Easy, Easy, Easy!!! I got this recipe from an Aunt who made it for a family reunion. It has a great flavor and makes alot. Very Good! Does not include cooking time for the chicken.

Ingredients

4 -6 chicken breasts, cooked & chopped
1 can cream of mushroom soup
1 can chicken broth
1 can Ro-Tel tomatoes
1 lb Velveeta cheese, cubed
12 ounces spaghetti, cooked & drained

Steps:

In a bowl mix together the soup, broth& Ro-tel tomatoes.
In a 13x9 greased casserole dish layer as follows: Spaghetti, Chicken, Soup mix, Cheese.
Bake in a preheated 350 degree oven until heated through and cheese melts about 30-45 minutes.
As soon as you remove from the oven stir to mix well, adding salt and pepper to taste.

1 lb spaghetti
2 chicken breasts, cooked and diced
1 lb Velveeta cheese
1 (4 ounce) can Rotel Tomatoes

Steps:

Melt together Rotel and Velvetta.
Add to cooked, drained spaghetti.
Stir in chicken, may substitute canned chicken for diced chicken breasts.
May also add Mushrooms if you like.

In a large pot, bring water to a boil. Add generous amount of salt and chicken breasts. Let boil until done (about 10-15 minutes). Drain, reserving 1/2 C of the chicken broth, and let chicken cool.
Add pasta to a large pot of salted boiling water and cook just until al dente. Drain and rinse when finished. Set aside.
To prepare sauce, pour undrained tomatoes & greens chiles into a medium sauce pan over medium heat. Add broth. Cube the Velveeta cheese & add to tomatoes and broth. Stir until cheese melts. Do not let scorch. When cheese is melted, add sour cream. Stirring constantly again. Add salt, peppers and garlic. Stir again. Remove from heat.

Roast in the oven for 15 to 20 minutes until done and chicken is no longer pink. To check that chicken is done, use a meat thermometer that registers 160-170 degrees. Remove from oven, and shred using 2 forks.
While chicken is baking, cook pasta according to package directions. When done, drain and set aside.
Heat oven to 350 degrees. Lightly coat an 11x17 inch baking dish with cooking spray. Set aside.
To a large pot, over medium-low heat, add cooked chicken, cream cheese, sour cream, both cans of Rotel tomatoes and chilies, cumin, salt, garlic and, onion powder.
