AIR FRYER SOUTHERN STYLE CATFISH WITH GREEN BEANS
Nothing beats Southern-style catfish for a hearty meal, but the traditional method of frying unfortunately adds back in a bunch of fat that the lean protein could do without. Enter the air fryer: You can get a crispy, delicious fillet as well as a side of blistered green beans without all the oil, and have it on the table in less than half an hour. Hard to beat!

Steps:
- Place green beans in a medium bowl, and spray liberally with cooking spray. Sprinkle with brown sugar, crushed red pepper (if using), and 1/8 teaspoon of the salt. Place in air fryer basket, and cook at 400ºF until well browned and tender, about 12 minutes. Transfer to a bowl; cover with aluminum foil to keep warm.
- Meanwhile, toss catfish in flour to coat, shaking excess from fish. Dip pieces, 1 at a time, in egg to coat, then sprinkle with panko, pressing to coat evenly on all sides. Place
- fish in air fryer basket; spray with cooking spray. Cook at 400ºF until browned and cooked through, about 8 minutes. Sprinkle tops evenly with pepper and remaining 1/4 teaspoon salt.
- While fish is cooking, whisk together mayonnaise, dill, relish, vinegar, and sugar in a small bowl. Serve fish and green beans with tartar sauce and lemon wedges.

SOUTHERN FRIED CATFISH
Steps:
- Heat the peanut oil in a 5-quart Dutch oven over high heat until it reaches 350 degrees F on a deep-fry thermometer. Adjust the heat to maintain the temperature.
- Whisk the cornmeal and flour together in a shallow dish. Combine the seafood seasoning, kosher salt, paprika, and pepper in a small bowl. Season the catfish fillets evenly on both sides with the spice mixture. Pour the buttermilk into another shallow dish. Dip each fillet into the buttermilk, flip once to coat both sides, hold over the pan and allow the excess to drip off. Coat both sides of the fillets in the cornmeal mixture. Set the coated fillets on a cooling rack and let rest for 5 minutes.
- Gently add the fillets, 2 at a time, to the hot oil and fry until golden brown, about 5 to 6 minutes. Remove the fried fillets to a cooling rack set over a newspaper-lined half sheet pan. Repeat method with remaining fillets. Arrange the catfish on a serving platter and serve immediately.
SOUTHERN AIR FRYER CATFISH

Steps:
- Preheat your air fryer for 2-3 minutes at 400 degrees.
- In a dish, measure and mix your cornmeal, flour, cheese, garlic and onion powders, cayenne, paprika, salt and pepper.
- In a different dish, use a fork or a whisk to scramble up your egg and buttermilk.
- Pat each catfish fillet dry with a paper towel, then dip into the egg mixture, coating both sides letting the excess drip back into the dish. A thin coating is all you need to get the crust to stick.
- Press the catfish into the cornmeal mixture on both sides of fish, making sure to coat fully and evenly.
- Using your tongs, carefully set your fillets evenly on the air fryer basket surface. If you wish to give a light spray of olive oil for extra crispiness and to prevent sticking, do this now.
- Set your timer for 12 minutes, turning with your tongs halfway through the cooking time. At the halfway point, you can also remove from the basket to spray a small amount of lemon juice or oil to prevent it from drying out. Place back in the basket and cook the additional time.
- Remove from air fryer and check to be sure that your catfish is cooked all the way through.

- Place buttermilk in large shallow dish or pie plate, add a few shakes of hot sauce and mix to combine. Add catfish fillets and turn to coat. Let soak for 30 minutes.
- Meanwhile, make seasoned dredge. In another large tray or pie plate, add the cornmeal, flour and seasonings, a few grinds of black pepper and combine well with a fork or whisk.
- Remove catfish from buttermilk to a plate, shaking off excess. Lightly pat dry and season with a sprinkle of salt. Place catfish one at a time in seasoned cornmeal mixture and coat well on both sides. Shake off excess and place on a plate.
- Preheat air fryer at 400ºOpen and spray basket evenly with olive oil spray. Lay catfish fillets in basket, one or two depending on size, spritz catfish evenly on top with olive oil spray. Close basket and air fry at 400º for 8 minutes.
