SOUTHERN PECAN PIE I
This recipe has been passed down in my family. Use light or dark corn syrup.

Steps:
- Preheat oven to 400 degrees F (205 degrees C).
- Beat eggs slightly in medium bowl. Beat in sugar, and then blend in syrup, butter or margarine, vanilla, salt, and pecans. Pour filling into unbaked pie shell.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking 35 to 40 minutes; the pie will be brown and slightly puffed.

SOUTHERN PECAN PIE W/ DARK CORN SYRUP
Pecan pie as it's meant to be. Tried and true. 1 Tablespoon of bourbon really takes it over the top, but it is still fabulous without it if you would rather not use this ingredient.

- Preheat the oven to 350 degrees F.
- Mix the white sugar, brown sugar, salt, corn syrup, butter, eggs, bourbon (optional) and vanilla together in a bowl. Arrange the pecans in the bottom of the unbaked pie shell.
- Pour the syrup mixture over the top. Bake the pie until it's no longer loose and jiggly, 1 hour 10 minutes, being careful not to burn pecans and crust. (Cover with foil for part of the baking time if it browns too quickly).
- Allow to cool for several hours or overnight. Serve in thin slivers with freshly whipped cream.
BLACK FOLKS SOUTHERN PECAN PIE RECIPE
Black folks' Southern pecan pie recipe is an old-fashioned African American soul food classic that yields an abundance of sweet flavor with each bite. Brown sugar is combined with a syrupy pecan filling, caramelized, and then baked.

- Grease a deep-dish pie pan or pie dish and add the pie crust to it.
- Use a fork to poke holes in the bottom of the dough so the pie crust can vent when cooked with the filling in it.
- Optional - Here is where you can crimp or flute the pie crust if using dough crust or homemade crust.
- Bake the pie crust in the conventional oven at 350 degrees F for 7-10 minutes or the Instant Pot Omni Plus oven for 5-6 minutes.
- Set the pie crust aside.
- Open the Instant Pot lid and turn on the sauté setting for 5 minutes, although you may need all of this time.
- Pour the sugar and corn syrup into the stainless-steel inner pot and let the mixture come to a boil, simmering for 1 minute. (If you're not using an Instant Pot, you can do this step on the stovetop.)
- Turn off the Instant Pot and set the mixture aside to cool.
- Stir the butter into the warm mixture so that it melts.
- Next, add the vanilla extract and salt, and stir to combine.
- Then when the mixture is cool enough to add the eggs without the eggs scrambling, whisk the eggs in a small bowl.
- Slowly pour the eggs into the syrup mixture, constantly whisking until blended.
- Now add the chopped pecans, slowly stirring them into the mixture.
- Pour the finished pie filling into the pie crust.
- Cover the edges of the crust with foil to prevent them from overcooking or burning.
- Bake at 350° F in the conventional oven for 40-45 minutes, in the Instant Pot Omni Plus oven for 30-35 minutes, or until the pie filling sets and is firm and not liquidy when you give the pie a jiggle.
- Allow the pecan pie to cool off and set for about 4 hours at room temperature before slicing, then serve and enjoy this Southern homemade pecan pie!

- Preheat the oven to 375 degrees F. Unroll the piecrust and place in a 9-inch pie plate. Fold the overhang under and crimp the edge with a fork or your fingers. Bake the crust until light golden brown, about 10 minutes. Cool completely on a rack. (Leave the oven on.)
- Whisk the corn syrup, brown sugar, salt, butter and vanilla in a medium bowl. Lightly beat the eggs in a small bowl, then whisk into the corn syrup mixture.
- Finely chop 1/2 cup pecans and spread evenly over the piecrust. Roughly chop another
- 1/2 cup pecans and mix into the corn syrup mixture, then pour the filling into the crust. Arrange the remaining 1 cup pecans on top in a decorative pattern.
- Bake the pie until a knife inserted into the center comes out clean, 40 to 50 minutes. Cool completely on a rack. Serve with whipped cream, if desired.
SOUTHERN PECAN PIE
The recipe for this Southern specially originated in Alabama. Its amber filling is stubbed with pecan pieces to add an interesting texture to this rich dessert. Serve it in small wedges with coffee. I found this recipe in My Great Recipes. I have not tried this I'm posting it for a request.

- Filling:
- Mix together eggs, sugar, corn syrup, butter, vanilla, and pecan pieces.
- Pour filling into prepared pie shell.
- Arrange the pecan halves around the inside edge.
- Bake at 400 for 10 minutes. Reduce heat to 350. Bake 40 minutes longer or until the center is firm.
- Cool to room temperature before cutting.
- Pie Shell: Combine 1 1/3 c sifted all purpose flour and 1/2 tsp salt in a mixing bowl. Cut in 1/2 c shortening until uniform but coarse. Sprinkle on 3 tbl cold water. Mix with a fork until you can shape mixture into a ball. Roll out to fit a 9-inch pie pan. Place in pan, trim and flute edge.

BEST SOUTHERN PECAN PIE -- DIFFERENT
Same flavor, but not the ooey-gooeyness. Uses brown sugar instead of karo syrup. I checked Zaar and couldn't find the same recipe. The USA southeast area has used this recipe for years. It is a Blue Ribbon WINNER! I would not go back to the syrup recipe. This makes 2 pies using a regular size pie shell and freezes well if you want to freeze one. Butter is best, but you can use margarine. (It is important to use the cornmeal in this recipe.) I prefer my pecans in broken pieces because the slices will cut better. Easy to make and easy to travel to a potluck. You'll be glad you tried this delightful pie!!

Steps:
- While your oven is pre-heating to 350F, start melting the margarine over medium heat in a saucepan.
- Once margarine is melted, remove saucepan from heat and stir in brown sugar.
- Beat and then add the eggs and the rest of ingredients to the saucepan-- stir well.
- Pour evenly into the 2 pie shells.
- Lightly sprinkle (or place if whole ones) pecans on top.
- Once oven is pre-heated, bake on cookie sheet@ 350F for 30 minutes.

- Whisk together all pie filling ingredients except pecans.
- Add pecans and stir.
- Pour mixture into a prepared pie shell. (Do not pre-bake the shell.) The pecans will rise to the top by themselves.
