The Easiest & Tastiest No Knead Onion Bread Loaf image

3 cups bread flour
1/2 teaspoon Redstar Platinum instant yeast
1 1/2 teaspoon kosher salt
1 1/2 cups water (room temp)
1 1/2 teaspoon granulated onion
2 tablespoon plus 2 teaspoon dried, minced onions, divided
2 teaspoon hot water

Steps:

  • In a large bowl add in the flour, yeast, granulated onion and 2 tablespoon of dried onions, and salt. You need to make sure the bowl is at least 2 times the size as this will easily double in volume. Whisk to combine. Add in the water and mix with a wooden spoon - do NOT use a stand mixer. Mix it until it's combined and forms a 'shaggy' dough. Just make sure that all the flour is incorporated. It will not be a smooth dough - that's how it's supposed to be.
  • Cover with plastic wrap and set in a warm place overnight for at least 12 hours but no more than 24.
  • When you're ready to bake, preheat your oven. Put the rack in the middle and preheat to 450F. Let this heat up for about 45 minutes.
  • Mix the remaining 2 teaspoon of dried, minced onions with 2 teaspoon of hot water. Gently stir and set aside. Place the dough out a lightly floured board and gently shape it into a rectangle ~12×8". Fold one third over and the other third on top (like an envelope). Gently start to roll it with your hands into a log that's ~12×4". Pinch the seams together. For the ends just tuck them under and pinch to seal. *See note if you're not using the Emile Henry Italian Loaf Bread Baker about shaping and baking in a Dutch oven.
  • To the Emile Henry Italian Loaf Bread Baker, sprinkle in a tablespoon or two of flour in the bottom to help the dough remove easily after baking. Place the loaf in the baker. Take the re-hydrated dried onion mixture and sprinkle on top of the loaf. Cover and set aside while the oven heats up.
  • 425F, put the loaf pan into the oven (covered) and bake for 40 minutes, remove the lid and bake for another 15 or until golden brown and the internal temp reaches 200F.
  • Remove from the oven and carefully empty the loaf onto a cooling rack. Allow to cool before slicing.
  • Store the bread in the Emile Henry Bread Box. It will stay fresh for ~3-5 days.

1 1/2 cups bread flour
3 teaspoons baking powder
2 tablespoons butter ((cold))
1 teaspoons salt
5 ounces onion ((chopped))
1 1/2 tablespoons bacon flavoured olive oil
1 egg ((beaten))
1/2 cup milk

Steps:

  • Dice onion and set aside.
  • Heat bacon flavoured olive oil in a small pan over medium-high heat.
  • Cook the onions until nicely browned. Set aside to cool.
  • Heat the oven to 375º F.
  • Grease a loaf pan or, an 8 inch round or square baking pan and line with parchment. Set aside.
  • In a large bowl combine the flour, baking powder and salt.
  • Add in the COLD butter. Using a knife, or pastry mixer, cut in the butter until crumbly.
  • Place the egg in a small bowl and beat with a fork or whisk.
  • Add the milk to the egg and mix.
  • Pour the milk and egg mixture into the cooled and cooked onions.
  • Make a well in the flour mixture, and pour in the wet ingredients.
  • Mix with a spatula to combine.
  • Scrape dough into the prepared baking dish.
  • Bake in oven until baked. Apaproximately 25 minutes.Bread will be golden. You can use a cake tester to ensure it is baked.
  • Remove the bread from the pan. Place on cooling rack.
  • Slice and ENJOY!

¼ cup (50 grams) granulated sugar
2¼ teaspoons (7 grams) active dry yeast*
1 teaspoon (3 grams) kosher salt
½ cup (120 grams) whole milk
½ cup (120 grams) water
⅓ cup (76 grams) unsalted butter
¼ cup (60 grams) sour cream
1 large egg (50 grams)
Caramelized Onions (recipe follows)
½ cup (113 grams) unsalted butter, softened
2 tablespoons (4 grams) fresh thyme
8 ounces (227 grams) Gruyère cheese, shredded and divided
¼ cup (57 grams) unsalted butter
2 pounds (908 grams) Vidalia onions, thinly sliced (about 8 cups)
1 teaspoon (3 grams) kosher salt
½ teaspoon (2 grams) granulated sugar
½ teaspoon (1 gram) ground black pepper
½ cup (120 grams) dry sherry

Steps:

