until just mixed. Pour batter into baking dish on top of butter. Do NOT stir.
- Bring peaches, remaining 1 cup of sugar and lemon juice to a boil in a medium sauce pan. Pour peaches over batter. Do NOT stir. Sprinkle with cinnamon.
- Bake for 35 - 45 minutes until the top of the cobbler is golden brown.
- Serve with ice cream if desired.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly, and pour into a 2 quart baking dish. Bake in preheated oven for 10 minutes.
- Meanwhile, in a large bowl, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.

- Preheat the oven to 375 degrees F. Lightly coat eight 6-ounce ramekins with nonstick cooking spray and place on a rimmed baking sheet.
- Toss the peaches with the cornstarch and 2 tablespoons sugar in a large bowl. Let stand until juicy, about 10 minutes. Divide the peaches and juices among the ramekins.
- While the peaches sit, combine the flour, remaining 1/2 cup sugar, flax seed and salt. Cut in the butter, using a fork or pastry cutter, until the mixture forms medium-size crumbs. Stir in the buttermilk until well moistened and large clumps hold together.
- Sprinkle the topping evenly over the peaches. Bake until the fruit is bubbling and the topping is golden brown and crisp, 40 to 45 minutes. Serve warm or at room temperature with vanilla yogurt or frozen yogurt if desired.

- Preheat oven to 400 degrees. In a large bowl, toss peaches with 1/4 cup sugar and 1/2 teaspoon cinnamon; set aside. In a medium bowl, whisk together flour, baking powder, salt, remaining 3/4 cup sugar, and remaining 1/2 teaspoon cinnamon. In another bowl, whisk 4 tablespoons melted butter with milk and egg. - Place 1 cup peaches into 8 individual ramekins. Mix 1/2 cup water and white sugar together in a bowl; stir until sugar is dissolved. Evenly divide sugar mixture over peaches. Sprinkle peaches with cinnamon and nutmeg. Dot about 3/4 teaspoon butter onto each serving of peaches.

SOUTHERN PEACH COBBLER
My little cousin calls this dish "Peach Cobblet" because when he was younger, he couldn't pronounce "Cobbler." This cobbler is a spin-off of my mother's recipe. The crust is buttery and flaky (I use a butter+shortening mix), it's not too thick and not too thin, and it's a FLAVORED crust, so it boasts a lot more than just butter and flour. The filling is perfect and can be adjusted to your taste. This is a REAL, TRADITIONAL STYLE COBBLER, the way it was meant to be. No biscuit-topping and no lattice-style crust here. Serve warm with premium vanilla bean ice cream or serve with whipped topping, drizzled caramel, and a sprinkle of nutmeg.

- Sift flour and salt into a large bowl. Mix in sugar, nutmeg, and cinnamon.
- Cut in shortening and butter until the texture is grainy and crumbly.
- Add 5-6 tablespoons of water at a time and gradually squeeze in the orange juice, stirring with a fork and adding touches of flour until your dough is smooth and semi-dry. Form dough into ball.
- Preheat oven to 350 degrees.
- Cut the dough in half. Sprinkle a dry, clean surface with a small 1 tablespoons of the flour.
