LOW-FAT BUTTERMILK RANCH DRESSING
A creamy low-fat ranch dressing made with buttermilk and fresh herbs. Perfect to serve with end-of-summer garden vegetables!

Steps:
- In a small bowl or large measuring cup, combine the sour cream, yogurt, mayonnaise, garlic, powder, onion powder, parsley, chives, salt, and cracked pepper. Mix well.
- Stir in the white balsamic vinegar; then buttermilk.
- Adjust the seasonings to taste, adding another tablespoon of balsamic vinegar if desired. The flavors will become bolder over time.

SAVORY DRESSING OR STUFFING BALLS
It was always my husband's job to toast all the bread when he was little. Now, he's in charge of preparing the whole recipe each Thanksgiving.

Steps:
- Toast all the bread and rip or cut into small pieces. Place in a large mixing bowl.
- Melt the butter in a large skillet over medium heat. Add the onions and celery and saute until softened. Remove from the heat.
- Add the beaten eggs to the broth and blend well. Add the parsley, sage, poultry seasoning, and pepper mix well. Mix the sauted vegetables with the bread cubes and then pour broth mixture over all and stir.
- Shape the mixture into 2-inch balls and place on a greased cookie sheet, drizzle a small amount of melted butter over the balls.
- Bake uncovered in 375 degrees F oven for 25 minutes.

LOWER-FAT COLESLAW
I've been trying to create a coleslaw dressing with the lowest possible fat intake. This is as low as I could go without taking away the flavor. It's a family favorite and we use it with all kinds of meals, in wraps, in sandwiches, with burgers, and as a side during BBQs.

- Whisk mayonnaise, low-fat milk, white vinegar, apple cider vinegar, lemon juice, sugar, and salt together in a bowl and allow dressing to stand while preparing vegetables, about 20 minutes.
- Pour dressing over cabbage, onion, and carrot in a large salad bowl and toss to combine. For best flavor, refrigerate slaw at least 2 hours to overnight.

SOUTHERN SAVORY DRESSING - LOW FAT
Great with turkey, chicken and pork. Don't let the long list of ingredients scare you - 8 of them are spices/herbs. If you are in a hurry, use a package of Pepperidge Farms cornbread stuffing in place of the cornbread. However, the homemade cornbread is worth the effort! Brown gravy ladled over each serving makes it Scrumptuous! My family requests this dish often, and there is never any left over! I always keep one of these casseroles in the freezer for unexpected house guests.

- Note: This casserole freezes well, uncooked.
- If frozen, thaw before baking.
- CORNBREAD: Mix cornbread mix with egg substitute and skim milk.
- Pour into a 8x8-inch or 9x9-inch baking pan, sprayed with non-stick cooking spray.
- Bake at 400 degrees for about 20-25 minutes or until lightly browned on top.
- Cool and crumble into pieces and place in a LARGE bowl.
- DRESSING: Preheat oven to 350 degrees.
- Spray 9x13-inch casserole with non-stick cooking spray.
- To the bowl of cornbread, add all of the Herbs and stir to mix.
- Add all remaining ingredients and stir to moisten mixture.
- Dressing should be very moist.
- Add a little more water if needed to make mixture very soft.
- Pour dressing mixture into prepared casserole, cover with foil and bake 45 minutes.
- Uncover, and bake an additional 15-25 minutes or until top just starts to brown.