  • In the bowl of a stand mixer, whisk together 2 cups (250 grams) flour, sugar, yeast, and salt by hand.
  • In a medium saucepan, heat milk, ½ cup (120 grams) water, butter, and sour cream over medium heat until an instant-read thermometer registers 120°F (49°C) to 130°F (54°C). Add warm milk mixture to flour mixture, and using the paddle attachment, beat at medium speed until combined. Add egg, beating until combined. With mixer on low speed, gradually add 2 cups (250 grams) flour, beating until combined.
  • Switch to the dough hook attachment. Beat at low speed until a soft, smooth, and somewhat sticky dough forms and pulls away from bowl, 9 to 10 minutes. Add up to remaining ¼ cup (31 grams) flour if dough is too sticky. Turn out dough onto a lightly floured surface, and shape into a smooth round.
  • Lightly oil a large bowl. Place dough in bowl, turning to grease top. Cover and let rise in a warm, draft-free place (75°F/24°C) until doubled in size, 45 minutes to 1 hour.
  • Spray a 9-inch round cake pan with cooking spray.
  • Lightly punch down dough. Cover and let stand for 5 minutes. Turn out dough onto a lightly floured surface, and roll into a 21×12-inch rectangle. In a small bowl, combine softened butter and thyme. Spread thyme butter onto dough, leaving a ½-inch border on one long side. Sprinkle and spread Caramelized Onions onto butter. Sprinkle 6 ounces (170 grams) cheese onto onions.
  • Starting with long side opposite border, roll dough into a log, pinching seam to seal. Place log seam side down, and cut in half lengthwise, leaving 1½ inches at one end. Turn halves cut sides up, and carefully twist dough pieces around each other; form into a circle. Place, cut sides up, in prepared pan. Cover and let rise in a warm, draft-free place (75°F/24°C) until puffed, about 30 minutes.
  • Position one oven rack in center and one at top of oven. Preheat oven to 350°F (180°C).
  • Bake on center rack for 30 minutes. Sprinkle remaining 2 ounces (57 grams) cheese on top, and bake until cheese is melted and golden brown and an instant-read thermometer inserted in center registers 190°F (88°C), 15 to 20 minutes more, placing a piece of foil on top rack of oven to prevent excess browning, if necessary. Let cool in pan for 20 minutes. Remove from pan. Serve warm or at room temperature.
  • In a large Dutch oven, melt butter over medium heat. Add onion; cook, stirring occasionally, until softened, about 15 minutes. Add salt, sugar, and pepper; cook, stirring occasionally, until onion is deep golden brown, 30 to 40 minutes.
  • Increase heat to high. Add sherry; cook until most of liquid has evaporated. Transfer to a glass bowl, and let cool to room temperature.

HANDMADE ONION BREAD

I know there are recipes for onion bread on the site already, but I can't find anything without a bread machine. This is the best onion bread I've ever tasted -- I don't know how I managed to do it. LOL The base recipe is "Grandma VanDoren's White Bread," taken from another site, and is my default recipe. For just the base bread recipe, eliminate the onion mixture and follow the rest of the recipe.

3 cups warm water
3 -4 tablespoons active dry yeast (more yeast makes it fluffier)
3 teaspoons salt
4 tablespoons vegetable oil
1/2 cup white sugar
8 cups bread flour
1 medium onion
1 tablespoon garlic, minced
1 -2 tablespoon sesame seeds
3 tablespoons butter

Steps:

  • In a large bowl, combine warm water, yeast, salt, oil, sugar, and half the flour. Mix thoroughly, and let sponge rise until doubled in size, approximately 35 minutes.
  • While the dough is rising, place thinly sliced or finely chopped onion in a sauté pan with sesame seeds, garlic, and butter. Sauté until caramelized (light brown). Remove from heat and let cool.
  • Gradually add the rest of the flour, kneading JUST until smooth. I usually knead gently with my fingertips to work the flour inches When the dough has absorbed all the flour and is beginning to get tacky, I stop kneading. (One thing I discovered was to use ONLY the amount of flour listed, even as the dusting powder for the kneading surface. So 8 cups TOTAL and no more, or the bread comes out very heavy.)
  • Place dough in a greased bowl, and turn several times to coat. Allow to rise until doubled, approximately 35 minutes.
  • Punch down the dough. Divide dough into three equal parts. Pour onion mixture onto the dough and fold over on itself JUST enough to distribute the onion mix throughout the dough.
  • Shape into loaves (they will be a little ugly here, not smoothed on top), and place in three 8 1/2 x 4 1/2 inch greased bread pans. Let rise until almost doubled, approximately 35 minutes.
  • Bake at 350°F (175°C) for 30-40 minutes (mine are done in 30 no problem). The loaves may need to be covered for the last few minutes with foil to prevent excess browning.

