A classic pasta bake for busy weeknights, our Baked Ziti with Sausage is a guaranteed crowd pleaser. This easy, cheesy dish uses three cheeses - ricotta, mozzarella, and Parmesan - to create the perfect counterpart to our tomato-based meat sauce with ground sausage. And, trust us, it's this homemade sausage meat sauce that really packs in the flavor. The addition of pancetta, or cured pork belly, makes this mid-week casserole a meat lover's dream. If you haven't used pancetta before, it's the same thing as bacon just without the smoke. You can easily find it in the deli at most supermarkets.Serve this satisfying Baked Ziti with Sausage just once, and your kids are sure to request it again and again. Good thing it's ready in under an hour.

12 ounces uncooked ziti pasta
4 ounces pancetta or bacon, diced
1 large onion, chopped
3 garlic cloves, chopped
1 (1-lb.) package ground Italian sausage
1 cup dry red wine
1 (28-oz.) can crushed tomatoes
½ cup firmly packed torn fresh basil
½ teaspoon kosher salt
½ teaspoons dried crushed red pepper
1 cup ricotta cheese
1 (8-oz.) package shredded mozzarella cheese, divided
Vegetable cooking spray
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350°. Prepare ziti according to package directions for al dente.
  • Meanwhile, cook pancetta in a large skillet over medium-high heat 3 minutes. Add onion and garlic, and sauté 3 minutes or until onion is tender. Add sausage, and sauté 5 minutes or until meat is no longer pink. Add wine, and cook 3 minutes. Stir in tomatoes and next 3 ingredients. Reduce heat to low, and cook, stirring occasionally, 3 minutes.
  • Stir ricotta and 1 cup mozzarella cheese into hot cooked pasta. Lightly grease a 13- x 9-inch baking dish with cooking spray. Transfer pasta mixture to prepared dish, and top with sausage mixture. Sprinkle with Parmesan cheese and remaining 1 cup mozzarella cheese.
  • Bake at 350° for 25 to 30 minutes or until bubbly.

We reimagined this family classic using store-bought rotisserie chicken.

1 tablespoon olive oil
1 cup chopped yellow onion (from 1 [10-oz.] onion)
1 tablespoon minced garlic (about 3 medium garlic cloves)
1 (28-oz.) can whole peeled plum tomatoes, tomatoes coarsely crushed by hand and juices reserved
2 (14.5-oz.) cans crushed tomatoes, undrained
2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 teaspoon crushed red pepper
1 pound uncooked ziti
3 cups shredded rotisserie chicken (from 1 rotisserie chicken)
1/4 cup thinly sliced fresh basil, plus more for garnish
Cooking spray
1 1/2 ounces Parmesan cheese, finely shredded (about 2/3 cup), divided
8 ounces pre-shredded low-moisture whole-milk mozzarella cheese (about 2 cups), divided

Steps:

  • Heat oil in a large skillet over medium. Add onion; cook, stirring occasionally, until translucent, about 5 minutes. Add garlic; cook, stirring occasionally, until fragrant, about 1 minute. Add plum tomatoes, crushed tomatoes, salt, black pepper, and crushed red pepper; bring to a boil over medium. Reduce heat to medium-low; simmer, stirring occasionally, until flavors meld and sauce thickens, about 30 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add ziti, and boil until just al dente, according to package directions. Drain and return ziti to pot.
  • Preheat oven to 375°F. Add tomato mixture, shredded chicken, and basil to ziti; stir to coat thoroughly. Pour half of ziti mixture into a 13- x 9-inch baking dish coated with cooking spray. Sprinkle evenly with 1/3 cup of the Parmesan and 1 cup of the mozzarella. Top with remaining ziti mixture, and sprinkle with remaining 1/3 cup Parmesan and 1 cup mozzarella.
  • Bake in preheated oven until cheese has melted, about 15 minutes. Remove from oven, and let rest 10 minutes. Garnish with additional basil before serving.

Baked Ziti With Meatballs image

Don't tell Grandma, but you do not have to make homemade meatballs and tomato sauce for this delicious pasta and meatballs dish. Of course, you can if you want to, but for a quick yet fulfilling weeknight meal, take advantage of quality convenience products from your grocery store. The night before preparing this ziti and meatball bake, put your frozen meatballs in the refrigerator so they can thaw. This dish is likely to bubble as it bakes, so we advise setting your baking dish on a foil-lined baking sheet. Prepare the pasta according to package instructions, then add everything together in the baking dish. To make this ziti and meatball dish special, we added mushrooms, spinach, and pepperoni to the mix, but we think the secret ingredient is really the citrus. Sugar is often added to tomato sauce to help balance acidity. This recipe uses fresh orange juice instead for sweet citrus notes that boost the flavor of the marinara. Add a loaf of warm homemade bread and serve this meatball dish to your discerning Grandma. We bet she will love it.

2 (24-oz.) jars marinara sauce
2 (14-oz.) pkg. frozen home-style beef meatballs, thawed
1 (8-oz.) pkg. cremini mushrooms, sliced (about 4 cups)
2 cups baby spinach
1 cup chopped pepperoni
½ cup fresh orange juice (about 1 large orange)
4 ounces mozzarella cheese, shredded (about 1 cup)
Fresh basil leaves, for garnish

Steps:

  • Preheat oven to 450°F. Coat a 13- x 9-inch baking dish with cooking spray. Line a large rimmed baking sheet with aluminum foil, and place baking dish on prepared baking sheet. Stir together pasta, marinara sauce, meatballs, mushrooms, spinach, pepperoni, and orange juice in baking dish.
  • Bake in preheated oven 10 minutes. Sprinkle with cheese, and continue baking until cheese is melted and pasta is thoroughly heated, about 10 minutes. Garnish with basil.

1 (16 ounce) package dry ziti pasta
1 pound mild Italian sausage
1 (15 ounce) container ricotta cheese
1 egg
1 large yellow onion, minced
2 teaspoons minced garlic
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
1 ½ (26 ounce) jars spaghetti sauce, divided
1 (8 ounce) package shredded Italian cheese blend
1 teaspoon dried basil

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the ziti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • While pasta is cooking, heat a large skillet over medium heat. Add the sausage, and cook and stir until brown, about 10 minutes. Drain sausage and set aside.
  • Stir together the ricotta, egg, onion, garlic, and oregano in a large bowl until well combined. Stir in the drained pasta, the drained sausage, salt, pepper, and 1/2 jar of the spaghetti sauce; mix well.
  • In the prepared baking dish, cover the bottom with 1/3 jar of spaghetti sauce. Layer 1/2 of the pasta mixture, 1/3 jar of spaghetti sauce, and 1/2 of the shredded cheese. Then layer the remaining 1/2 of the pasta, 1/3 of the sauce, and 1/2 of the cheese. Sprinkle with basil. Cover the dish tightly with aluminum foil.
  • Bake in the preheated oven until heated through, about 20 minutes. Uncover; return to the oven and bake until cheese is melted, 5 to 10 more minutes.

Add sauce to pasta, stirring to coat.
