Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
- In a large bowl, combine broccoli, cheese, bacon and onion.
- Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.

- Combine broccoli, cauliflower, cheese, onion, bacon bits, raisins, walnuts and apple in a large salad bowl.
- Combine the mayonnaise and sugar in a small bowl; let sit for 15 minutes for the sugar to dissolve.
- Add in the vinegar; stir well to combine.
- Pour over the salad ingredients and toss to mix well.
- Refrigerate for several hours before serving.

BROCCOLI SALAD

Steps:
- Cut the bacon into small pieces and cook over medium heat just until crisp; drain on paper towels.
- Bring a large saucepan of salted water to a boil. Add the broccoli and blanch until bright green and slightly softened, about 3 minutes. Drain well, run under cold water to stop the cooking, and drain again.
- In a mixing bowl, combine the mayonnaise, vinegar, onion, sugar and raisins. Add the broccoli and toss the coat with the dressing. Refrigerate for 1 hour.
- Just before servings, fold in the sunflower kernels and the bacon pieces. Serve immediately.
BROCCOLI SALAD WITH GOAT CHEESE
Steps:
- Fill a large bowl with ice and water, and set aside.
- Bring a large pot of water to a boil. Add the broccoli florets and sliced stems, and cook until just tender, about 3 minutes. Drain the broccoli and immediately plunge into ice water to stop cooking. Once cooled, drain and transfer to a salad bowl.
- In a medium bowl, whisk together the vinegar, honey, mustard and olive oil.
- Add the red onions, dried cherries and hazelnuts to the salad bowl, and toss to combine. Toss with the dressing, and top with the goat cheese.

This is a delicious summer salad, however I make any time of the year. It is always a big hit with family, friends and at church functions. We love it. It is easily made as a lowfat version, using low fat cheese and low fat mayo, even can use Splenda instead of sugar. Serving size is 1/2 cup. I obtained this recipe from Pillsbury Simple Summer Recipes Cookbook in approximately 1990. This is my first post to Recipe Zaar. I really hope you enjoy it.