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Stir salt, shortening, minced onions, oregano and 2 cups bread flour into yeast mixture. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.

1 ½ cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons margarine
½ cup shredded sharp Cheddar cheese
½ cup finely diced onion
1 tablespoon margarine
1 egg
½ cup milk
½ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease one 8 inch round or one 8x8 inch square pan.
  • Combine flour, baking powder and salt, cut in 2 tablespoons of the butter until mixture is crumbly. Stir in 1/2 cup of the grated cheese. Make a well in the center of the mixture.
  • Fry the onion in 1 tablespoon of the butter or margarine until clear and golden. Set aside.
  • In a small bowl beat the egg and stir in the milk and the cooked onion. Pour egg mixture into the well in the flour mixture. Stir until just moistened. You will have a soft dough. Pat dough into the prepared pan. Sprinkle remaining 1/2 cup grated cheese over top.
  • Bake at 400 degrees F (205 degrees C) for 25 minutes. Serve hot. Makes about 6 servings.

1 (1/4-oz) package active dry yeast (2 1/2 teaspoons)
2 teaspoons sugar
3 1/2 cups all-purpose flour
2 1/2 teaspoons salt
3 tablespoons vegetable oil
2 medium onions, finely chopped (2 cups)
1 large egg, lightly beaten with 1 tablespoon water
1 teaspoon nigella seeds* or poppy seeds

Steps:

  • Make dough:
  • Stir together water, yeast, and sugar in a small bowl until sugar is dissolved, then let stand until foamy, about 5 minutes. (If mixture doesn't foam, discard and start over with new yeast.)
  • Stir together 2 1/2 cups flour and 1 1/2 teaspoons salt in a large bowl, then add yeast mixture and 2 tablespoons oil and stir until a dough forms. Turn out dough onto a floured surface and knead, adding enough of remaining cup flour, a little at a time, as needed to prevent stickiness, until smooth and elastic, about 8 minutes.
  • Form dough into a ball and transfer to an oiled large bowl, turning to coat with oil. Cover bowl with plastic wrap and let dough rise in a draft-free place at warm room temperature until doubled in bulk, about 2 hours.
  • Cook onions while dough rises:
  • Cook onions in remaining tablespoon oil with remaining teaspoon salt in an 8- to 9-inch nonstick skillet over moderately low heat, stirring, until slightly softened, about 2 minutes. Cover surface of onions with a round of parchment or wax paper (or cover skillet with a tight-fitting lid) and cook onions, lifting parchment to stir frequently, until very soft and pale golden, 12 to 15 minutes.
  • Shape and bake bread:
  • Transfer dough to a 15- by 10- by 1-inch baking pan and stretch dough, first by pulling with your hands, then by pressing your fingertips into dough and working outward from center, until dough fills pan. Prick dough all over at 1-inch intervals with a fork, leaving a 1-inch border all around sides, and cover loosely with oiled plastic wrap (oiled side down). Let dough rise slightly in draft-free place at warm room temperature, 30 minutes.

2 packages (1/4 ounce each) active dry yeast
1 cup warm water (110° to 115°)
5-1/4 to 5-3/4 cups all-purpose flour, divided
4 tablespoons sugar, divided
3/4 teaspoon salt
1-1/4 cups hot water (120° to 130°)
1 envelope onion soup mix
3 tablespoons shortening

Steps:

  • In a bowl, dissolve yeast in warm water. Add 1/2 cup flour, 2 tablespoons sugar and salt; beat until smooth, about 1 minute. Cover and let rise in a warm place for 20 minutes. , In a small bowl, combine hot water, soup mix, shortening and remaining sugar. Cool to 115°. Add to yeast mixture with 2 cups flour; mix for 1-2 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch the dough down; divide into thirds. ONION AND GARLIC BREAD

1 medium onion, yellow skinned, chopped
3 cloves garlic, crushed
1 teaspoon sugar
1/2 teaspoon ground thyme, poultry seasoning may be substituted
A few grinds black pepper
1 (12-inch) loaf crusty bread, split lengthwise
2 handfuls grated Parmigiano

Steps:

