ERIC'S ROAST MONKFISH WITH CASSEROLE OF MUSHROOMS, SNOW PEAS, AND ASPARAGUS
Chef Eric Ripert of Le Bernardin -- New York City's only four-star restaurant specializing in fish -- shares his recipe for roast loin of monkfish.

Steps:
- Preheat oven to 450 degrees. Divide corn oil between two 10-inch nonstick ovenproof skillets. Over high heat, heat oil until just smoking. Place two pieces of monkfish in each skillet, and saute until fish is browned on the bottom, about 5 minutes. Turn the fish, and transfer the skillets to the preheated oven. Bake for about 8 minutes, or until a cake tester can be easily inserted into the fish or when left in the fillet for 5 seconds, the cake tester is warm to your lip.
- In a large enameled pot over medium heat, add butter, bacon, and mushrooms. Cover, and cook about 4 minutes. Add garlic, shallots, and chicken stock. Reduce heat to low, and cook, covered, about 5 minutes, being careful not to let the liquid evaporate.
- Add asparagus, snow peas, and parsley. Saute until just heated through. Season with salt and pepper. Remove from heat, and divide among four plates.
- Transfer the monkfish from the oven to a cutting board, and slice the pieces into 1/4-inch-thick slices; fan over vegetables. Serve immediately.
ROASTED ASPARAGUS AND PEAS

- Zest the lemons and lay out the zest to dry it slightly, about 30 minutes.
- Preheat the oven to 450 degrees F.
- Mix the lemon zest with the salt in a small bowl and set aside. Cut 2 of the lemons in half and set aside.
- Drizzle the asparagus with olive oil on a baking sheet and toss to coat. Roast until the asparagus have some blackened bits, about 10 minutes. Sprinkle the peas all over the asparagus, toss and squeeze on the juice of the 2 cut lemons. Return to the oven for 3 minutes.
- Serve on a big platter and sprinkle with the lemon salt, basil and parsley before serving.

Steps:
- Heat oven 400.
- Drain tomatoes, reserving oil.
- Puree the tomatoes with half of the oil (reserving oil for another use, if desired) with the basil.
- Season.
- Lay 2 slices of prosciutto on a counter, overlapping slightly.
- Top at one end with a monkfish strip.
- Top monkfish with 1/4 of the tomato mix.
- Roll up, tucking in prosciutto.
- Repeat with the remaining ingredients.
- Place on a sprayed rack over a baking sheet.
- Bake 20-25 minutes.
- WOW!

This is a recipe that when growing up we only had on holidays, later I learned it was so easy to make, that we started having it much more often. I love this recipe and it brings back many fond memories.

- Open both the peas and the asparagus and save half of the juice from each.
- To juice add butter and soup.
- Bring to a boil, stir.
- Put peas and asparagus in dish and cover with soup mixture.
- Bake at 350 degrees F. until bubbly about 20-25 minutes.
- slice egg over top and sprinkle with paprika and serve.

- Cut slit in snow peas package; place package on paper towel in microwave oven.
- Microwave at high (100%) 3 minutes.
- Turn over, microwave 2 minutes.
- Remove from microwave oven; let stand.
- Put beef in 1 1/2 quart microwaveable casserole; break into small pieces with spoon.
- Mix in green onion.
- Drain snow peas; spread over meat in even layer.

- Heat the oven to 450°. In an ovenproof pot, heat the oil over moderately high heat. Add the mushrooms and cook until starting to brown, about 3 minutes. Add the scallion bulbs, garlic, and 1/4 teaspoon each of the salt and pepper. Cook until the scallions start to soften, about 4 minutes.
- Sprinkle the fish with the remaining 1/4 teaspoon each salt and pepper. Put the fish on top of the mushrooms and scallions and transfer the pot to the oven. Roast until the fish is just done, 10 minutes for 3/4-inch-thick fillets. Remove the monkfish from the pot and put the pot on top of the stove. Add the scallion tops and the cream to the pot. Bring to a simmer and continue simmering the sauce until it starts to thicken, 1 to 2 minutes. Serve the fish topped with the sauce.
