Another fast and furiously delicious stir fry. If you like Pad Thai, this recipe is definitely for you.

8 ounces rice noodles (linguine-width)
2 teaspoons cornstarch dissolved in 2 tablespoon of water
1 cup less-sodium chicken or vegetable broth
⅓ cup less-sodium soy sauce
2 tablespoons dry sherry
1 teaspoon sugar
1 tablespoon chili garlic sauce
2 tablespoons peanut, vegetable or canola oil
1 tablespoon finely minced garlic
1 tablespoon finely minced ginger
2 pounds shelled and deveined jumbo 21/25 count shrimp
3 tablespoons sliced chives (optional)

Steps:

  • Bring about 6 cups of water to a boil in a saucepan. Place the rice noodles in a large bowl, pour the water over, use tongs or a fork to move the noodles about, stirring every minute or so, until they are quite pliable but not soft. Drain the noodles and rinse them with cold water.
  • Meanwhile, in a container, combine the cornstarch in water with the broth, soy sauce, sherry, sugar, and chili garlic sauce. Cover, and shake to combine well.
  • Heat the oil in a wok, and add the garlic, ginger, and shrimp. Stir fry for 2 minutes, until the shrimp are mostly pink on the outside, then add the soaked rice noodles and toss to combine. Pour in the sauce (shaking it once more right before pouring in), and toss the shrimp and noodles occasionally as the sauce comes to a simmer and thickens, and the shrimp are cooked, about 3 minutes.
  • Serve hot, with chives on top.

5 cups thinly sliced Chinese (napa) cabbage
3/4 lb cooked deveined peeled large shrimp
1 1/2 cups fresh snow pea pods, strings removed, cut diagonally in half
Thinly sliced green onion, if desired
Chopped fresh cilantro, if desired

Steps:

  • Cook noodles in boiling water 2 to 3 minutes; drain and rinse with cold water. Drain well.
  • Meanwhile, in small bowl, stir lime juice, fish sauce, peanut butter, sugar, gingerroot, soy sauce, oil and garlic with whisk until smooth; set aside.
  • In large bowl, stir together noodles, cabbage, shrimp and pea pods. Add dressing; toss well. Sprinkle individual servings with onions and cilantro.

250 g thick long egg noodles (like those used in a chinese stir fry - I use Sharwood's)
500 g cooked shrimp, tails and shells removed
2 cups bean sprouts
1 carrot, thinly sliced
1 red pepper, chopped or cut into slivers
1 cup zucchini, chopped or cut into rounds
4 green onions, sliced
1/4 cup chopped of fresh mint
1/4 cup chopped fresh coriander
mint sprig, for garnish
1/4 cup fish sauce
1/4 cup rice vinegar
2 tablespoons granulated sugar
4 cloves garlic, minced
1 tablespoon lime, juice
1/4 teaspoon chili paste or 1/4 teaspoon curry powder (these will give two very different tastes)

Steps:

  • Cook noodles according to package directions.
  • Drain, rinse and let cool completely.
  • In large serving bowl, combine shrimp, bean sprouts, carrot, red pepper, zucchini, green onions, mint, coriander and cooled noodles.
  • Whisk dressing ingredients together, pour over the salad and toss to coat evenly.
  • Garnish with mint sprigs.

Sour, tangy, sweet and spicy-this dish features the essential flavors of Southeast Asian cooking. In addition to mung bean noodles-also called cellophane or glass noodles-and shrimp, it's loaded with veggies and herbs, adding vibrant color and a mix of textures to the mix.

3 ounce package mung bean noodles*
1 tablespoon vegetable oil
1 pound medium shrimp, peeled, deveined
Kosher salt
7 medium cloves garlic, finely minced
1 cucumber, peeled, seeded and sliced into thin strips
1 carrot, sliced into thin strips (about 1/2 cup)
1 red jalapeno, very thinly sliced or minced (with seeds if you like it hot)
1/2 cup mixed roughly chopped mint, cilantro, and basil
3 tablespoons nam pla or fish sauce*
2 tablespoons fresh lime juice, plus 1 limes cut in wedges for serving
1 teaspoon sugar
2 to 3 scallions, both white and green, very thinly sliced

Steps:

  • 1. Bring about 4 cups water to a boil. Put the noodles in a large bowl, pour the boiling water over and let them soak until soft, 4 to 5 minutes. Drain in a colander and rinse in very cold water to cool. Shake off excess liquid so noodle are very dry. Cut the noodles with scissors into manageable lengths, about 4 inches. Transfer to a large bowl.
  • 2. Pat the shrimp very dry. Heat a large skillet over medium-high heat. Add the vegetable oil and when it shimmers, add the shrimp, season with salt and cook turning once until pink and but not cooked through, 1-2 minutes. Add the garlic and cook stirring until the shrimp are coated, about 1 minute. Add the shrimp and garlic to the noodles along with the cucumber, carrot, jalapeno, herbs, lime juice, fish sauce and sugar and toss. (If the noodles clump, add up to 1/4 cup water to make mixing easier.) Season with salt or fish sauce to taste. Transfer to a serving platter. Transfer salad to a large platter and scatter the scallions on top. Serve at room temperature.

1/3 cup fresh lime juice (from 4 limes), plus wedges for serving
2 large cloves garlic, grated
1 red Thai bird or serrano chile pepper, thinly sliced (remove seeds for less heat)
1 tablespoon fish sauce
2 tablespoons vegetable oil
12 ounces large shrimp (about 16), peeled and deveined, tails intact
1 8.8-ounce package thin rice noodles
1/2 head red leaf lettuce, thinly sliced
2 large carrots, grated (about 2 cups)
1/2 English cucumber, halved lengthwise and thinly sliced
1 cup roughly chopped fresh cilantro and/or mint

Steps:

  • Bring a large pot of water to a boil. Meanwhile, combine the sugar and 2 tablespoons hot water in a large bowl and stir until dissolved. Stir in the lime juice, garlic, chile and fish sauce; transfer 2 tablespoons of the dressing to a medium bowl and whisk in the vegetable oil. Add the shrimp and toss to coat; set aside.
  • Add the rice noodles to the boiling water and cook as the label directs; drain, rinse with cold water and shake off the excess liquid. Add the noodles to the bowl with the remaining dressing; add the lettuce, carrots, cucumber and herbs and toss to coat.
  • Heat a grill pan over medium-high heat. Grill the shrimp until charred and cooked through, 2 to 3 minutes per side. Arrange over the noodles; serve with lime wedges.

4 Vietnamese rice papers (make sure they are made from rice, not tapioca)
2-3 scallions, finely chopped
4 Tbsp sweet chili sauce
8 quail eggs or 4 medium chicken eggs
¾ cup loosely packed pork floss (see notes)
Optional toppings: corn kernels, shredded cheese, crispy fried shallots, Japanese mayonnaise, sriracha, hoisin sauce, etc.

Steps:

  • Sprinkle scallions on top. Drizzle about 1 Tbsp of sweet chili sauce and cook for a minute. Crack the egg (2 if using quail eggs, 1 if using chicken eggs) right on top, scrambling it and spreading it almost to the edges of the rice paper.
  • Once the egg is almost fully cooked, sprinkle about 3 Tbsp of pork floss all over.