  • Melt butter in a small pan over moderate heat. Add onions and garlic and season with sugar, thyme and pepper. Cook 15 minutes, stirring occasionally, until onions are golden in color and translucent.
  • Place the split bread on a baking sheet and broil until golden. Spread half the onions and garlic on each half of bread in a thin layer. Sprinkle each side of loaf with a handful of cheese and return to broiler for 30 seconds to bubble cheese. Serve with a hearty, soup-er supper

  • Melt butter in skillet over medium-low heat. Cook onions in butter 10 to 15 minutes, stirring occasionally, until onions are brown and caramelized. Do not hurry the process. Remove from heat.
  • Place all remaining ingredients in bread machine pan in the order recommended by the manufacturer.
  • Set to basic cycle with medium or light crust. Add onions at beep signal or 5 to 10 minute before end of kneading cycle.
  • Alternatively, use dough cycle. Remove dough at end of cycle, shape as desired, place on cornmeal-sprinkled baking sheet and let rise. Bake for app. 30 to 40 minutes in a 400 deg. oven. Exact time depends on shape.
  • Note: I generally substitute one cup of whole wheat or rye flour for one cup of the bread flour. Rye is particularly excellent.

This coarsely textured bread has the delicate flavor of onion. This is not a soft bread. It is crusty and hearty and slightly dry. Sliced, it is perfect for building those famous Dagwood sandwiches. This bread is good eaten in crusty slabs either plain or buttered along side hot soup or cool, crisp salad. It's the bread of choice in my house.

1 cup very warm water (110 degrees)
2 tablespoons white sugar
1 (1/4 ounce) package yeast
1/4 cup vegetable oil
3 cups bread flour
1 teaspoon salt
1 tablespoon minced dried onion

Steps:

  • Place the water, sugar, and yeast in the pan of your bread machine. Let the yeast dissolve and foam in the water for 10 minutes. Add the rest of the ingredients.
  • Program your bread machine for a 1 1/2 pound basic white bread. I always choose the dark setting for the crust. This bread is excellent for the time delay feature.

1 tablespoon butter or margarine
2 medium onions, sliced
1 cup water
1 tablespoon olive or vegetable oil
3 cups Gold Medal™ Bread Flour
2 tablespoons sugar
1 teaspoon salt
1 1/4 teaspoons bread machine or quick active dry yeast

Steps:

  • In 10-inch skillet, melt butter over medium-low heat. Cook onions in butter 10 to 15 minutes, stirring occasionally, until onions are brown and caramelized; remove from heat.
  • Measure carefully, placing all ingredients except onions in bread machine pan in the order recommended by the manufacturer. Add 1/2 cup of the onions at the Raisin/Nut signal or 5 to 10 minutes before last kneading cycle ends. (Reserve any remaining onions for another use.)
  • Select Basic/White cycle. Use Medium or Light crust color. Do not use delay cycle. Remove baked bread from pan; cool on cooling rack.

  • First make the filling: Melt the butter in a small pan. Add the onions over medium heat for 15-20 minutes or until the onion starts to darken in color just slightly. Add the sugar and stir. Cook for another 5 minutes then take off heat to cool.
  • In the bowl of a stand mixer, pour the yeast over the warm water. Add the milk, egg, butter, sugar, salt and flour. Stir with a spoon to mix then put the dough hook on the stand mixer. Let the machine knead the dough for about 4-6 minutes. A dough ball will form. Spray a large, glass bowl with cooking spray then empty the dough into the greased bowl. Turn the dough ball a few times to coat it then cover the bowl with greased plastic wrap. Let the dough rise in a warm place until it doubles in size.
  • Next, punch down the dough in the middle of the risen dough and fold the sides into the middle. Add the onions a few tablespoons at a time then fold the dough over again and incorporate the onions throughout the dough. Let the dough rest for about 10 minutes. If the dough is difficult to handle and stretch then let it rest for another ten minutes. Use a rolling pin to gently push the dough into a rectangle about 3/4 inch thick.
  • Use a cookie cutter about 2 1/2 inches to 3 inches wide. Cut the dough into circles. Do not twist the cutter as you press down as this could affect the rise. Make a clean cut with the cutter and place the circles on a baking sheet lined with parchment paper. Brush on the glaze of egg and salt (which you have whisked together) then grate the Parmesan cheese on top. Spray a sheet of plastic wrap with baking spray and cover the circles of dough. Let rist for an hour to 90 minutes.
